Baked Beans Korma

A quick and handy Veg.Korma done in 12 - 14 mins time is given here to be tried at home.U can add 3-5 cashews in the coconut paste or can use 1 tbsp coconut milk powder dissolved in 200 ml warm water for making the process easy.This serves 4 nos and it goes well with ghee rice,jeera rice,steamed rice,Breads and Indian Breads.Enjoy Easy cooking at home!. Enjoy ur Meal!. BonAppetit!.

Baked Beans Korma
Ingredients:
1 can Baked Beans processed in tomato sauce(don't add the sauce)
1 onion - sliced
2 tbsp coconut paste with poppy seeds(soaked for an hour) + 1 green chilli
1 bay leaf + 1 cardamom + 1 clove + 1 cm cinnamon stick
1 tsp ginger garlic paste
1/2 tsp curry masala or garam masala powder
2 small green chilli - slit lengthwise
1/2 tsp salt - to taste
few coriander leaves
1/2 lemon
2 tsp oil
Directions:
1.Heat refined oil in a kadai and fry 1 bay leaf + 1 cardamom + 1 clove + 1 cm cinnamon stick and sliced onions.Stir-fry for 3-4 mins.
2.Add ginger-garlic paste,green chillies and baked beans(- the sauce).
3.Add salt and coriander leaves.Mix it well for 2-3 mins.
4.Now add the coconut paste, 200 ml water and curry or garam masala and bring it to boil for 4-5 mins.Turn off the flame.
5.Sprinkle lemon juice on top and serve it hot.

Chicken Kofta Curry

This  recipe serves an yumm Chicken Kofta Curry that goes with fried rice,Bread and Indian Breads.This Gravy is mildly-spiced and rich in taste.U need  40 mins cooking time if U use Grilled Chicken Kofta or 30 mins otherwise.Serves 4 nos. Can try this gravy with ready-made chicken meat balls to save time.Try this at home. Enjoy Creamy Chicken kofta Curry anytime. Enjoy Easy cooking at home!. Enjoy ur Meal!. BonAppetit!.

Chicken Kofta Curry:
Ingredients:
For the Gravy:
1 small-sized onion - pasted fine
1 small-sized tomato - pasted fine
1 tbsp cream
50 ml low fat milk
2 tsp cashewnut(5 nos pasted with 1 tsp soaked poppy seeds) paste
1/2 tsp red chilli powder
1 tsp sugar
1/5 tsp grated ginger
a pinch of nutmeg powder
a pinch of  turmeric powder
1/5 tsp garlic -pressed
1/2 cm cinnamon stick
1 clove
1 cardamom
1/2 tsp garam masala
1/2 tsp salt to taste
2 tsp refined oil + 1 tsp olive oil or ghee

For the Chicken Kofta:
50 gms minced chicken
1 tsp white pepper powder
1/2 tsp ginger-garlic paste
3 tbsp finely powdered bread crumbs
a pinch of garam masala
1 beaten egg or 2 tsp thickly dissolved cornflour
1/5 tsp salt to taste
2 tbsp refined oil - for shallow frying
Directions For the Chicken Koftas:
1.Pulse the minced chicken with bread crumbs,white pepper powder,ginger-garlic paste,garam masala and salt with out adding water.
2.Shape the pulsed mixture into balls.
3.Dip it in thickly dissolved cornflour or beaten egg and shallow fry the koftas.(or for oil-free koftas,can grill it in OTG by pre-heating the oven to 220 C and grill the koftas for 20 mins.)Keep this aside in a casserole. Prepare the Gravy.
Directions for the Gravy:
1.Heat oil + olive oil or ghee and fry the cinnamon,bayleaf, cardamom, nutmeg powder and clove together.
2.Add the onion paste and ginger-garlic paste and stir-cook for 3-4 mins.
3.Add the tomato paste and stir-cook it for 3 mins chilli powder,turmeric powder,garam masala and salt.
4.Add 1 cup water and the koftas and simmer it for 5-6 mins.
5.Add the milk,cashewnut paste  and sugar and stir it well for 3 mins.
6.Finally add the cream and mix it for 20 secs and turn off the flame.
7.Garnish with chopped coriander and Serve hot with naan or parota or Fried Rice.

Rajma Masala
Ingredients:
    1 1/4 cup sprouted Rajma - soaked for 30 mins
    1 large onion (1/2 te onion chopped finely)
    1 clove crushed Garlic
    1 tomato pasted with 1/2 onion
    3/4 tsp red chilli powder
    1/2 tsp coriander  powder
    1/2 tsp chole masala powder
    1/2 tsp fenugreek seeds
    curry leaves - a sprig
    coriander leaves - few
    1/2 tsp corn flour - dissolved in 3 tbsp warm water
    1/2 tsp salt to taste
    2 tsp refined oil 
Directions:
    1.Heat the oil in a pressure pan and fry the garlic until golden brown.
    2.Add the fenugreek seeds and fry for a minute.
    3.Then add the chopped onions and fry till golden brown.
    4.Add tomato-onion paste,chilli powder,coriander powder and Chole masala powder and mix it well.Cook it for 4 mins .
    5.Pour in  250 ml water  and let it boil for 3 mins.
    6.Now add the sprouted Rajma Beans,Chole masala,coriander leaves,curry leaves  and salt and pressure-cook for 10 minutes or till done.Leave it for 10 mins for the pressure to be released.
    7.Stir the the dissolved corn starch to the curry and cook for 3 mins till it gets thick.Turn off the flame.
    8.Serve it hot  with Steamed Rice,Bread or Indian Breads.

Vanilla Custard Cake

Yumm and moist Vanilla flavored Custard Cake recipe is given to try at home.It can be done quick effortlessly with readily available ingredients at home.U can add plain lowfat yoghurt for milk or refined oil and try this recipe or some other flavor that goes with Custard Powder. This needs 20 mins baking time and serves 4-6 nos. Enjoy easy Bake at home!. Enjoy!. BonAppetit!.

Vanilla Custard Cake:
Ingredients:
2/3 cup selfraising flour
1/3 cup vanilla custard powder- Pillsbury
1/2 cup powdered sugar
40 gm butter
1/2 tsp vanilla essence
140ml warm milk
1 egg - well beaten
1/2 tsp baking powder
1 tsp choco strands
1 tsp almond flakes
Directions:
1.Sift together selfraising flour with vanilla custard powder and baking powder.
2.Cream powdered sugar with butter and beaten egg till it blends well and add it to the Step 1 mixture.
3.Add flavouring agent and warm milk and stir it well.
4.Pre-heat the Oven to 180 C.
5.Grease the Cake tin and pour in the batter and granish with almond flakes and choco strands.
6.Bake the cake for 18 - 22 mins or till the inserted toothpick comes out clean at the centre.Leave it for 10 mins.
7.Serve it with Tea/Coffee or after a filling Meal.

Almond Muffins (Badhami Muffins)

Baking can be done and served with readily available food resources at home with ease or tried with ready-mix for variation. Try this Badhami or Almond Muffins done Using Badham Drink Mix for a change and it is easily avaialble in stores.This is done in 15 mins and serves 3 - 4 nos.Serve it warm with Tea/Coffee anytime. Enjoy Easy Baking at home!. Enjoy ur Meal!.BonAppetit!.

Badhami Muffins:
Ingredients:
3/4 cup Selfraising flour
50 gms Aachi Badham drink Mix
31/2 or 3/4 tsp baking powder
50 gms powdered sugar
2 eggs - beaten well
30 gms butter
70 ml milk
1/2 tsp vanilla essence
a pinch of salt
6-7 Almonds - chopped or flaked fine
Directions:
1.Cream butter with sugar.Blend in beaten egg,vanilla essence and milk.
2.Sift together flour,baking powder,Aachi Badham Drink mix and a pinch of salt.
3.Blend or mix well till no lump is formed.
4.Preheat the OVEN to 200 C .
5.Fill the muffin mould with cups and fill the muffins cup with the batter, leaving 2 cm free and garnish with
chopped almond flakes on top.
6.Bake at 200 C for 15 - 18 mins or till the inserted toothpick comes out clean.
7.Serve it warm with Tea/Coffee anytime.

Coconut Kichadi

Kichadi is a simple South-Indian Stew or Conjee prepared using Semolina or basmati rice with split yellow mungdal. U can also try using tasty kichadi with noodles or vermicelli or broken wheat or Oats lakes or Riceflakes(Poha) or Sabudana(Javarisi) or adding finely chopped capsicum or mushroom or grated paneer or minced mutton or Chicken this way for variation.U can try it adding 3/4 cup thick coconutmilk and 2 cups coconutmilk. Enjoy this Simple and simply aromatic kichadi or short-meal for Breakfast/Dinner at home!.Enjoy ur Meal!. BonAppetit!.

Coconut Kichadi - Khichadi prepared with grated coconut and cooked with selective spices
Ingredients
    1 1/2 cups basmati rice-ghee sauted
    1/2 cup split yellow moong dhal - soaked for 40 mins
    1/3 cup grated cocomut
    2 tsp + 2 tsp ghee
    1/2 tsp cumin seeds
    1 cm sized cinnamon stick-crushed
    1 bay leaf
    1 tsp ginger-grated
    1 lengthy green chilli - slit
    1/5 tsp turmeric powder
    1 tsp sugar
    7 - 8 shallots,peeled and sliced fine
    3 red chillies-split
    1/2 tsp salt
    2 tbsp fresh green peas(optional)
    1/5 tsp garam masala
    2 tsp refined oil
    few coriander and curry leaves
Directions:
    1.Wash MoongDal and rice separately.Keep them aside.Ghee-saute basmati rice with 1 tbsp ghee.
    2.Heat the remaining 2 tsp ghee in a pressure pan and add cumin seeds,cinnamon stick,bay leaf,grated
ginger,half the shallots and curry leaves.Saute for 3 mins.
    3.Then add green chillies,turmeric powder,ghee-sauted basmati rice,soaked split moongdal and sugar and
salt.saute for few mins and add  2 3/4 cups water and let it cook upto one whistle on good flame.Leave it for 10 mins.
    4.Meanwhile,Heat 2 tsp oil in a kadai and saute the remaining shallots for 2-3 mins then add red chillies,
fresh green peas,coriander leaves and garam masala together for 2 more mins.Finally.add grated coconut and saute this for a min or 2.
    5.Add the pressure-pan basmati rice mixture and pressure cook for 2-3 mins.Open the pressure pan lid after 10 mins.
    6.Serve this aromatic Coconut Kichadi hot with ur choicest korma or stew or sambar and chutney.

Healthy Ellurundai

Dried Figs can be used in Desserts and snacks otherwise done as pancakes or appam or adai or salad or soup.Its healthy and can be done with sesame seeds and black Jaggery(Karuppu Katti) as sweet balls.U can use Jaggery or sugar if Black-Jaggery is not available and fresh grated ginger for Sukku(dry-ginger).Try this simple yet healthy and mild in sweetness sesame sweet balls for teatime.U need 7 mins time for this dish and this serves 4-5 nos. Good for all at home.Enjoy Ur Meal!.BonAppetit!.

Healthy Ellurundai - Dried Figs and dates done with black sesame seeds as sweet
Ingredients:
50 gms Dried Figs(Ular athi Pazham)- chopped
7 dates - deseeded and chopped
50 gm black sesame seeds
50 gms Jaggery or Black Jaggery - crushed
1/4 tsp cardamom powder or dry ginger powder
1 tsp gingely oil - for shaping the balls
Directions.
1.Pulse the chopped Figs and dates once for 2-3 secs.Gather it in a bowl.
2.Dry roast the black sesame seeds for 2-3 mins on medium flame.
3.Once U smell the the dry roasting aroma of the seeds,just turn the flame low and add crushed black jaggery or Jaggery and cardamom Powder or Dry ginger Powder and stir it for a min  and turn off the flame.Allow it to cool.
4.Add the pulsed dry figs-dates mixture and mix it well.(U can add figs as such or M/W it on high for a min and add but no M/Wing needed for dates).
5.Shape this into small balls by applying little gingely oil in hands and serve it warm.

Black Forest Cake

Merry Christmas Everyone!. This recipe states the easiest Black Forest Cake preparation this Christmas Eve. Black Forest Cake is an extremely popular German Gateau/ Dessert/Cake is otherwise called as 'Black Forest Cherry Torte'. Black Forest cake is mostly done without alcohol and can be made eggless.U can add 2-3 well beaten egg to the cake Mixture in Step 3.U need to Chill-bake it for 2 hours atleast beore serving. Enjoy Delicious and Happy Christmas!. Enjoy Ur Meal!. Bonappetit!.

Black Forest Cake - Layered Chocolate Sponge cake with cream and soaked in cherry syrup and garnished with cream and grated chocolate
Ingredients
    120ml condensed milk
    60 gm butter
    1 cup refined  flour
    2 or 2 1/2 tsp cocoa powder
    3/4 tsp baking powder
    100 gms castor sugar or confectioners' sugar
    1 1/2 cup cream
    2 tbsp powdered sugar or confectioners' sugar
    20 cherries - finely chopped

For Cherry Syrup:
    1 cup or 150 gm fresh cherries
    1/4 cup water
    2 tbsp granulated sugar or confectioners' sugar
For the Garnish
    3-4 tbsp bittersweet chocolate - grated
Directions
    1.Preheat the Oven to 350 F .
    2.Sift the refined flour with cocoa powder and baking powder.
    3.Stir in condended milk,sugar and 50 gm butter and beat well.
    4.Grease the baking pan and pour in the cake mixture and bake it for 22 to 25 mins or till a toothpick comes out clean,inserted at the centre of the cake.Allow it to cool for 10 mins.
    5.Meanwhile,Prepare cherry syrup and keep it aside.
    6.Prepare the filling by whipping cream with sugar till creamy.Keep it aside.
    7.Slice the cake horizontally in to 3 parts.Soak it with cherry syrup by pouring few spoons over each slices evenly. Spread the cream filling, sprinkle chopped cherry and place a slice on top. Again apply cream, sprinkle chopped cherries and place the last slice on top so that the slices get sandwiched with cream evenly.
    8.Cover the top and the sides with whipped cream and sprinkle grated chocolate flakes over it and garnish with 5 - 6 Cherries on top.
    9.Refrigerate it for 2 hours atleast and serve it chilled.
For preparing the Cherry Syrup:
    1.De-seed the cherries and pulse it fine many times.
    2.Boil the pureed Cherries with 1/4 cup water and granulated sugar.Stir it till the sugar gets dissolved.
    3.Stir-cook it for 15 mins on low flame or till it gets thick.Turn off the flame.
    4.Leave the syrup to cool for 20 mins.Refridgerate it after collecting the syrup in a jar.

Dates Pudding

Wishing U all a very Happy,Merry and Blessed Christmas. Traditionally a rich Pudding or Dessert will accompany the Christmas Feast.I thought of sharing this Dates Pudding which I tasted  good recently. It has a great taste and naturally healthy, filled with the goodness of Dates.U can serve this Dates pudding with dark chocolate glaze on top or caramelized Dates Syrup. Enjoy Delish Homely Meal with rich Dates Pudding!. BonAppetit!. Merry Christmas Everyone!.

Dates Pudding : Pudding done with dates
Ingredients:
1/2 cup refined flour
1 cup dates paste - pulsed coarsely
1/4 cup bread crumbs - pulsed fine
1/2 cup water
1 tsp vanilla essence
1/2 tsp baking soda
3/4 cup powdered sugar or castor sugar
3 tbsp butter
2 eggs(optional) -  well beaten
Toppings:(optional)
3 tbsp dark chocolate glaze
plums or cherry
Direction:
1.Preheat the Oven to 160 C .
2.Mix date paste,water,vanilla essence and baking soda in a sauce pan and bring to boil and immediately turn off the flame.
3.Meanwhile,mix butter and castor sugar in a small bowl.Stir in beaten eggs(optional).Add it to the step 1 mixture and then stir in refined flour little by little and then the pulsed bread crumbs and mix it well without any lumps.
4.Pour in the pudding mix into cup cake mould or muffins mould or cake mould.
5.Bake in the Oven for 20 - 25 mins or till done.
6.Apply Dark Choco Glaze or Caramelized Dates Syrup over it and serve it hot or chilled with cherry on top.
