Oats-Chocochips Muffins

Glad to share with U that I received the KFC Gift Vouchers and Mrs.Gayathri Kumar's wonderful giveaway of Tarla Dalal's Book yesterday.I Forget to post abt this Giveaway Mug - Which was presented to me By Ms.Richa of Ambrotos as the Winner of Curries with Fruits this Jan.Thanks a lot Indiblogger.in, KFC, Mrs.Gayathri Kumar and Ms.Richa for giving me few sweeter moments after I started Blogging nearly 8 months ago. I will be posting a recipe from Mrs.Gayathri Kumar's Giveaway Book propably next week.
I wanted to post this Oats-Chocochips Muffins recipe last month for an Event last month but postponed it as one of my Bloggerfriends posted a similar recipe that day. Here is that given healthy n Kid's friendly Muffins recipe to try at home. The clicks of this Muffins show  that its done with Oatmeal but I saw this Muffins turn up Superbly when (my Friend) tried it with pulsed Oatmeal. Do U want to taste this Laddu?(Laddu Thinna Aasaiya?)!  Enjoy Easy Baking at home!.Enjoy Ur Teatime!. BonAppetit!.

Oats-Chocochips Muffins
Ingredients:
3/4 cup pulsed Oatmeal - pulse it fine 4-5 times
1/2 tsp refined flour
1 - 1 1/4 tsp baking powder
1/4 tsp baking soda
2 - 3 tbsp choco chips
1 tsp vanilla essence
100 ml lowfat milk
20 ml refined oil
20 gms melted butter
1 or 2 egg whites(optional)- well beaten
Stuffing Ingredients:
2 - 3 tbsp choco flakes
12 cadburys shots
Directions:
1.Sieve the refined flour,Pulsed-fine Oats,baking powder and baking Soda together in a bowl,mix it well and keep it aside.(Don't add that is left on the sieve).
2.Combine milk,melted butter,oil,vanilla essence,beaten egg whites(optional) and 1 tbsp water.Whisk it well using a hand mixer.
3.Combine this beaten mixture with the flour mixture and fold it gently with the help of a spatula or 2-3 mins to make a cake flour or dropping consistency.
4.Arrange 6 greased and dusted Muffins Moulds. Place 1 or 2 cadburys Shots, sprinkle choco flakes and Pour equal amount of batter and sprinkle choco chips.
5.Bake in a pre-heated oven at 200 C for 10 mins. Then,at 160 C for 15 - 18 mins.
6.Allow it to cool for abt 15 mins. Serve it with Tea/Coffee.

Coconut Muffins

This recipe serves an Easy Coconut Bake at home for kids at teatime/anytime.If U are not able to buy dessicated Coconut then use dry-roasted grated coconut of the mentioned amount in the process.This needs 20 -25 mins baking time and serves 3-4 nos.(can do 6-8 Muffins depending on the size of the muffin cups) If U r using a 20 + ltr Oven then U need 3-4 mins extra baking time & the time varies according to the size of the muffin Cups + the make of the muffin mould. Enjoy Yummy Bake at home!. Enjoy ur Meal!. BonAppetit!.

Coconut Muffins
Ingredients
    125 gm refined flour - sifted
    3 or 3 1/2 tbsp dessicated Coconut
    1 tsp baking powder
    50 ml water
    30 ml refined oil
    1 well beaten egg (optional but this increases  the taste and the fluffiness)
    30 gm butter
    75 gm castor sugar
    1 tsp vanilla extract
    20 gms tutti frutti - to garnish on top
    Directions
    1.Preheat the oven to 180 C .
    2.Sift together refined flour and baking powder.keep it aside.
    3.Cream butter and castor sugar and then add the beaten egg and whisk the mixture.
    4.Then add the plain flour mixture,vanilla extract and refined oil and mix(fold) it well for 2-3 mins.
    5.Add dessicated coconut to it and mix (fold)it well for a min or 2.
    6.Line Muffin Cups in Muffins Mould,Pour the batter till 3/4 th full & sprinkle 1/2 the tutti frutty on top and bake for 20 - 30 mins in the middle rack(Check with a skewer,inserting to the cake mixture,till it comes out clean - at this time add the remaining tutti frutti over the muffins).Leave it undisturbed for 30 mins.
    7.Serve it with tea / coffee topped with the remaining nuts on top.

Coffee Muffins

This recipe states the procedure for an enjoyable Coffee Muffins.A must-try recipe for all Coffee lovers.3 muffins got vanished immediately.Try this Coffee flavoured muffins at home and serve it with Cardamom Tea.U can serve it topped with choco strands or choco-chips or with  coffee cream toppings. Enjoy it anytime!.BonAppetit!.

Coffee Muffins - Mufffins made with instant coffee powder
Ingredients
    100 gm refined flour - sifted
    2 - 2 1/2 tbsp instant coffee powder
    1/2 tsp baking powder
    70 ml low fat boiled milk
    1 well beaten egg (optional but this increases  the taste)
    40 gm butter and 1 tbsp butter to grease the tray
    75 gm castor sugar
    1 tbsp choco strands - optional
Directions
    1.Preheat the oven to 180 C .Blend the instant coffee powder and the boiled milk in a mixer and keep it aside.
    2.Sift together refined flour and baking powder.keep it aside.
    3.Beat together butter and castor sugar and then add the beaten egg and whisk the mixture.
    4.Then add the plain flour mixture and mix them well for 2-3 mins.Then add the coffee powder mixture to it and mix them well for 3 more mins.
    5.Grease the Muffincups with butter and allign them in the Muffins mould  tray and bake for 30 -35 mins in the middle rack(Check with a skewer,inserting to the cake mixture,till it comes out clean).Leave it undisturbed for 30 mins.
    6.Serve it with cardamom tea .

Dates Muffins

Wishing you all a Very Happy New Year 2012!!.Muffins can be done with dates syrup without adding sugar.It has a mild sweetness and extremely tasty. Finely chopped dates can be added on top. Enjoy this Dates Muffins this NewYear's Eve after a filling Meal or Teatime with Tea/Coffee or Anytime. Enjoy Ur Meal!. BonAppetit!.

Dates Muffins:
Ingredients:
1  cup refined flour
1/4 cup powdered sugar(optional)
1 tsp baking powder
140 ml dates syrup
1 beaten egg
2 tbsp finely chopped dates
20 gms butter
1/2 tsp cardamom or vanilla essence
Directions:
1.Sieve flour and baking powder together and mix it well.
2.Blend butter,beaten egg and sugar and mix it with step 1 flour mix.
3.Mix it with the finely chopped dates,dates syrup and essence into a smooth batter.
4.Preheat the oven to 180 C. Arrange the  greased muffin cups in the mould and pour in the batter leaving 1 inch  free.
5.Bake the muffins for 22 - 25 mins in the middle rack.

6.Serve the muffins warm with Tea/Coffee or anytime

Almond Muffins (Badhami Muffins)

Baking can be done and served with readily available food resources at home with ease or tried with ready-mix for variation. Try this Badhami or Almond Muffins done Using Badham Drink Mix for a change and it is easily avaialble in stores.This is done in 15 mins and serves 3 - 4 nos.Serve it warm with Tea/Coffee anytime. Enjoy Easy Baking at home!. Enjoy ur Meal!.BonAppetit!.

Badhami Muffins:
Ingredients:
3/4 cup Selfraising flour
50 gms Aachi Badham drink Mix
31/2 or 3/4 tsp baking powder
50 gms powdered sugar
2 eggs - beaten well
30 gms butter
70 ml milk
1/2 tsp vanilla essence
a pinch of salt
6-7 Almonds - chopped or flaked fine
Directions:
1.Cream butter with sugar.Blend in beaten egg,vanilla essence and milk.
2.Sift together flour,baking powder,Aachi Badham Drink mix and a pinch of salt.
3.Blend or mix well till no lump is formed.
4.Preheat the OVEN to 200 C .
5.Fill the muffin mould with cups and fill the muffins cup with the batter, leaving 2 cm free and garnish with
chopped almond flakes on top.
6.Bake at 200 C for 15 - 18 mins or till the inserted toothpick comes out clean.
7.Serve it warm with Tea/Coffee anytime.
