Achu Murukku(Rose Cookies or Achappam)

A popular and traditional sweet of Tamil Nadu and Kerala.It is known as Achu Murukku in Tamil Nadu and Achappam in Kerala.It has less sweet and an unique taste that can not be put in words.I still remember that taste I had it as young.I preferred eating Achappam's batter than the fried cookies and I made that habit lost with much difficulty later.Adding one well-beaten egg will improve the taste of the sweet definitely. However, strict Vegetarians can try this dish without adding egg.Enjoy ur Teatime too!.BonAppetit!.

Achu Murukku (Rose Cookies or Achappam) - the taste of the south.

Ingredients
    2 cups raw rice flour
    2 tbsp maida
    2 tbsp wheat flour(optional)
    200 gms of sugar
    1 3/4 cups of coconut milk -second milk thickness or water
    2 eggs-beaten well(u can reduce it to 1 or add few drops of vanilla essence to remove eggy flavor)
    1 tbsp white sesame seeds(optional)
    1/6 tsp salt
    500 ml refined oil - for deep-frying

Directions:
    1.Mix rice flour, maida, sugar, sesame seeds,salt and egg well in a bowl.
    2.Add coconut milk little by little and mix well so that the batter should have the consistency of dosa batter(add 1 or 2 tbsp water if u need to).
    3.Clean the Achappam impression and wipe it with tissues.
    4.Heat oil in a kadai,immerse the Achappam impression in oil,then immerse the Achappam impression in the prepared batter so that it is 3/4th immersed in the batter.Then dip the Achappam impression in the oil and the batter will leave the impression in a few seconds.Fry the Achappam till golden brown.
    5.Then again dip the achappam impression in the oil,then dip it 3/4th in the batter and then dip in the oil again till the batter leaves the impression.Similarly do all  achappams.
    6.Serve this Achappam as a tea-time snack.

can try this dish without egg but the taste differs vastly.In that case (Strictly speaking this traditional sweet needs atleast 1 egg in the process),U can use 100 ml Coconut milk while preparing the Achappam Batter and add 1 tbsp diluted Corn flour to make it fluffy.(Keep in mind that the batter shd be as thick as bajji batter).

Hi Simi,U can get it in Tamilnadu and Kerala(in some outlets where they sell kitchenware(like Murukku or Idiyappam Makers are available.Ask Ur relations in India to buy and send there thru friends).
