Ragi Kara (spicy) Kuzhi paniyaram done using mixed veggies
Ingredients:
25 gm or 5 tbsp ragi flour
2 tbsp wheat flour
70 ml fresh idli batter
2 tbsp fresh uraddhal batter
1 tbsp fresh yoghurt
3 tbsp oats flakes
100 gms mixed vegetables(shredded babycorn-1/2 no,1/2 carrot -grated,3 tbsp grated cabbage,2 french beans- chopped fine, finely chopped coriander leaves, chopped celery,chopped parsley,etc)
1 onion-chopped fine
2 green chillies - chopped fine
1/2 tsp chilli powder
3 tbsp grated coconut(optional)
1/4 tsp grated ginger
2 tbsp crushed ghee-roasted cashewnuts
a pinch of cooking soda
200 ml or need water
3/4 tsp salt
2 tbsp ghee mixed with 2 tbsp refined oil
few curry leaves
1 tsp mustard seeds
1/2 tsp split urad dal
2 tsp refined oil-for tadka
Directions:
1.This should be done the day u prepare the Idli batter (urad dal batter shd be taken well before fermenting it). Mix Ragi flour with water,wheat flour,Idli flour and urad dal batter,salt very well.
2.Heat 2 tsp oil and do tadka with mustard seeds,split urad dal,chopped onions and curry leaves.
3.Mix this tadka and all the other ingredients leaving oil and ghee should be added to the batter in step 1 and mixed well.
4.Grease oil,ghee mixture in Kuzhi Paniyaram mould and heat it in medium flame.
5.Add 2 tbsp paniyaram batter to the holes and turn the sides when done-till they turn into golden brown in
colour on both sides.
6.Serve these Healthy kara Kuzhi Paniyaram with tomato-onion chutney or tomato ketchup.
