IceCream Fry

This recipe is 3yrs old and first published in KK.Com in 2009.This dessert is made by a scoop of Icecream frozen well and coated in sugar-coconut mixture,stuffed inside dough before briefly deep frying it.The extremely low temperature(frozen state) of the icecream prevents it from melting while being fried.U should scoop the Icecream before freezing it for an hour- counting how many u spread like puri. Its a lot easier to do and tastes so good-when done.Sprinkle powdered sugar and a dash of honey before serving it immediately.It shd be consumed as soon as it served.

IceCream Fry - Fried Sweet balls stuffed with Icecream

Ingredients:
250 gm butterscotch Ice cream -frozen for about an hour in the freeezer
1 Egg - beaten well
1 cup maida
2 tbsp breadcrumbs
1 tbsp corn flour
2 tsp roasted semolina
1/4 tsp cooking soda
a pinch of salt-little only
3 tbsp grated coconut or dry coconut powder - mixed with 1 tbsp sugar
5 tbsp sugar -powdered mixed with 1/4 tsp cinnamon powder
1/2 tsp vanilla essence(optional)
50 ml honey
2 tsp +2 tsp ghee
250 ml refined oil with 2 tsp ghee-for deep frying

Directions:
1.Beat the egg well and add maida,corn flour,roasted semolina,breadcrumbs, salt,cooking soda,2 tbsp powdered sugar and little water. Add vanilla essence (optional) and knead this as dough.
2.Heat oil + ghee mix in a frying pan and spread the dough like small puris. Then spread the grated coconut mixture over it,sprinkle the powdered sugar and cinnamon powder mix and place one scoop of frozen Icecream inside(u should scoop the Ice cream before freezing it for an hour) and immediately seal the edges with maida flour mix and deep fry in oil for 1- 2 mins till it turn little brown.
3.Cut the deep fried Icecream balls into halves and sprinkle powdered sugar mix and drizzle honey over them and serve immediately.

Mini Jangiri or Jalebi

The traditional Jangiri and Jalebi are made of Uraddal batter and refined flour batter respectively.Here, I tried a mini version of both with Uraddal flour mixed with refined flour.Mouth-watering Jangiri or mini jalebis can be tried at ur home easily.U can do 20-25 nos with this measurement.Here is that recipe.Enjoy cooking at home.Enjoy ur Teatime.BonAppetit!.

Mini Jangiri or Jalebi - Sweet made with uraddal and with juicy sugar syrup


Ingredients

1/4 cup plain Uraddal flour - ground with 3 tbsp uraddhal soaked for 40 mins without adding water in mixer-grinder
3/4 cup refined flour
2 tsp yoghurt
2 tbsp ghee
1/4 tsp salt

For the sugar syrup:

2 cups sugar
2 cups water
1 tsp vanilla essence
1/2 tsp orange colour
400ml refined oil with 1 tbsp ghee-for frying

Directions

1.Take a kadai,add 2 cups water.When it begins to boil add the sugar ,little by little, and dissolve stirring it 2.Prepare the sugar syrup with 2 cups water and 1 1/2 cup sugar(keeping the flame  low).
3.When it begins to thicken,add the yellow colour and the vanilla essence.Mix well for a min and Turn off the flame.
4.Now grind the uraddal in a mixer-grinder without adding water.
5.Take a bowl add refined flour,salt,yoghurt,needed water and the ghee to the ground uraddal and mix it to a fine and thick dosa batter..
6.Heat oil and 2 tbsp ghee in a kadai on low flame.Take a thick plastic paper or a thick cloth and fold it cone-shaped(like the cone u use for creaming the cake or u can use the murukku mould with one small hole in the centre to do this or with a cloth having a hole in the centre) fill this cone with the dough and cut to make a little hole at the bottom and press the dough over the heated oil to make jalebi or jangiri.
7.Do 4 jangiris at a time and fry on bothsides and take this out when done but it should not turn colour (before turning into light brown).
8.Put these jangiris in sugar syrup and let it soak for 30 mins atleast - before serving them with Tea or coffee or alone.
