Masala Bread

Try this yumm and mild-spiced Bread Masala which is best taken with raita or alone as an Evening light Meal/Dinner/ Breakfast. It can be packed for Lunch for kids of all ages.This needs 12 mins Cooking time to serve 3 nos. U can add grated carrot,finely chopped Palak,roasted capsicum slices or oil-roasted potato fries/chops in Step 5 and Serve it hot. Enjoy easy Cookig at home!. Enjoy Ur Meal!. Bonappetit!.

Masala Bread - A delightfully light Meal
Ingredients:
6 - 8 bread slices - Edges removed and chopped ino bite sized pieces
1 big onion - sliced thin or chopped fine
2 medium sized tomatoes - finely chopped
1 green chilly - sliced thin
1/2 tsp red chilli powder
1/2 tsp garam masala
1/4 tsp ginger-garlic paste
1/4 tsp salt
1 tsp finely chopped coriander leaves
2 tsp refined oil
1-2 tsp ghee
Directions:
1.Heat oil in a non-stick pan and saute sliced onions and ginger-garlic paste till done for 3 mins.
2.Add finely chopped tomatoes,chopped curry leaves,green chilli slices,red chilli powder,garam masala powder and salt.Saute it well till tomato begins to melt.
3.Add 120 ml water and bring it to boil.
4.Meanwhile, heat 2 tsp ghee in a non-stick kadai and ghee-roast bread pieces till it gets done for 2  mins (Turn off the flame b4 the bread pieces change colour).
5.Add this bread pieces and chopped coriander leaves to the Step 3 Masala and mix it well till the masala gets evenly spread over the bread pieces.
6.Serve it hot with Cucumber/Onion Raita as an Evening light Meal/Dinner/Breakfast or pack it for Lunch(Reheat it in M/W Oven and have a Wonderful Light Meal).

Healthy Breakfast Grilled Sandwich

Feeding kids with tasty yet healthy breakfast is a challenge.Esp,When it comes to Breakfast,kids can be very fussy.They luv varieties.Try this simply inviting and tempting Grilled Healthy Sandwich with any of the two layers mentioned in this recipe. This one is very much filling as well as light on stomach.Good for growing kids and all.Try any two layers of ur choice if u have a small Sandwich grill Toaster.Can be done in 12 mins time.Can serve it as a Short-meal too.Try this at home and enjoy.Enjoy your Meal!. BonAppetit!.

Healthy Breakfast Grilled Sandwich - Grilled Wheat Bread Sandwich with healthy and tasty ingredients:
Ingredients:
    8 wheat bread slices-edges removed
    1 cup oat flakes - soaked in drinking water for a sec and squeezed
    1 cup sprouted g.moong dal
    3 tbsp mayonnaise
    1 tsp white pepper powder
    1/2 tsp salt
    1 tsp lemon juice
    60 gm salted butter
    1/2 cup mixed grated veg of carrot, red carrot, cabbage and purple cabbage
    1 boiled egg - sliced into 6 using an egg slicer
    1 cucumber sliced into 12 slices
    1 tomato - sliced into 8 slices
    4 low fat cheese spread
    3-4 finely chopped black olives
    2 lettuce leaves - cut into bread slice size

Directions:
1.Mix the grated veg with black olives,Oats flakes, sprouted moong dal,little salt,2 tbsp mayonnaise,1/2 tsp pepper powder and 1 tsp lemon juice well(should not be wet).Keep this aside.
2.Spread butter all bread slices both sides.
3.Place half the step 1 mix over a bread slice and place one more bread slice and over it.
4.Place egg slices(3 no.s) side by side over the bread slice,sprinkle little pepper(1/4 tsp) and salt and add cucumber slices(6 no.s) over them and place another bread slice.
 5.Place the tomato slices(4 no.s) and over it place 1 tsp mayonnaise spread lettuce leave and close it with a bread slice.Toast in a grill toaster till the sides turn little brown.
 6.Similarly do one more sandwich with the remaining 4 wheat bread slices.Cut them in to 2 Serve this hot with tomato ketchup.(U can try this Healthy Club Sandwich with any of the two layers mentioned in the recipe.This will be easy for You to do and have).

Note: U can even add boiled and shredded Chicken pieces with mayonnaise & little salt in the Lettuce leaf
layer if u want or French Fries  with Mustard Sauce or Lebanese Garlic Sauce Dip in this layer.

Sweet Bombay Toast

Still remember those old days I used to have this Toast often as a kid.Our family usually have this kind of Toasts for the breakfast on Sunday Mornings before going to the Church Service.This simple-made recipe is lip-smackingly delicious.U need abt 10 mins time to try this recipe.Enjoy Easy breakfast with this Bombay Toast.Reposted for the Breakfast Club Event.

Sweet Bombay Toast - Bread Toasts made with Milk-Egg-Sugar mix

Ingredients:

10 bread slices
150 ml FullCream milk
2-3 eggs
5 tbsp sugar
2 tsp butter
2 tsp ghee
2 tsp refined oil
a drop of vanilla essence

Directions:

1.Beat the eggs and add it to lukewarm milk and add sugar.Beat this well using a hand mixer.U can add a drop of vanilla essence if u add 3 eggs (in this way the toast is well-coated and the eggy flavor gets lost too).
2.Mix oil,butter and ghee together.
3.Heat tawa,spread oil-butter.Dip a slice of bread in the Milk-egg mix (it should be half-soaked )and toast till golden brown turning (add a spoon of milk-egg mixture before turning side) it once on either side.
3.In this way the bread retains the sweet moisture of milk-egg mix and it will retain its shape without breaking.
4.Can be used for breakfast.Kids can have it as snack in the evening.

Potato Frittata

I happened to taste this Potato Frittata - a simple savoury breakfast recently and wished to share it with U all.It can be said as Potato and Egg Flan -  Quiche sort of.U can adjust the flavor by choosing your fav herb(s) for this simple frittata with Parmesan cheese.This serves 3-4 nos and needs about 15 mins cooking time.U can have it any time.Enjoy Cooking at home.BonAppetit!.

Potato Frittata - Potato and Egg Flan
Ingredients:
1 potato(3/4th boiled,peeled and chopped)
1 small onion - chopped fine - optional
2 dried cherry tomatoes - optional
2 tbsp butter or olive oil
6 eggs
2 tbsp freshly grated Parmesan cheese
a pinch of Salt
1 tsp white pepper powder- to taste
1/2 tsp minced fresh parsley leaves- for garnishing or any herb U like

Direction:
1.Preheat the oven to 350 degrees F.
2.Beat the eggs adding grated parmesan Cheese,salt, chopped boiled potatoes,2 tsp refined flour,50 ml milk,any herb - little only and stir them in to egg mixture using a hand mixer.
3.Then,add chopped onion,dried cherry tomato pieces,boiled and chopped potatoes and mix it well.
4.Place the butter or olive oil in a medium Oven-proof Non-stick skillet and cook undisturbed it in low flame for 2-3 mins till the bottom of the frittata becomes firm.
6.Shift the skillet to the oven. Bake for 20 mins - checking every 5 minutes after crossing the 10th min or till the top of the Frittata becomes firm.Leave it for 5-10 mins.
7. Garnish with chopped parsley or any herb u like and serve hot.

Brown Riceflakes Puttu (Samba Aval Puttu)

Today Brown Riceflakes - Brown  Poha (Samba Aval) Puttu has been served freshly as the Healthy recipe of the Day. Steam Cooked Short-meal is termed the healthiest and one of the most-preferred Breakfast/Dinner  in South-India.Last week I tasted this Brown Riceflakes Puttu in a Kerala Restaurant as one of the healthiest and tastiest preparation.It is done with less-ingredients and is taken with Grated coconut -Sugar or jaggery Mixture or Red Banana slices or with Sugar-added Coconutmilk or Low Fat milk.mostly. Enjoy tasty and healthy breakfast and Have a Great Day.BonAppetit!.
Brown Riceflakes Puttu (Samba Aval Puttu)

Ingredients:

200 gm Brown Riceflakes or Samba Aval or Brown Pressed Rice
1/4 salt or needed
1/2 tsp cardamom powder(optional)
70 ml lukewarm water

Accompaniments:
3-4 tbsp grated coconut
4 tbsp crushed Jaggery or Sugar
2-3 Red Banana
1 cup coconutmilk or Lowfat milk

Directions:

1. Pulse the Brown riceflakes 5-6 times  using a Mixer-Grinder.
2.Spread the pulsed rice flakes in a plate and sprinkle salt and needed lukewarm water.Mix it well and add cardamom powder(optional) to it.
3.Knead it like a shredded dough sprinkling lukewarm water little by little.
4.Spread it in Idli-cooker plates or in Puttu maker and Steam-cook for 10-12 mins and leave it for 10 mins before serving it hot with  grated coconut and crushed Jaggery or Sugar,Red Banana Slices,1 cup coconutmilk or Lowfat milk.Enjoy Healthy Breakfast.Enjoy Life!.

Healthy Oats Idli

Oats Idli can be tried at home the same night u prepare the Idli batter freshly or even with Dosa batter the next Day without adding Curd.Healthy as well as tasty recipe and good for adults and kids.U can do the same recipe With riceflakes or Poha or Aval or U can do it including oil-sauteed Onions and  grated Vegs.Try this at home & taste it hot with Tomato Onion Chutney(microwave-recipe)or Carrot Chutney or Idli Milagai Podi(Idli Chilli Powder).Enjoy Healthy Breakfast. Don't skip it.Enjoy Cooking at home!.BonAppetit!

Healthy Oats Idli - Idli made with Idli batter and pulsed Oats

Ingredients:

100gm Oats (pulsed 4 times atleast)
500 gm Idli batter(salted)-fresh and not fermented
4 tbsp plain curd
1 tsp or needed salt
1 tbsp roasted semolina
200ml water
2 tbsp refined oil

Directions
1.Take a blender,Pulse the Oats 3-4 times and add this to the fresh Idli batter with  curd,salt and semolina .Mix this well and keep this aside.
2.Brush oil on Idli plates,pour the batter on each hole and steam-cook covered for 7-10 mins or till done.
3.Serve this hot with Idli Chilli Powder and Red tomato-Onion Chutney or Carrot chutney or Chutney of ur choice.

Left-over Chapati Stirfry

This easy snack can be tried in 10 mins time with few left-over chapatis and readily available ingredients in the
kitchen.Enjoy ur tea-time!.Bon Appetit!

Left-over Chapati Stirfry - Left-over Chapati pieces fried in Indo -Chinee style with spices

Ingredients:

    3 Left over chapatis (cut into 1 1/2 inch strips)
    1 sliced big onion(optional - but gives nice flavor to the dish)
    1 finely chopped tomato
    1 garlic pearl-chopped fine
    1/4 tsp chilli powder
    1 tbsp soy sauce
    3 whole red chillies(optional)
    chopped curry leaves - few
    chopped coriander leaves - few
    1/2 tsp fresh ginger-garlic paste
    1/4 salt - to taste
    2 tbsp refined oil

Directions
    1.Heat oil in a pan and add mustard seeds,curry leaves,red chillies,chopped garlic and chopped onion and saute for a min.
    2.Add ginger-garlic paste,chopped tomato and chilli powder,one by one and saute well.
    3.Add Soya sauce and green chilli sauce and stir-fry for a min or more.Then add the chapati strips and a pinch of salt and toss it well and mix.
    4.Serve it hot with coffee or tea and enjoy ur tea time .

Note:

1.U can add vegetables(grated carrot,beans and others) in Step 2 after adding the chopped tomatoes and capsicum pieces or spring onions in Step 3 along with soy sauce.
2.U can include the strips of boiled chiken pieces(taken from the afternoon Chicken curry),adding them with the chapati pieces and try this recipe.

Stuffed Idiyappam Baskets

Idiyappam or noolappam is a breakfast specialty in Tamilnadu,Kerala and Coastal areas of Karnataka.It is most commonly known as idiyappam or string hoppers. It is made of rice flour or wheat flour,salt and water. It is generally served as the main course at breakfast or dinner together with a curry (potato, egg, fish or meat curry). It is also served with sweetened coconut milk in Malabar region of Kerala.This can done and served without much effort in family get-togethers and on special occasions.This Idiyappam baskets r done - stuffing the corn masala inside and steam-cooking after that.U can also stuff grated coconut and sugar.U can try this recipe with Noodles .Try this breakfast or evening snack recipe at home.Bon Appetit!.

Stuffed Idiyappam Baskets


Ingredients:

2 cups of raw-rice flour
2 tsp ghee
1/4 tsp salt

For the Stuffing :

50 gms sweet corn kernels
sprouted chickpeas
1 tomato - chopped fine
1/4 tsp salt
1/2 tsp ginger-garlic paste
1 tsp subji powder
few chopped coriander leaves
2 tsp oil
1 onion chopped fine

Directions:

1.Heat oil in a kadai,add chopped onion,tomato and ginger garlic paste.
2.Stir cook for 3 mins atleast and add chopped vegies,subji powder,salt,coriander leaves and stir cook for 3-4 mins and the rest will get done whilesteam-cooking.
3.Knead into a smooth dough-mixing rice flour with hot water,ghee and salt.
4.Fill it in an 'idiyappam press/sieve' with the dough and press it on to banana leaves and steam or press it directly on to a greased idli cooker plates little,stuff 2 tsp of veg-dry masala over it and again press thru the Idiyappam over the masala and seal the ends by pressing with a spoon.Steam-cook for 8-10 minutes.
5.Add a little grated coconut on top before steaming for fine taste.
6.It can also be made using wheat flour and without ghee added as done in Sri Lanka.

Steamed Puttu with Moongdal-Spinach Masala

Steamed Cooking breakfast is mostly taken or preferred in South-India.It is termed as healthy and stands second after the Microwave Cooking.Steamed Raw rice (Puttu) is a top contender to Idli(Steamed Riceflour Mix pancakes) for the first spot in Breakfast Items.Its done with less-ingredients and is taken with Grated coconut -Sugar Mix or Green Moongdal Masala mostly.This Puttu preparation comes with its accompaniment steamed along it.Enjoy tassty and healthy breakfast with Steamed Puttu Masala.BonAppetit!.


Ingredients:
200 gm Raw rice Powder
1/4 tsp salt or needed
1 tsp cardamom powder(optional)
70 ml lukewarm water
3 tbsp grated coconut

Sprouted Moongdal-Spinach Masala Stuffing:

100gms sprouted Green Moongdal
1 cup chopped Spinach
1 small tomato - chopped fine
1 small onion - chopped fine
1/2 `tsp chole masala or subji masala
1/4 tsp garam masala
1/2 tsp salt
2 tsp refined oil
2 tsp coriander leaves

Directions:

1.Spread the raw rice flour in a plate and sprinkle salt and Mix it well. Add grated coconut and cardamom powder(optional) over it.Knead it like a shredded dough sprinkling water little by little.
2.Prepare the Masala stuffing.Heat oil and saute chopped onion,chopped tomato,and salt.when tomato pieces begin to melt,add sprouted moongdal,spinach,subji masala or chole masala and garam masala powder(don't add water).
3.Stir-cook till the rawness of the masala gets reduced - ie. for 2-3 mins on good flame.The moongdal will get done while steaming.
4.Now wash the puttu maker instrument and add 1-2 inch level water and bring it to boil
5.Stuff the raw rice onelayer and then 1 cm height moongdal-spinach masala and then the raw rice puttu layer,again the masala etc.Close the puttu maker with the lid.
6.Steam-cook for 8-10 mins and leave it for 10 mins before serving it hot.

Vermicelli Veg. Idli

Vermicelli Idli can be prepared like Rava Idli with Vegetables and Yoghurt .Very tasty Idli to do with chopped vegetables and seasoning.I first tried it an year back with little semolina added to it and but it came out well even without semolina.Add fresh chopped vegetables or saute it with  seasoning and add it to the Idli batter.This can be served with Sesame Chutney or Tomato-Onion Chutney.Enjoy it anytime!.Bon Appetit!.

Vermicelli Veg Idli - Idli done with roasted Vermicelli and Vegetables

Ingredients:

    1/2 kg Idli batter
    70 gm ghee roasted vermicelli and crushed
    1 small carrot -chopped fine or grated
    5 french beans -chopped fine
    1 handful spinach -chopped fine
    1 green chilli (optional)
    1/4 tsp grated ginger
    3 sambar onion -chopped fine
    1/4 tsp mustard seeds
    few chopped curry leaves
    a pinch of asafoetida
    2 tbsp grated coconut - optional
    2 tsp + 2 tsp refined oil - for the seasoning and greasing the Idli plate.
    2 tsp ghee

Directions

    1.Ghee-roast the vermicelli and soak it in Idli batter for 10-15 mins
    2.Meanwhile,heat oil in a non-stick kadai or pan,Splutter mustard seeds.
    3.Add chopped onions,chopped green chilli,curry leaves,grated ginger piece,asafoetida,chopped vegetables and grated coconut one-by-one and saute for 2-3 mins only.
    4.Add this seasoning to the Idli batter with Yoghurt.Check for salt and mix well for a min.
    5.Pour this batter into greased idli plates and steam-cook for 8-10 mins without whistle.
    6.Tasty Veg Vermicelli Idlis are ready to be served with Sesame Chutney.

Chicken Shawarma

This is a very famous road-side snack in the Middle East  and can be tried at home easily if u get a chance to buy pita bread.Otherwise U can try this recipe with bread slices or Indian breads.U will luv it at first-bite. Enjoy it anytime!.Bonappetit!.

Chicken Shawarma - Shredded chicken pieces served with Mayo rolled in Pita Bread.


Ingredients:
4 pita breads
150 gms boneless chicken - chopped into 2 cm pieces
1 tsp lime juice
1 tsp garlic paste
1/4 tsp ginger paste
3 tbsp mayonnaise
2 tbsp garlic sauce
few lettuce leaves
2 tbsp veg salad with cucumber+sweetcorn + shredded cheese or veg pickle(optional)
50 gms french fries(optional)

Directions

1.Marinate chicken with lime juice,garlic ginger paste and l/4 tsp salt for 15 mins.
2.Grill the chicken pieces a skewer in microwave 8 mins and then 6 more mins the other side.
3.In a bowl mix mayonnaise,garlic sauce for 2 mins to make it thick.
4.Take the chicken pieces from the skewer and  cut in to pieces.Mix it with Step 1 Garlic sauce.
5.Spread this chicken pieces on pita with 1-2 tbsp of step 1 Mayo-garlic sauce,chopped lettuce leaves and top it with  3-4 French fries and 1 tsp veg salad or pickle.
6.Roll the pita bread and serve it hot with tomato or mustard sauce.

Fruit Pizza

This is not an authentic recipe but a handy one to try at home.I tried it with many bases and sauces and found this one real Yumm!.The original pizza but with fruits and dry-fruits toppings.The baking time could differ little(see ur M/W Oven manual).U can try this with custard toppings,creamy toppings,orange sauce or even with chocolate sauce or mixed Jam toppings instead of pizza sauce.Kids will luv it.U can try it as bread pizza or with Spaghetti Pizza or Macaroni Pizza.Enjoy it any time!.Bon Appetit!.

Fruit Pizza - Ordinary pizza done with fruits and dry-fruits toppings

Ingredients:

1 middle sized pizza base (12")
For Toppings:
2 cherry tomatoes (chopped)
2 tbsp pizza sauce
6 black olives(sliced) or seedless black grapes(halved)
40 gm grated mozzarella cheese (pizza cheese)
2 tbsp butter
2 tbsp mixed fruit jam
1 1/2 cups or 100 gms chopped fruits and dry fruits
(Chopped pieces of strawberries,seedless black grapes,dates,Cherries,pineapple,banana,chopped raisins,almond flakes,tutti fruiti,chopped dry fruits(chopped fine) - Don't add apple and orange.it will spoil the show).

Directions:

For pizza:
1.Take the pizza base and spread little pizza sauce over it.
2.Put the chopped fruits and nuts mixture for topping over it.
3.Put the mixture for  garnish it chopped cherry tomato, mixed fruit jam,chopped black olives and grated mozzarella cheese
4.Bake it in the Microwave oven on high for 2 mins and then on medium-high for 1 or 2 mins or till the cheese melts.Fruit Pizza is ready to be served.U can serve it as a dessert  or meal.

Keema-Poha Biryani

If you need a Keema(mutton) Biryani in 20 mins time,better try this recipe and serve ur guests this aromatic Poha with Keema.This Poha-Keema Biryani tastes so good with minced mutton.Vegetarians can try this recipe with Soya Granules(2 whistles) and mixed vegetables(thereby reducing the spices)-in a separator.U can try the same recipe with noodles or pasta or wheat granules or soya granules or toasted 1cm size bread pieces(don't add coconut milk).U can add  coconutmilk powder dissolved in luke-warm water instead of fresh coconutmilk.U can use Samba(brown) Riceflakes instead of  white Riceflakes .To be frank,the taste of this dish  really increases with the use of  Brown Riceflakes.If u use thin riceflakes,reduce the amt of coconut milk added by 1/3rd.This serves 4.Enjoy ur meal!.Bon Appetit!.

Keema-Poha Biryani - Easy and tasty Biryani with keema,rice flakes and spices

Ingredients
    200gms white(thick) rice flakes - clean the rice flakes well once and drain the water immediately
    250 minced mutton
    2 onions- sliced lengthwise finely
    1 small tomato - chopped fine
    bay leaves,1-clove,1/2 inch cinnamon stick,1 cardamoms,1/2 star-anise - crushed.
    3 green chillies - slit lengthwise
    1/2 tsp mutton masala
    1/4 tsp Biryani powder
    1/2 tsp ginger-garlic paste
    100ml thick coconutmilk
    150 ml second coconutmilk
    a handful chopped coriander leaves
    a handful chopped mint leaves
    3/4 tsp salt or needed
    2 tsp + 2 tsp refined oil
    1 tbsp + 2 tsp ghee
    1 tsp fresh lemon juice
    few ghee-roasted cashews

Directions

    1.Marinate the minced mutton with ginger-garlic paste,lemon juice and 1/4 tsp salt for 20 mins.
    2.Cut the Onions and Chop the coriander and mint leaves.Prepare 100 ml thick coconut milk and 100 ml
second.
    3.Ghee-roast the washed rice flakes with 1 tbsp ghee.keep this aside.
    4.Heat oil and 2 tsp ghee in a pressure pan and add crushed bay leaves,1-clove,1/2 inch cinnamon stick,1 cardamoms,1/2 star-anise - crushed.
    5.Add and saute half the onion slices till golden brown or for 2-3 mins.
    6.Add half the chopped tomatos and slit green chillies  and saute for a min.
    7.Add the marinated keema along with the marinade(by this time the minced mutton gets marinated for 20 mins). Add mutton masala,100ml second coconut milk,100ml thick coconut milk,half the chopped coriander and mint leaves and pressure cook for 10 mins or up to 5 whistles on good flame.Immediately turn off the flame.Wait for the pressure to be  released.
    8.Meanwhile heat 2 tsp oil and saute the other half of the onion slices till golden brown or for 2-3 mins.
    9.Add the other half of the chopped tomatos and slit green chillies  and saute for a min.
    10.Add the ghee-roasted rice flakes,1/4 tsp biryani powder,the done keema with the sauce ,50 ml second
milk and the remaining chopped coriander and mint leaves and 1/4 tsp salt.Mix well and stir this till rice-flakes blends well with the keema and masala for a min or 2.Turn off the flame.
    11.Garnish with ghee-roasted cashew nuts.
    12.Mix this Keema Poha Biryani well before serving with Cucumber-Onion raita.

Palak(Spinach) Pongal

It is good to include Greens in ur daily Menu.For kids who don't like eating greens - this is very good option to make them have palak with rice or pongal or dosa or idly or chapati,puttu,vada or even with Omelette(see my Palak Omelette recipe) or Chicken.This tasty Palak Pongal can easily be done in 14 mins.Palak with rice and spices - a green pongal for Pongal lovers.Paruppu thogaiyal(thick Chutney) is the best combination for this Palak Pongal.Enjoy Cooking as much as eating!.

Palak(Spinach Pongal)- Spinach leaves cooked with rice and spices with yellow moongdal
 
Ingredients
    2 cups finely chopped palak(Spinach)
    1 cup Raw rice
    1/2 cup Split moong dhal(yellow in colour)
    1/2 cup Onion(finely chopped)
    1 1/2 tsp Cumin seeds
    a pich of dry ginger powder(optional)
    3 no.s whole red chillies
    1 tbsp Ghee
    2 tsp refined oil
    1/4 tsp chopped ginger
    2 tsp  peppercorns(20 no.s + 5 pepper corns crushed)
    2 tsp Salt to taste
    10 no.s crushed cashews(roasted in ghee)
    3 cups water

    For gram dhal thogaiyal:
    (grind these together in a mixer) 1/2 cup dry-roasted gramdal (varutha kadalai paruppu),1 cm size  tamarind, 1 tbsp grated coconut,7 red chillies,3/4 tsp salt ,1 sambar onion and 1 tbsp water

Directions
    1.Wash the raw rice and the split moong dhal together.
    2.Heat oil and ghee in a pressure pan.put chopped ginger,cumin seeds,whole red chillies and chopped
onions and saute for 2 mins.
    3.Then add dry ginger powder(sukku),crushed pepper corns and chopped palak leaves,washed raw rice and split moong dhal.
    4.Add needed water (atleast 3 cups) and salt,pressure cook upto 4 whistles.
    5.Garnish with crushed ghee-roasted cashews,mix well and serve with Paruppu thogaiyal(thick chutney).

Sambar Wheat


Sambar is an Authentic Dhal gravy of  South India. Whenever U hear the word Sambar- apart from the Gravy thing-the first one that comes to mind  is 'Sambar Rice or  Sadham'  and then 'Sambar Vada'-Vada soaked in Sambar and served as a snack.U can do one more memorable dish with this magic word.Try this fast and simple to make Sambar Wheat  and sit and watch ur family enjoy this lip-smacking wheat granules treat at any time.Try this at home and Enjoy ur Meal!.Bon Appetit!.


Sambar Wheat - Wheat granules done with dhal and veg
Ingredients


100 gm  toor dhal
100 gms  wheat granules
1 cup carrots and french beans(cut into small pieces)
1 drumstick(cut into small pieces)
3 no.s green chillies (slit lengthwise)
1/5 tsp turmeric powder
3/4 tsp salt (to taste)
1 big onion(chopped)
2 medium sized tomatoes(chopped)
1/5 tsp asafoetida powder
2 tbsp grated coconut-optional
water - x 3 times the quantity of toordhal  
1 tsp refined oil + 2 tsp ghee
1/2 tsp mustard seeds
1 tsp chopped curry leaves
1 tbsp(1 tsp +1 tsp+1 tsp) chopped coriander leaves
1  tsp Aachi masala Sambar powder


Directions


1.Heat oil in a kadai. Add mustard seeds,chopped onions, chopped tomatoes,1 tsp chopped
coriander and curry leaves, green chillies, Sambar powder,turmeric powder and saute well for 2-3 minsand keep this aside.
2.Take a pressure pan and add asafoetida powder,turmeric powder,toor dhal and water and allow it to boil upto 5 whistle in a pressure pan.Turn off the flame.wait for the pressure to be released.
3.Add the vegetable pieces,Step 1 seasoning,washed and cleaned wheat granules,chopped coriander leaves and salt and cover the pressure pan and cook for one more whistle.
4.Remove from the fire and keep aside for 10 mins.
5.Open the pressure pan ,sprinkle a dash of ghee,add grated coconut and chopped coriander leaves and mix well.
6.Serve this Sambar Wheat granules alone or with mango thokku and papadam.U will LUV it!.

Potato Riceflakes Upuma - a Microwave Recipe

Potato Riceflakes(Batata Poha) is a traditional Maharastrian breakfast and a famous Mumbai fastfood item. This healthy and easy to prepare dish is done with pressed rice(Poha or Rice Flakes) and can be said as Potato Riceflakes Upuma.It can be served as a breakfast or a teatime snack.Try this snack at home and Enjoy it anytime!.

Potato Riceflakes Upuma - Potato cooked with brown Pressed Rice and selective spices

Ingredients:
    70 gms Samba Aval(Brown Poha or Rice Flakes)
    1 tsp Mustard seeds
    3 sprigs Curry leaves
    1 big Onion -chopped fine
    2 green chillies-de seeded,slit and chopped fine
    1 big potato
    50 gms peanuts
    a pinch of turmeric powder
    1/4 tsp Salt- to taste
    1 tsp coconut oil
    2 tsp refined oil
    1 tsp Lemon juice (optional)
    1 tsp coriander leaves (chopped)
    1 tbsp grated coconut

Directions:

    1.Boil the potato in a microwavable bowl with enough water for 10 mins on high and Take out the bowl. Leave it for 10 mins and peel and cut Potato in 1/2 inch cubes.
    2.Rinse the brown rice flakes in water for 2 - 3 times in running water for 2 secs(depending on the thickness of the riceflakes) and drain the excess water.
    3.Soak the peanuts in water for 10 mins and peel the peanuts.
    4.Heat the refined oil in a microwavable bowl with mustard seeds,curry leaves,onion and green Chillies
and microwave this on high for a min.
    5.Add the soaked and peeled peanuts and mix this well.Microwave this for a min on high.
    6.Add Potato cubes and turmeric powder and mix well.Microwave this for a min on high.
    7.Now add the soaked and drained riceflakes,chopped coriander and salt.Mix it well.Microwave this on
high for for a min and add lemon juice microwave this on medium high for 5 mins-if u want to add tangy taste to the dish.
    8.Take the bowl out and garnish with grated coconut on top and Serve this hot.U will Luv it.

Tips:
U can add mixed vegetables and try this recipe instead of adding cubed potato.

Mixed Veg. Bread - A Microwave Recipe

This easy and Yumm  recipe can serve a Teatime Snack for your family.Its very healthy and tasty and U can add half- cup of chopped greens to make it even healthier.(U can have it for breakfast or Dinner or anytime).This preparation is something  between Bread Upuma and Chat.U need to spend 10 mins of ur time only in the Kitchen.Enjoy this Mixed Vegtable Bread with ur choice of ketch-up anytime.

Mixed Veg. Bread - A Microwave Recipe -  Half-done Veg stir-fried with Bread pieces

Ingredients:
8 bread slices -  edges removed
1 big potato - peeled and chopped
1/2 carrot - chopped
1/4 Capsicum - chopped
1 green chilli - chopped
4 french beans - chopped
1 tsp lemon juice
1/2 onion  chopped fine
1 cherry tomato - chopped fine
2 tbsp - peeled peanuts
2 tsp coconut oil
1 tsp ghee
less than 1/4 tsp salt
a pinch of turmeric powder.
chopped coriander leaves - 1 tbsp

Directions:

1.Take a microwavable bowl,add all the vegetables,both the oils  + ghee,salt and turmeric powder including
peeled peanuts.Mix this well.Sprinkle 1 tbsp water over it and Microwave this on medium-high for 5 mins.
2.Meanwhile chop the bread slices after removing the edges.Add this to the half-done Veg mix and microwave this on medium High for 3 more mins.
3.Sprinkle lemon juice on top and garnish with coriander leaves.
4.Serve this hot with ketch-up.

Mixed Veg Adai

Adai is a South-Indian Speciality popular in Tamil Nadu and Kerala.It can be said as 'Lentil Dosa'.U  can try varieties in this.One of them is Mixed-Veg Adai.U can try this adai with Spinach  by adding 1 1/2 cup chopped spinach leaves or Oats or sprouted Moongdal or Uraddal.The taste of this dish never gets diminished by  adding these extra ingredients.Try this Adai at home and Enjoy ur Breakfast!.BonAppetit!.

Mixed Veg Adai - Adai made with Mixed Veg,lentils and spices

Ingredients :

1 1/2 cup Mixed Vegetables(1/2 carrot,4 french beans,2 tbsp capsicum,or a handful chopped spinach)
3 handful gramdhal
2 tbsp uraddhal-skinless
1 handful toor dhal
1 handful raw-rice
6 red chillies
1  Onion-finely chopped
2 tbsp coconut thin slices-finely cut
one handful grated coconut
1 tsp grated ginger
1/4 tsp asafotida powder
few coriander leaves
few curry leaves
1 tsp salt
50 - 100ml ml water
1/2 cup refined oil-for doing adai

Directions :

    1.Soak urad dhal,toordhal,gramdhal and raw-rice together for an hour or 2.Wash them well.
    2.Grind the ingredients in Step1 and with  red chillies adding 50ml water - to a little coarse batter(the batter should not be fine).
    3.Cut the mixed vegetables.
    4.Add chopped onions,grated coconut,chopped coconut pieces,grated ginger,curry leaves,coriander
leaves, salt and asafoetida powder.Mix this adai batter well.
    5.Heat Adai-pan(dosa pan like but curved in the centre) on medium flame and spread little oil and then
spread 4 tbsp or 1 big-spoonful adai batter like dosa and pour little oil around the edges.Turn the the adai after 1  1/2 mins or till it turns golden brown on bothsides.Do all the adais like this.
    6.Serve this Mixed-Veg Adai with carrot chutney or coconut chutney or Avial Curry or Veg Stew.

Note:
U  can add 3 pepper corns while grinding the Adai batter- if u like it being added.

Mixed Veg. Wheat Dosa

Wheat dosa is good for diabetic patients.Health Concious people can have it once a week for dinner.This can be taken with Kormas(Veg or Non-veg),Chicken, mutton or Fish kuzhambu or with stews(Veg or Non-Veg).If u don't find time to make any side dish, u can have it with chutney or Idli Chilli Powder with oil or ghee or sugar or raita.Here is the recipe for u to try at home

Mixed Veg. Wheat Dosa -Dosa made with wheat flour and mixed veg.s.
   
Ingredients

    1 1/2 cup wheat flour - sieved and dissolved in 3 cups water
    1 chopped Big onion
    1/2 tsp chilli powder
    1  green chilli - chopped fine
    2 tbsp roasted semolina (rawa)
    3 tbsp mixed vegetables
    1 tbsp chopped curry leaves
    few coriander leaves
    3/4 tsp salt
    3 tbsp refined oil

Directions

    1.Mix all the other ingredients with dissolved wheat flour and mix well.
    2.Heat Dosai Kadai (sim)and grease it with oil .Spread wheat dosa then turn over after a min and take that dosai after a min.
    3.Similarly do other dosais too.

Sweet Pathaneer Kanji (porridge) - a Microwave Recipe

Pathaneer (juice extracted from palm) has low-fat, low calorific value (396 for 100 gms) and rich nutritive value.This sweet beverage,white palm-sap,is rich in Calcium (58.7%mg) and very good for growing kids. Pathaneer tastes very sweet too.But use fresh Pathaneer (b4 it gets fermented) in this recipe.Diabetic Patients please excuse.Try this recipe at home and enjoy the taste of the South.

Sweet Pathaneer Kanji (porridge) - Very famous South-Tamilnadu porridge

Ingredients

    1 cup Raw Rice(pacharisi) - soaked for 30 mins
    4 cups or or 750ml Pathaneer
    1/2 cup Red Cow-Peas(thattam Payaru)- cleaned well and soaked for 2 hours
    1/4 salt
    1 cup grated Coconut
    1 tsp dry ginger powder(sukku powder)
    2- 3 -green cardamoms -crushed
    few Crushed ghee-roasted Cashews and raisins
 
Directions

    1.Take a big-Microwave bowl and add raw-rice, pathaneer, red-Cowpeas and salt. Mix well.
    2.Microwave this on high for about 20 mins.Stir this after 15th min once.
    3.Take the bowl out and add the grated coconut,crushed cardamoms and the ghee-roasted cashews and
raisins and microwave this on high for 10 more mins,stirring every 5 mins.
    4.Transfer this Sweet Porridge into serving bowls and serve this hot or chilled.(This Porridge will turn out to be a payasam if u don't add red cow beans and dry ginger powder) cause the pathaneer gives the  required sweetness to this dish( without adding sugar).

Note:
Pathaneer,at initial stages(when collected) does not ferment (non- alcoholic) and tastes very sweet. As time goes by, it ferments and becomes alcoholic and tastes sour (Kallu) and therefore use fresh pathaneer to try this recipe.
