Masala Bread

Try this yumm and mild-spiced Bread Masala which is best taken with raita or alone as an Evening light Meal/Dinner/ Breakfast. It can be packed for Lunch for kids of all ages.This needs 12 mins Cooking time to serve 3 nos. U can add grated carrot,finely chopped Palak,roasted capsicum slices or oil-roasted potato fries/chops in Step 5 and Serve it hot. Enjoy easy Cookig at home!. Enjoy Ur Meal!. Bonappetit!.

Masala Bread - A delightfully light Meal
Ingredients:
6 - 8 bread slices - Edges removed and chopped ino bite sized pieces
1 big onion - sliced thin or chopped fine
2 medium sized tomatoes - finely chopped
1 green chilly - sliced thin
1/2 tsp red chilli powder
1/2 tsp garam masala
1/4 tsp ginger-garlic paste
1/4 tsp salt
1 tsp finely chopped coriander leaves
2 tsp refined oil
1-2 tsp ghee
Directions:
1.Heat oil in a non-stick pan and saute sliced onions and ginger-garlic paste till done for 3 mins.
2.Add finely chopped tomatoes,chopped curry leaves,green chilli slices,red chilli powder,garam masala powder and salt.Saute it well till tomato begins to melt.
3.Add 120 ml water and bring it to boil.
4.Meanwhile, heat 2 tsp ghee in a non-stick kadai and ghee-roast bread pieces till it gets done for 2  mins (Turn off the flame b4 the bread pieces change colour).
5.Add this bread pieces and chopped coriander leaves to the Step 3 Masala and mix it well till the masala gets evenly spread over the bread pieces.
6.Serve it hot with Cucumber/Onion Raita as an Evening light Meal/Dinner/Breakfast or pack it for Lunch(Reheat it in M/W Oven and have a Wonderful Light Meal).

Mutton Paradox - a North-Indian Mutton Recipe

Very tasty Mutton dish with thick and tangy gravy.Here is that treasured recipe for u to try at home.This Yumm and simply tempting gravy that can pair up with all Indian breads.Happy Cooking!.Enjoy easy and tasty cooking at home!. Enjoy ur meal! .Bon Appetit!.

Mutton Paradox - A North Indian Mutton delicacy - cooked with selective spices
Ingredients:
400gm mutton pieces-(marinated with 1/4 tsp turmeric powder,1/2 tsp kashmiri chilli powder and 1/4 tsp salt for 30 mins atleast)
3 big onions - chopped fine
3 big tomatoes-chopped fine
1/2 tsp shahjeera(black cumin seeds)
1/2 tsp saunf
4 green chillies-slit lengthwise
1/2 tsp coriander powder
1/2 tsp kashmiri chilli powder
1/2 tsp garam masala
1/2 tsp ginger paste
3/4 tsp garlic paste
1 1/2 tbsp ground paste of(2 tsp poppy seeds + 10 cashewnuts)
few coriander leaves
1/2 tsp salt
1 tbsp refined oil
2 tsp ghee
150 ml water

Directions:
1.Heat 1 tbsp oil with ghee in a pressure pan and shallow-fry the marinated mutton pieces for 6-7 mins on medium flame till half-done.Take the mutton pieces and keep it aside.
2.Heat the remaining oil,saute the chopped onions till it turns golden brown.
3.Add garam masala powder,shahjeera seeds,saunf and chopped tomatoes with 1/2 tsp salt(adding salt here
speeds-up the cooking of tomatoes) and saute this till the tomatoes begin to melt.
4.Add ginger paste and garlic paste,saute this till the rawness diminishes for 2-3 more mins.
5.Add green chillies,coriander powder,chilli powder and the cashewnut masala and saute for 3 more mins.
6.Add the shallow-fried mutton pieces and stir for 3 more mins.
7.Then, add 150 ml water and the coriander leaves.Mix this well.Pressure-cook this upto 4 whistles.Turn off
the flame.Leave this for-a-while till the pressure releases.
8.Garnish with few coriander leaves.Serve this tasty mutton curry hot with rice or Indian breads.

Lemon Riceflakes(Elumichai Aval)

Lemon Riceflakes has been served as the healthy recipe of the Day.It can be said as Lemon Riceflakes Upuma and the preparation slightly differs from 'Batata Poha'.It can be packed for Lunch too.U can garnish it with peanuts and roasted cashews.It can be done in 6 - 7 mins time and serves 3-4 nos.U can add 1 sliced onion in step 2 or do without it.The recipe is same like the Lemon rice recipe.Enjoy Ur Breakfastor short-meal!.BonAppetit!

Lemon Riceflakes
Ingredients:
3 cups thick white poha or Aval(riceflakes)
4 tsp lemon juice
2 tsp kadalai paruppu or Channadal - soaked for abt 15 mins
2 Dried Red Chillies
a pinch of turmeric powder
few Curry leaves and coriander leaves
a pinch of asaoetida
1/2 tsp mustard seeds
1/2 tsp Urad dal
1/4 tsp salt - to taste
2 tsp refined Oil

Method:
1) Soak the riceflakes in 2 cups water and drain the excess water after 30 secs twice and keep it aside.
2) Heat the oil in a kadai,season with mustard seeds and urad dal,once the mustard starts popping,add the kadalai paruppu(channa dal),red chillies,curry leaves,asafoetida or hing,turmeric powder and salt.Saute it till it gets fried - say for 2- 3 minutes.
3) Add add the lemon juice and the soaked white riceflakes and mix (with spatula) gently sprinkling 30 to 50 ml water now and then till riceflakes gets wellcoated with the seasonings.
4) Turn off the flame and garnish with coriander leaves.

Tips:
If U use thin riceflakes Variety,wet it once and sprinkle little water now and then in Step 3.But it won't luk nice and de-shaped quickly- like done with  the thick riceflakes.

Brinjal Noodles Briyani



This recipe states a simple and tasty Briyani recipe with Brinjal and Noodles Briyani using Microwave Oven.This flavorful noodles Briyani can be done well under 15 mins and served as a short-meal too.Addition of pure coconut oil makes it more aromatic.Check ur Manual timings as it may vary 1 -2 mins/model.Enjoy Easy cooking at home and Ur Meal!.BonAppetit!


Brinjal  Noodles Briyani - South Indian easy and tasty Brinjal Briyani done with Noodles

Ingredients:
100 gms Noodles pack
2 medium sized Brinjals
1/2 tsp Briyani Masala
1 Onion - sliced fine
2 tbsp tomato puree
1/2 tsp ginger garlic paste
(1 cardamom,1/2 cm cinnamon stick,1 clove,1/2 bay leaf -crushed)
1 tbsp coconut oil


Directions:
1.Wash well the Brinjals and chop them fine.Soak it in water.
2.Boil 350 ml water in a M/Wave-safe bowl keeping it on high for 2 mins.
3.Add 1 tsp coconut oil,noodles(split into 8 portions).Mix it well and M/W this on high for 3 mins.
4.Take the bowl out and mix it well.M/w on medium high  for 5 mins.Check for doneness and remember the noodles shd not be too dry.Keep it aside.
5.In another M/W safe bowl,add 2 tsp coconut oil, cardamom,cinnamon stick,clove,bay leaf,chopped Brinjal pieces,sliced onions,tomato puree,Briyani masala,ginger-garlic paste and a pinch of salt. Mix it well.M/W on high for 2 mins.Take it out and mix it well.Again do it on medium-high for  a min.
6.Mix the noodles with the Brinjal masala  and Microwave it on medium high for 2-3 mins.
7.Pack it for Lunch or serve it hot with Raita of Ur choice
