Brinjal Masala

This Brinjal Masala is easy to make and an ideal sidedish for Rasam Rice and Curd Rice.It requires less spices and time and tastes so good even if it is simple-made.U can do this recipe with French beans,Broad Beans,Boiled Yam pieces, Mushroom, Capsicum and etc...This tastes divinely good and U can have it with Steamed Rice without Curd or Rasam or Sambar. This side-dish is mostly done in South-TamilNadu and needs 12 - 15 mins cooking-time. Try this recipe at home and Enjoy a Yummy Meal!. BonAppetit!.

Brinjal Masala - Brinjal pieces cooked with selective spices
Ingredients:
    4 medium-sized Brinjals (Clean and cut into bite-sized pieces)
    1 onion -  finely chopped
    1/2 tsp chilli powder
    1/4 tsp cumin powder
    1/4 tsp turmeric powder
    1/2 tsp mustard seeds
    1 tbsp coconut paste with 1 sambar onion and 1/2 tsp cumin seeds
    1/2 tsp or salt to taste
    few curry leaves
    few coriander leaves
    130 ml water
    2 tsp refined oil
Directions:
    1.Heat oil in a Kadai, Splutter mustard seeds,chopped onions,cumins and curry leaves.Saute it for 3 mins on medium flame.
    2.Add the Brinjal pieces,spices,salt and saute it for 2 mins till the spices get mixed well.
    3.Add 130 ml water, Cover and cook till it gets done in 7 mins time on medium flame - stirring it often.
    4.Add coconut paste and stir-cook it or 3 mins.
    5.Gather this masala in a bowl and serve it hot with rice or rasam or yoghurt or Curd rice or Coconut rice or chapati or Idli.

Brinjal Noodles Briyani



This recipe states a simple and tasty Briyani recipe with Brinjal and Noodles Briyani using Microwave Oven.This flavorful noodles Briyani can be done well under 15 mins and served as a short-meal too.Addition of pure coconut oil makes it more aromatic.Check ur Manual timings as it may vary 1 -2 mins/model.Enjoy Easy cooking at home and Ur Meal!.BonAppetit!


Brinjal  Noodles Briyani - South Indian easy and tasty Brinjal Briyani done with Noodles

Ingredients:
100 gms Noodles pack
2 medium sized Brinjals
1/2 tsp Briyani Masala
1 Onion - sliced fine
2 tbsp tomato puree
1/2 tsp ginger garlic paste
(1 cardamom,1/2 cm cinnamon stick,1 clove,1/2 bay leaf -crushed)
1 tbsp coconut oil


Directions:
1.Wash well the Brinjals and chop them fine.Soak it in water.
2.Boil 350 ml water in a M/Wave-safe bowl keeping it on high for 2 mins.
3.Add 1 tsp coconut oil,noodles(split into 8 portions).Mix it well and M/W this on high for 3 mins.
4.Take the bowl out and mix it well.M/w on medium high  for 5 mins.Check for doneness and remember the noodles shd not be too dry.Keep it aside.
5.In another M/W safe bowl,add 2 tsp coconut oil, cardamom,cinnamon stick,clove,bay leaf,chopped Brinjal pieces,sliced onions,tomato puree,Briyani masala,ginger-garlic paste and a pinch of salt. Mix it well.M/W on high for 2 mins.Take it out and mix it well.Again do it on medium-high for  a min.
6.Mix the noodles with the Brinjal masala  and Microwave it on medium high for 2-3 mins.
7.Pack it for Lunch or serve it hot with Raita of Ur choice

Brinjal in Coconut Sauce

Very easy Brinjal Gravy recipe is given here to try at home.This is no special but simple and done with no red chilli powder.It can be served with all Indian Breads.U can even try this recipe with mushrooms,Capsicum, Garlic, Ginger,Drumsticks,Ladiesfingers and Boiled eggs.This can be done in 15 mins time and serves 4 nos.Enjoy Ur Meal!.BonAppetit!

Brinjal in Coconut Sauce - Gravy made with Brinjals
Ingredients

    5 medium sized Brinjals - cut into bite size pieces
    15 shallots(small Onions)-cut into halves
    1 tsp ginger-garlic paste
    a pinch of asafoetida powder
    1/2 tsp cumin seeds
    1 tsp mustard seeds
    1/5 tsp turmeric powder
    1/2 tsp freshly ground pepper powder
    1/4 cup thick tamarind pulp- extract of gooseberry size tamarind
    3 tbsp grated coconut (pasted fine with 2 green chillies,1/2 tsp cumin seeds,1 sambar onion and 1 tbsp dry-roasted coriander seeds)
    2 tsp refined oil
    3/4 tsp salt
    few coriander leaves
    few curry leaves

Directions:
    1.Heat oil in a kadai,add mustard seeds,cumin seeds, shallots,ginger-garlic paste and curry leaves.Saute this for 2 - 3 mins.
    2.Add brinjal pieces,asafoetida powder,1/2 tsp fresh pepper powder and turmeric powder.Saute this for 3 mins -stirring it.
    3.Add the tamarind pulp and let it boil till oil separates(for 5-6 mins on good flame).
    4.Add the coconut paste,250 ml water,salt and coriander leaves and let it simmer for 5-6 more mins on medium flame or till oil seperates on top.
    5.Serve this Brinjal in Cococnut Sauce with Steamed Rice and Indian Breads.
