Brinjal Masala (Chinese Style)

This Brinjal Masala is done partially Chinese.This very Yumm and Easy to make Brinjal Masala needs 12 - 14 mins Cooking time and serves 4 nos. It goes well with any Variety Rice or Fried Rice or Indian Breads. Try this Brinjal Masala at home!. Enjoy Ur Meal!. BonAppetit!

Brinjal Masala Stirfry (Chinese style)
Ingredients:
3 Brinjals  - Cut horizontally
1 medium sized Onion - Chopped fine
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp garam masala powder
1  green chillies - slit fine
2 garlic pods - pressed fine
1 1/4 tsp soy sauce
1 tbsp tomato puree
2 tsp corn flour
1/2 tsp + 1/4 tsp salt
few curry and coriander leaves
Directions:
1.Clean and cut brinjal horizontally into round pieces.
2.Soak it in water. Make a paste of corn flour,turmeric powder,chilli powder,garam masala and 1/4 tsp salt.
3.Shallow-fry the brinjal pieces using a non-stick Tawa till its done golden brown on both sides.Keep it aside.
4.Heat oil in a Tawa,stir-fry onion slices with pressed garlic,curry leaves and green chillies for 2 mins on medium flame.
5.Add tomato puree and stir it for a min .
6.Add Soy sauce and stir it well for a min.
7.Add shallow-fried  Brinjal pieces and coriander leaves.Mix it well.Turn off the flame after a min or 2.
8.Serve it hot with any Variety Rice or Fried Rice or Indian Breads.

Chilli Garlic Brinjal Masala

This recipe states an yumm and semi-dry Brinjal Masala that goes well with Steamed rice and Indian Breads. This Masala needs 13- 15 mins cooking time and serves 4 nos.U can add few Capsicum slices in Step 5 and 2 tsp finely chopped spring onions in Step 8 - if U r serving this dish to ur invited guests. U can add 1 tsp garlic paste instead of adding the chopped garlic cloves in Step 5 along with chilli chicken masala. The addition of Garlic improves flavor and taste of the dish. Chilli Garlic Brinjal Masala
Ingredients:
7-8  small sized Brinjals - Cut leaving the stem intact
5 garlic - chopped fine
1 medium sized Onion - Sliced
1 tsp Aachi Chilli Chicken Masala
1 tsp roasted white sesame seeds
4 red chillies
2 tsp coriander seeds
1/2 tsp jeera
2 tbsp grated coconut or 2 tsp coconutmilk powder
1/2 tsp mustard seeds
1/2 tsp salt or needed
few chopped curry and coriander leaves
1 tbsp refined oil
Directions:
1.Dry roast red chillies,coriander seeds and jeera for 1-2 mins,then add the grated coconut and roast it for a
min or 2 till the done smell comes alive.
2.Add the already dry roasted white sesame seeds and stir-fry and turn off the flame in 30 secs.Leave it to cool and paste it fine adding 30 ml water.
3.Heat oil in a kadai and saute brinjal till its half done.Take it out-leaving the oil in the kadai.
4.Splutter mustard seeds,chopped garlic,then add the sliced onions and curry leaves. Stir-fry till done for 2-3
mins.
5.Add the oil-roasted brinjals and chilli chicken masala.Stir-fry it for 2 mins on medium flame.
6.Add the ground masala and salt with half the coriander leaves.Mix it well.
7.Add 100 ml water and stir it for a min. Leave it covered and keep stirring it after 4-5 mins.
8.Turn off the flame when water runs dry and done.Serve it hot with Steamed rice and Indian Breads. Yummy!.

Brinjal Masala

This Brinjal Masala is easy to make and an ideal sidedish for Rasam Rice and Curd Rice.It requires less spices and time and tastes so good even if it is simple-made.U can do this recipe with French beans,Broad Beans,Boiled Yam pieces, Mushroom, Capsicum and etc...This tastes divinely good and U can have it with Steamed Rice without Curd or Rasam or Sambar. This side-dish is mostly done in South-TamilNadu and needs 12 - 15 mins cooking-time. Try this recipe at home and Enjoy a Yummy Meal!. BonAppetit!.

Brinjal Masala - Brinjal pieces cooked with selective spices
Ingredients:
    4 medium-sized Brinjals (Clean and cut into bite-sized pieces)
    1 onion -  finely chopped
    1/2 tsp chilli powder
    1/4 tsp cumin powder
    1/4 tsp turmeric powder
    1/2 tsp mustard seeds
    1 tbsp coconut paste with 1 sambar onion and 1/2 tsp cumin seeds
    1/2 tsp or salt to taste
    few curry leaves
    few coriander leaves
    130 ml water
    2 tsp refined oil
Directions:
    1.Heat oil in a Kadai, Splutter mustard seeds,chopped onions,cumins and curry leaves.Saute it for 3 mins on medium flame.
    2.Add the Brinjal pieces,spices,salt and saute it for 2 mins till the spices get mixed well.
    3.Add 130 ml water, Cover and cook till it gets done in 7 mins time on medium flame - stirring it often.
    4.Add coconut paste and stir-cook it or 3 mins.
    5.Gather this masala in a bowl and serve it hot with rice or rasam or yoghurt or Curd rice or Coconut rice or chapati or Idli.
