Chilli Garlic Brinjal Masala

This recipe states an yumm and semi-dry Brinjal Masala that goes well with Steamed rice and Indian Breads. This Masala needs 13- 15 mins cooking time and serves 4 nos.U can add few Capsicum slices in Step 5 and 2 tsp finely chopped spring onions in Step 8 - if U r serving this dish to ur invited guests. U can add 1 tsp garlic paste instead of adding the chopped garlic cloves in Step 5 along with chilli chicken masala. The addition of Garlic improves flavor and taste of the dish. Chilli Garlic Brinjal Masala
Ingredients:
7-8  small sized Brinjals - Cut leaving the stem intact
5 garlic - chopped fine
1 medium sized Onion - Sliced
1 tsp Aachi Chilli Chicken Masala
1 tsp roasted white sesame seeds
4 red chillies
2 tsp coriander seeds
1/2 tsp jeera
2 tbsp grated coconut or 2 tsp coconutmilk powder
1/2 tsp mustard seeds
1/2 tsp salt or needed
few chopped curry and coriander leaves
1 tbsp refined oil
Directions:
1.Dry roast red chillies,coriander seeds and jeera for 1-2 mins,then add the grated coconut and roast it for a
min or 2 till the done smell comes alive.
2.Add the already dry roasted white sesame seeds and stir-fry and turn off the flame in 30 secs.Leave it to cool and paste it fine adding 30 ml water.
3.Heat oil in a kadai and saute brinjal till its half done.Take it out-leaving the oil in the kadai.
4.Splutter mustard seeds,chopped garlic,then add the sliced onions and curry leaves. Stir-fry till done for 2-3
mins.
5.Add the oil-roasted brinjals and chilli chicken masala.Stir-fry it for 2 mins on medium flame.
6.Add the ground masala and salt with half the coriander leaves.Mix it well.
7.Add 100 ml water and stir it for a min. Leave it covered and keep stirring it after 4-5 mins.
8.Turn off the flame when water runs dry and done.Serve it hot with Steamed rice and Indian Breads. Yummy!.
