Jackfruit(Raw) Coconutmilk Curry


This Mild Srilankan Curry is best done with Mud Pot and less spices.This one goes well with Rice,Bread or Indian Bread.I dedicate this recipe to my Husband's friend Rukmal,who gave me this recipe.Thanks Rukmal.Try this at home and Bon Appetit!.

Jackfruit(Raw) Coconutmilk Curry - Unripe Jackfruit pieces cooked in Coconutmilk with spices

Ingredients

1 small raw jackfruit(unripe)
5 or 6 tbsp coconut milk powder
1 big onion - chopped fine
1 tsp grated ginger
3 garlic cloves - crushed
2 green chillies -slit lengthwise
1/4 tsp turmeric powder
1 tsp fresh pepper powder(optional)
1/2 cinnamon stick
1 clove
2 sprigs fresh curry leaves
1 tsp salt or to taste
2 tsp coconut oil
400 ml water

Directions

1.Dissolve 5 tbsp coconutmilk powder in 400ml warm water and keep this aside.
2.Cut the raw jack fruit into pieces- removing outer skin and inner foul parts.
3.Take a kadai or mud pot and add coconut oil,grated onion,grated ginger,crushed garlic,curry leaves,cinnamon stick and clove.Stir this till onion turn colour.
4.Add the jackfruit pieces,turmeric powder,green chillies,pepper powder,salt and water.
5.Cover and cook for 15 mins or till half-cooked.
6.Add coconut milk and cook till it is done.
7.Serve this with rice or bread or with Indian breads

Tips:

U can try Banana Flower Curry the same way.
