Vermicelli Veg. Idli

Vermicelli Idli can be prepared like Rava Idli with Vegetables and Yoghurt .Very tasty Idli to do with chopped vegetables and seasoning.I first tried it an year back with little semolina added to it and but it came out well even without semolina.Add fresh chopped vegetables or saute it with  seasoning and add it to the Idli batter.This can be served with Sesame Chutney or Tomato-Onion Chutney.Enjoy it anytime!.Bon Appetit!.

Vermicelli Veg Idli - Idli done with roasted Vermicelli and Vegetables

Ingredients:

    1/2 kg Idli batter
    70 gm ghee roasted vermicelli and crushed
    1 small carrot -chopped fine or grated
    5 french beans -chopped fine
    1 handful spinach -chopped fine
    1 green chilli (optional)
    1/4 tsp grated ginger
    3 sambar onion -chopped fine
    1/4 tsp mustard seeds
    few chopped curry leaves
    a pinch of asafoetida
    2 tbsp grated coconut - optional
    2 tsp + 2 tsp refined oil - for the seasoning and greasing the Idli plate.
    2 tsp ghee

Directions

    1.Ghee-roast the vermicelli and soak it in Idli batter for 10-15 mins
    2.Meanwhile,heat oil in a non-stick kadai or pan,Splutter mustard seeds.
    3.Add chopped onions,chopped green chilli,curry leaves,grated ginger piece,asafoetida,chopped vegetables and grated coconut one-by-one and saute for 2-3 mins only.
    4.Add this seasoning to the Idli batter with Yoghurt.Check for salt and mix well for a min.
    5.Pour this batter into greased idli plates and steam-cook for 8-10 mins without whistle.
    6.Tasty Veg Vermicelli Idlis are ready to be served with Sesame Chutney.

I make rava idlis and then all I have to do is mix vermicelli with it. Will try making few first, thanks for sharing:)
