Carrot Pudding

Yummlicious and moist Carrot Pudding recipe is given here to try at home.U can try this delicious bake without adding breadslices.This mouthwatering Dessert can be served after a filling meal or teatime or anytime. U can substitute grated Beet or Dates Pulp... for grated carrot and try this recipe. Enjoy Easy Home-made Bake at home.Enjoy Ur Meal!. BonAppetit!.

Carrot Pudding
Ingredients:
2 big carrots-grated
60 gms butter
1 cup refined flour
1 tsp vanilla extract
2 bread slices soaked in 150ml boiled milk for 10 mins
1 1/4 tsp baking powder
2/3 rd cup powdered sugar
Directions:
1.Cream butter and sugar.
2.Add grated carrots to the bread slices mixture with vanilla extract and mix it well.
3.Sift the remaining dry ingredients together.Add to the cream mixture.Mix well.
4.Mix it with the step 2 mixture and pour into large muffins cup 2/3rds full.Topt it with a spoonful grated carrot.
5.Preheat the Oven to 180 C and bake in the middle rack for 25 - 30 mins or till a skewer comes out clean.
6.Serve this Dessert anytime.

Panchamirtha Fruity Nuts Salad

U often get bored with even ur Fav Dessert, if it is served too frequently. Try this Dessert for a change - a Fruit Salad with IceCream this Weekend.I tweaked an old recipe by adding new ingredients and the traditional taste of it still remains (Panchamirtham taste). Panchamirtham is a 'Five Fruit Healthy Mixed Sweet' which has been served traditionally in TamilNadu Temples and  as famous as 'Tirupathy Laddu' here in TamilNadu. This recipe of mine got published in Khanakhazana.com nearly 4 years ago. U can try 'Panchamirtha' Halwa, Burfi, Juice, Smoothie, Jam, Jam Tarts,Cake,etc with the 'Five Fruit Mix' mentioned in this recipe. Panchamirtha Fruity Nuts Salad - Tastefully, Traditionally and FruitfullyYours
Ingredients:
ripe banana - 1 no (1 cm sized cubs)
seedless grapes - 1 bunch (cut into halves)
ripe (firm) mango - 1 no (1 cm sized cubes)
jack fruit - 10 no.s (cut into 1 cm pieces)
apple - 1 no (1 cm cubed pieces)
ghee - 1 tbsp
honey - 2 tbsp
jaggery - 3-4 tbsp (crushed)
for garnishing:
cleaned raisins - 10 nos
dates - 2 no.s (chopped)
cherry - 3 no.s (chopped)
cashews - 10 no.s(crushed)

Directions
1.Clean and cut the first five fruits , add honey . Mix well and keep aside.
2.Take a pan and heat ghee. Add crushed cashews and raisins then add jaggery. Heat till the jaggery melts and then add the fruit mixture.Mix or saute this for 1 - 2 mins.Turn off the heat. Don't forget that this needs a min or 2  stirring only( after adding the fruits-just b4 it starts to melt).
3.Garnish with chopped cherries and dates.
4.Tasty Panchamirtha Fruit Salad is ready to be served.

Tips:
This can be served as a dessert with your choice of IceCreams - 1 tbsp added and few scoops of icecreams like vanilla or butterscotch on top (with usual icecream toppings or caramalized cashews and nuts) per serving head.

Coffee Mousse

This Coffee Mousse has an unique taste with creamy coffee flavor that cannot be better described(put) in words.It has become a favourite of mine- since I have tasted it for the first time few  months back.This Divinely Delight  of the 'Coffee' lovers is very easy to make dessert at home and can be served as a rich creamy dessert to the invited Guests after a filling meal.Can be done in 15 mins and then made to rest in the fridge for over 2 hours.Can try the same recipe with Chocolate (cocoa powder),Strawberry(using crush),Mango,Lemon,Orange, Dates and Pineapple Mousse this way.Try this Mousse at home and Enjoy Ur Meal!. BonAppetit!
Coffee Mousse - Rich creamy Coffee Dessert
Ingredients:
1 or 1  1/2 tbsp DavidOff INSTANT COFFEE powder
egg white of 2 Eggs
30gm castor sugar
70 ml double cream
1 tsp liquid  gelatin
2 tbsp cold water
1 tbsp honey - for decoration
2 tsp castor sugar + 1 tsp grated chocolate + 1 tsp instant coffee powder - mix it well
Directions:
1.Dissolve liquid gelatin in cold water and keep it aside.
2.Add the Instant coffee powder into gelatin mixture and then melt it using double boiling.
3.Whip egg whites with sugar till it turns creamy with softy peaks.Beat the cream and fold in to the egg whites.
4.Then Stir in the gelatin mixture to the whipped egg whites and cream mixture and mix it well.
5.Pour in to 4 small round glasses and allow it to settle for 2 to 2 1/2 hours in the fridge.
6.When done,(turn it upside down or) decorate the mousse with honey on top and sprinkle 1/2 tsp (castor sugar+ coffee + choco flakes) mixture over it.That's all.

Fruit Pizza

This is not an authentic recipe but a handy one to try at home.I tried it with many bases and sauces and found this one real Yumm!.The original pizza but with fruits and dry-fruits toppings.The baking time could differ little(see ur M/W Oven manual).U can try this with custard toppings,creamy toppings,orange sauce or even with chocolate sauce or mixed Jam toppings instead of pizza sauce.Kids will luv it.U can try it as bread pizza or with Spaghetti Pizza or Macaroni Pizza.Enjoy it any time!.Bon Appetit!.

Fruit Pizza - Ordinary pizza done with fruits and dry-fruits toppings

Ingredients:

1 middle sized pizza base (12")
For Toppings:
2 cherry tomatoes (chopped)
2 tbsp pizza sauce
6 black olives(sliced) or seedless black grapes(halved)
40 gm grated mozzarella cheese (pizza cheese)
2 tbsp butter
2 tbsp mixed fruit jam
1 1/2 cups or 100 gms chopped fruits and dry fruits
(Chopped pieces of strawberries,seedless black grapes,dates,Cherries,pineapple,banana,chopped raisins,almond flakes,tutti fruiti,chopped dry fruits(chopped fine) - Don't add apple and orange.it will spoil the show).

Directions:

For pizza:
1.Take the pizza base and spread little pizza sauce over it.
2.Put the chopped fruits and nuts mixture for topping over it.
3.Put the mixture for  garnish it chopped cherry tomato, mixed fruit jam,chopped black olives and grated mozzarella cheese
4.Bake it in the Microwave oven on high for 2 mins and then on medium-high for 1 or 2 mins or till the cheese melts.Fruit Pizza is ready to be served.U can serve it as a dessert  or meal.

Yoghurt Payasam

I tried it last week when I was not able to buy milk on a hectic day in Dubai b4 Ramadan(all shops were open frm 6 p.m to 2 a.m those days).Its a lot easy to do and turned out Yummy.I added plain Yoghurt and banana Cream to make sure it shdn't taste sour.U can add condensed milk or coconutmilk or milk powder instead of Cream or yoghurt and try payasam otherwise.Try this at home and drop ur comments.

Yoghurt Payasam - Payasam done with plain Yoghurt


Ingredients:
50 gms any good Payasam Readymix or Adai pradhaman mix
a pinch of kesari powder
200 ml water
50 gm Banana flavored Cream
150 ml plain Yoghurt - (not  yoghurt or Curd )
2 tbsp sugar
few tutti fruiti

Directions:

1.Heat water in a sauce pan .When it begins to boil,add the Payasam ready mix and stir-cook till  done.Add a pinch of kesari powder and mix well.Turn off the flame.
2.Add banana flavored cream and mix it well.
3.Add Plain Yoghurt and sugar and Mix well.
4.Refrigerate for 15- 20 mins.Serve it chilled with tutti-fruiti on top.

Beetroot Halwa - a Microwave Recipe

For today's women, Microwave Oven is a bliss.It not only helps u make great meals but also taste sweeter moments with  quick desserts or teatime sweets with  less effort and time. It retains the natural flavor,Colour, vitamins and minerals of the done food.Hence this Beetroot halwa is very deliciously and colourfully done using M/W.Try this at home.This needs little over 15 mins cooking time.(C ur Microwave Oven Manual and adjust the cooking time accordingly cause it varies by 2 - 4 mins sometimes).Use Microwave safe bowls while trying this recipe.Enjoy ur Meal!.Bon Appetit!.

Beetroot Halwa (a Microwave Recipe) - Halwa made with grated and pulsed Beetroots

Ingredients

2 big beetroots - peeled,grated or pulsed 4-5 times in a mixer grinder into a fine paste
1 tbsp mawa
2  tbsp milk powder like Nido
250 gms sugar - powdered
1/2 tsp vanilla essence
1 tsp cardamom powder
10 cashewnuts-chopped fine
10 kismis -chopped fine
3 tbsp ghee
150ml water - water used to clean the Mixer -Jar  can be used

Directions

1.In a microwave bowl, add 2 tsp of ghee and chopped cashewnuts.Mix it well and microwave it on High for a minute.
2.Then,add the chopped kismis and mix well and microwave them on High for 30 secs.Take the bowl out and keep it aside.
3.Add pulsed beetroot,2 tsp ghee and 150 ml water(Mixer-jar washed water) to the same bowl and mix well.Microwave this on High for 3+3+2 minutes mixi well after the 3rd and the 6th min adding 1 tsp ghee each time.(till water runs semi-dry)
4.Then,take out the bowl and add 250 gm powdered sugar and cardamom powder and 2 tbsp milk powder + 1 tbsp mawa + 2 tsp ghee + 1/2 tsp vanilla essence to the beetroot-mix and mix well.Again,microwave it on High for 3 mins + 2 mins [pause and mix after the 3rd min]
5.Then,take the bowl out and add ghee-roasted cashews and kismis and mix it well. Microwave this on High for 2 + 1 (or 2 mins if needed).This halwa shd be semi-dry.
6.Very tasty beetroot Halwa is ready to be served at teatime.

Fruits-Bikis Icecream Dessert

This is one of my family's dessert.Really yummy.The author of this recipe is my Father.He first tried it when I studied II Std with these fruits,Milk Bikis and plain Milk IceCream.He adopted different methods to include healthy food intakes- when I was a kid.He added Chocolate Cookies,Mango Icecream or Butterscotch Icecream later in this Dessert- after they got introduced in my District.Hope U wd like it.Try this wonderful Dessert at home .Make ur kids eat healthy Desserts even when U serve them Icecream .U can try  this adding Soymilk instead of Low Fat Milk.U can try this Dessert as a Smoothie too. Enjoy ur Meal with a healthy finish. Bon Appetit!.

Fruits-Bikis Icecream Dessert - Yummy Blend of fruits,biscuits and Icecream

Ingredients
    6 Milk Bikis
    4 Chocolate Cookies
    1 Ripe banana - cut into fine pieces
    1 Apple -peeled and chopped fine
    15 Dates- 12 deseeded and 3 chopped fine
    10 Raisins
    10 cashewnuts - crushed
    250 ml low fat milk
    50 ml condensed milk
    3 tbsp Horlicks powder
    200gm vanilla or butterscotch or mango icecream
    2 tbsp cadburys milk chocholate flakes
    2 tbsp sugar
    2 tbsp honey
    few wafers

Directions

    1.Grind 5 milk bikis,3 Chocolate Cookies,3 tbsp horlicks,1/2 banana pieces,3/4 apple pieces,10 dates,100 gm vanilla or any icecream,20 ml condensed milk,250 ml Low fat milk,1 tbsp cadburys flakes and sugar in to a coarse mixture using a blender.
    2.Gather the remaining  milk biki,Chocolate Cookie and crush them.Add this to the remaining Chopped-fruits mix and nuts and raisins.
    3.Take 4 Dessert bowls and place 2-3tbsp biscuit-fruit mix on each bowl and add the blended bikis-fruits mix over it.
    4.Place 1 scoop Icecream on top of each dessert bowl and decorate this icecream with honey,cadburys flakes,nuts and raisins.Insert 2 wafers on top.
    5.Refrigerate this for 20 mins in the freezer.Serve this chilled.

Shahi Tukre

Shahi Tukre is a delicious dessert done so easily and served as a creamy milk pudding with ghee-toasted sugared  bread topped with pistachio nuts.This can be served in condensed milk with saffron strands on top to make it richer.Enjoy this rich desert!.

Shahi Tukre - a creamy bread pudding variety

Ingredients

    2 slices of bread - edges removed and toasted in ghee
    150 ml condensed milk
    100 gm sugar - made into 100 ml sugar syrup (of single string consistency adding 1/2 tsp vanilla essence)
    1 tsp cardamom powder pulsed with 3 tbsp pistachio
    5-6 strands of saffron(soaked in 2-3 tsp of cold milk)
    2 tbsp honey

Directions
    1.Cut the bread into four squares/slice and toast them in ghee and keep it aside.
    2.Dip the toasted bread pieces in sugar syrup for a sec or two( the bread shd not get de-shaped but soaked in the sugar syrup) and place it in a dessert bowl
    3.Add the condensed milk and sprinkle cardamom-Pistachio powder.
    4.Top it with saffron strands and drizzle one tsp honey over them.
    5.Serve it chilled.

Vermicelli Kheer - a Microwave Recipe

A milky dessert made with Vermicelli,rice and sugar. Tastes so good if u add 150 gm sugar but I reduced the amount of sugar to have a mild sweetness,which is good for all.Savour the taste of sweetened milky vermicelli dessert made easy in a microwave.Try at home and enjoy this tasty Kheer.Bon Appetit!.

Vermicelli Kheer-Sweetened milky vermicelli dessert

Ingredients

    50 gm Vermicelli - ghee roasted for a min
    2 tbsp basmati rice - ghee roasted and powdered coarsely  
    500 ml low fat Milk
    1/2 tsp cardamom powder or cardamom essence
    100 gm sugar
    2 tbsp ghee- roasted crushed nuts (almonds, pistas, cashews, kismis)
    few strands of saffron-optional
    100 ml water
    3 tbsp sweet condensed milk


Directions

    1.Soak the ghee roasted vermicelli and the powdered basmati rice in the milk and water for atleast 10 - 15 mins.
    2.Take a microwave bowl,add all the ingredients except the nuts and  the saffron strands.Mix well till the sugar gets dissolved.
    3.Microwave this high for 10 mins - pause and stir this every time u see the milk rising to the brim or the upper-edge of the bowl. mix this once in the middle.
    4.Take the bowl out,add the ghee-sauted crushed nuts and microwave this high for 5-6 mins,stirring this every time u see the milk rising to the brim or the upper-edge of the bowl.
    5.Transfer this into serving bowl and Serve this Kheer hot or chilled with saffron strands(don't keep it in the freezer).
    6.Add 2 tsp condensed milk(sweet) on top of each bowl,while serving.This also increases the taste.

Wheat Payasam

I happened to taste this  wheat milk dessert last year for the first time- when this was served on-flight.This fragrant and creamy dessert,simple and healthy( if u try this reducing the amount of sugar added ), is a must try.U can serve this hot or chilled.This recipe needs 12-15 mins of ur time in the kitchen.This serves 4.Try this at home and enjoy this after a filling meal.Bon Appetit!.

Wheat Payasam - Milk dessert done with wheat granules

Ingredients:

50 gm Wheat granules
400 ml  Full Cream Milk
50 gms Sugar
few drops of vanilla essaence(optional)
few ghee roasted cashewnuts and raisins
2 green cardamoms
few saffron strands(optional)
3 tbsp sweet condensed milk(if u don't have this just add 2 tbsp sugar more in the preparation)
2 tsp ghee

Directions:

1.Pressure cook washed wheat granules with 100ml milk and 100 ml water upto 2 whistles and mash it after the pressure is released.
2.Heat ghee in a kadai and roast cashews and raisins for a min.
3.Add the cardamoms,the mashed wheat granules and sugar and mix it well till it begins to boil.Add the remaining milk and stir-cook it for 2 mins.Turn off the flame.
4.Garnish with saffron strands and add 2 tsp condensed milk on top and serve it hot or chilled.

Ezy Banana Dessert

When some unexpected guests arrive or when u have no time  to prepare a sweet (tired enough to buy), serve this dessert - if u have banana and milkmaid. This can be done in 3 mins and very tasty too.Try at home and enjoy the dessert.U can try a variation of the same dessert recipe with banana pieces,yoghurt and sugar-if u don't like this milkmaid dessert.

Ezy Banana Dessert - Banana pieces served with sweetened condensed milk


Ingredients:
2 ripe bananas - cut into round pieces
400 ml skimmed and sweetened condensed milk- 1 tin
2 almonds - peeled and grated
2 cashews- crushed
2 pistachios-cut finely
8 kismis or raisins

Directions
1.Take a bowl and add banana pieces,sweetened condensed milk,grated almonds,crushed cashews,chopped pistachios and kismis or raisins. Mix this well.
2.Refrigerate this (if u have time) for 20 mins or serve this in desert bowl. The chillness of the condensed milk gives a feeling of this being served chill.

IceCream Fry

This dessert is made by a scoop of Icecream frozen well and coated in sugar-coconut mixture,stuffed inside dough before briefly deep frying it.The extremely low temperature(frozen state) of the icecream prevents it from melting while being fried.U should scoop the Icecream before freezing it for an hour- counting how many u spread like puri. Its a lot easier to do and tastes so good-when done.Sprinkle powdered sugar and a dash of honey before serving it immediately.It shd be consumed as soon as it served.

IceCream Fry - Fried Sweet balls stuffed with Icecream


IceCream Fry:

Ingredients:
250 gm butterscotch Ice cream -frozen for about an hour in the freeezer
1 Egg - beaten well
1 cup maida
2 tbsp breadcrumbs
1 tbsp corn flour
2 tsp roasted semolina
1/4 tsp cooking soda
a pinch of salt-little only
3 tbsp grated coconut or dry coconut powder - mixed with 1 tbsp sugar
5 tbsp sugar -powdered mixed with 1/4 tsp cinnamon powder
1/2 tsp vanilla essence(optional)
50 ml honey
2 tsp +2 tsp ghee
250 ml refined oil with 2 tsp ghee-for deep frying

Directions:
1.Beat the egg well and add maida,corn flour,roasted semolina,breadcrumbs, salt,cooking soda,2 tbsp powdered sugar and little water. Add vanilla essence (optional) and knead this as dough.
2.Heat oil + ghee mix in a frying pan and spread the dough like small puris. Then spread the grated coconut mixture over it,sprinkle the powdered sugar and cinnamon powder mix and place one scoop of frozen Icecream inside(u should scoop the Ice cream before freezing it for an hour) and immediately seal the edges with maida flour mix and deep fry in oil for 1- 2 mins till it turn little brown.
3.Cut the deep fried Icecream balls into halves and sprinkle powdered sugar mix and drizzle honey over them and serve immediately.
