Choco-Oats Energy Bars(No Bake)

This deliciously yumm Energy Bars need just 2 mins (like Maggi Noodles) Cooking time and need no baking. Very easy to make. This makes about 8-10 bars using this measurements.U can substitute dry fruits like raisins or walnuts or almonds or dessicated coconut or milk chocolate or pulsed roasted sesame seeds for choco chips and dates. Try this Yumm No Bake bars at home and Enjoy Great n Healthy Teatime with Ur Kids and loved ones. BonAppetit!.

Choco-Oats Energy Bars (No Bake)
Ingredients:
1 cup oatmeal - dry-roasted for a min
1/3 cup chocolate chips
1/3 cup pulsed Dates
2 tbsp honey
1 tsp vanilla extract
Directions:
1.Stir-cook choco chips for 10 secs and add all other ingredients and stir it for a min on low flame.
2.Gather and Mix it thoroughly in a bowl.
3.Let it settle in the refrigerator for half an hour.Then,roll into bars of 2 inches length .
4.Store in an airtight jar and keep it refrigerated for up to one week.

Egg Plant in Peanut Butter Curry

I tried this Egg Plant Curry the day I prepared Peanut Butter. I wanted to try it after seeing a different recipe but with this Yumm Combo in Mrs.Priya Suresh's Blogspace. This Curry tasted awesome even with Steamed rice. It can be done in a Jiffy (12 mins) to serve 4 nos with less efforts. Its seen deliciously creamy even with 1 tbsp Peanut Butter. (My Mom does this gravy with cashew paste too).This serves an yumm an easy taste match with Rice and Indian Breads. Try this Easy n Yumm Curry at home and Enjoy Easy Cooking at home!. Yum Yum!. Enjoy Ur Meal!. BonAppetit!.

Egg Plant in Peanut Butter Curry
Ingredients:
150 gms Egg Plant
2 tsp - 1 tsbp Peanut Butter
1 green chilli + 2 garlic pods + 1 cm ginger piece - pasted fine
1/2 tsp any good mutton masala or Subzi masala
a pinch of turmeric powder
1/4 tsp garam or curry masala
1/4 tsp white peper powder - an optional
1 tsp lemon juice - optional
1/4 tsp mustrard seeds
few chopped curry and corianderleaves
2 tsp oil
1/2 tsp salt - to taste

Directions:
1.Marinate Egg plant pieces in chilli ginger-garlic paste and turmeric powder with lemon juice(optional)  for 5 - 10 mins.
2.Heat oil in a non-stick Kadai and splutter mustard seeds and curry leaves,
3.Add the marinated Egg plant pieces allong with the marinade and the mutton or subzi masala with salt. Stir-fry for 2 - 3 mins till little done.
4.Add 150 ml water and cover and cook for 3 mins on good flame.
5.Now add the Peanut Butter, garam or curry masala and coriander leaves .Stir-cook gently for 2 more mins till the Egg plant gets done.
6.Check the salt and Sprinkle a pinch of white pepper powder (this adds flavor to Brinjal Curries) and turn off the flame.
7.Serve it hot with with Rice and Indian Breads.

Mixed Sprouts Usili

Mixed Sprouts cooked with Lentils and seasoned less-spiced. This is mostly done as Lentil's crumble with Cooked Veggies.This serves as an accompaniment cum snack and delightfully healthy to have. U need 15 mins cooking time to serve 4 nos. Yummy!. Enjoy Easy Cooking at home!.Enjoy Ur Meal!. BonAppetit

Mixed Sprouts Usili
Ingredients:
1 cup Mixed Sprouts - soaked for 15 mins and well drained
1/4 cup yellow moongdal -split -soaked for an hour
2 tbsp split gram dal - (kadalai paruppu)
pinch of asafoetida
Pinch of turmeric powder
Salt to taste

Seasoning:
2 tsp oil
1/2 tsp mustard seeds
3-4 red chillies
1 Onion - chopped fine - optional
chopped coriander or curry leaves
Directions:
1.Heat 1 cup water in a kadai and add soaked moongdal and kadalai paruppu with asafoetida and turmeric powder.
2.After 5 mins add mixed sprouts and cover and cook for 6-8 mins till water runs dry.Sprinkle Salt and Mix well
3.Heat oil in a kadai. Splutter mustard seeds,redhillies,onion(optional) and coriander or curry leaves. Add this seasoning to the Step 2: Mixture. Mix it well.
4.Serve it hot as an accompaniment or Evening snack .

Oats Lassi & Reposts

Lassi is a popular and traditionally Sweet yogurt-based drink in India. It is done blending yogurt with water & sugar or honey. Lassi is a perfect thirst quencher & refreshing drink which can be tried at home easily. When done with Oats its more a filling Healthy Smoothie. Oats Lassi
Ingredients:
1/3 cup Oatmeal
500 ml Lowfat Leban Up (or 200gms lowfat Yogurt + 200 ml Water)
2 tbsp honey or 4 tsp sugar
1/2 tsp vanilla extract  or 1/4 tsp cardamom powder - optional
few Ice Cubes - Optional

Directions:
1.Blend Leban Up and Oatmeal till gets well for 30 secs using a blender.
2.Add vanilla extract,sugar or honey and Icecubes(optional). Blend it for a min more.
3.Serve it in 2 tall glasses with a dash of honey on top.

Roasted Chickpeas (Uppu Kadalai)

This  Roasted Chickpeas is an easy snack sold all over South India and is popularly known as 'Uppu Kadalai' in Tamil Nadu. U might have seen it in shops but this can be done at home in 12 - 15 mins. Its rich in Protein. When this Chickpeas is dry-roasted without salt and turmeric powder, U get 'Pori Kadalai'(correctly called) or 'Dalia Dal' or 'Roasted yellow Gram'. Try this recipe at home and Enjoy this easy snack anytime. Bon Appetit!.

Roasted Chickpeas

Ingredients:
100 gms Good Black Channadal or Black Chickpeas
1/4 tsp turmeric powder
1/2 tsp salt
Directions:
1.Heat a heavy or thick bottomed kadai. Continously dry-roast Chickpeas adding turmeric powder and salt on low flame.After 6 - 7 mins of roasting U will see cracks on chickpeas.

2.Keep on stirring for 6 -8 mins more on low flame to get it done.Allow it to cool and serve it anytime as snack.

Dry Chicken Masala

This easy Chicken Masala Stirfry requires less time, cost (Rs 60/) and minimum ingredients and  serves an accompaniment with rice varieties.Leftovers, if any, can be added in salad or as filler in Sandwiches or rolls or wraps. This simple Masala Stirfry needs 12 mins cooking time and serves 4 nos. Best served with Rice and Sambar,Rice Varieties,Pulao,Fried Rice,Bread Slices or Indian Breads. Serve it topped with few fried onion rings or 2 tsp grated coconut or few lemon wedges. Enjoy Easy Cooking at home!.Enjoy ur Meal!. BonAppetit!.

Dry Chicken Masala
Ingredients
200 gms Boneless Chicken pieces(thin and lenthy)
1 onion - sliced
1/2 tsp ginger-garlic paste
1 tsp any good Chicken Masala or (1/2 tsp chilli powder,1/4 tsp coriander powder,1/4 tsp garam masala and a pinch of turmeric powder)
1 tsp finely chopped coriander or curry leaves
2 tsp refined oil
1/2 tsp salt
Directions:
1.Marinate chicken with masala and salt added for 10 mins.
2.Heat 2 tsp oil in a pressure pan and fry sliced onions and ginger-garlic paste for 3 mins.
3.Add marinated chicken pieces along with the marinade,chopped coriander or curry leaves and 150 ml water.Mix it well.
4.Pressure-cook upto 4 whistles and leave it for 10 mins for the pressure to be released.
5.Open the pan lid,check for salt and stir-cook on medium flame till it becomes dry( may need 2-3 mins) on medium flame.
6.Serve it topped with few fried onion rings or 2 tsp grated coconut or 2 lemon wedges - optional.
Tips:
U can add mustard seeds and curry leaves in step 2 and  use it as an accompaniment. Otherwise, it can be used in salad or Sandwiches or rolls or wraps.

Choco Gulab Jamun

Gulab Jamun was made popular by the Mughals in India,Pakistan,Sri Lanka,Nepal and Bangladesh. It is made of a dough consisting of khoya together with flour,rolled and then deep fried. Then soaked in sugar syrup flavored with cardamom seeds and rosewater, kewra or saffron.Kemal Pasha,a turkish Dessert like Jamun, is done  adding unsalted Cheese. I tried a sweet Choco variant of it. It turned out Yumm. U can try it using Jamun ready mix adding 2 tsp Cocoa Powder for 1 cup of Mix for an easy Dessert. U  can try other variations like adding unsalted cheese,dessicated coconut etc...Try this recipe at home. Enjoy Easy Desserts at home!. BonAppetit!.

Choco Gulab Jamun

Ingredients:
2 tbsp All-purpose flour
3 tbsp  instant Milk powder or 1 tbsp khoya
1  1/2 tsp cocoa powder
1/4 tsp baking soda
1 tbsp butter - melted
4 - 5 tsp milk - to make the dough
1/2 tsp corn flour
1 - 2 tsp powdered sugar
Oil for frying

For the Sugar Syrup:
250 ml water
100 gms sugar
3 cardamon pods - crushed slightly
2 strands of saffron (optional)
1 tsp rose water
Directions:
1.Combine all-purpose flour,milk powder or khoya,cocoa powder,corn flour,butter and baking soda to make the dough.
2.Add enough milk to roll into smooth dough.
3.Divide into 12 round shaped balls. Roll gently between your palms to make it even and do the same for all.
4.Heat oil in a non-stick kadai and fry on low flame.Deep-fry them till it turns little done on the sides. Not more than 3 mins as it will taste bitter
5.Boil water and sugar over a low flame in a sauce pan and mix it till sugar dissolves and add soaked saffron,cardamoms and rose water and let it thickens for sometime. Mix it well and turn off the flame.
6.Soak the Jamuns for 12 -15 mins atleast.
7.Serve these Jamuns in Dessert bowls with cashew flakes on top and 1 tbsp sugar syrup on it (or serve it with Cream in winter and Ice-cream in summer).

Peanut Butter

Publishing this Peanut Butter Recipe separately  as my well-wishers want me do so. Try this recipe with Peanuts (not with groundnuts - it tastes good 50%) to enjoy the real taste of Peanut Butter. U can do it Chunky or Creamy. Most prefer Creamy-done Peanut Butter as Spreads and  in bakes like cookies,cakes,brownies...etc. U can Use Chunky PButter in Curries like Stuffed Brinjal,Stuffed Okra,etc...Its very economical(U get Rs.140/. PB by spending Rs.65/. for the Ingredients if try this recipe at home). Enjoy Easy and healthy Cooking at home!. BonAppetit!.

Homemade Peanut Butter
Ingredients:
200 gms peanuts
4 - 5 tsp oil
1/4 tsp salt - to taste
Directions:
1.Dry - roast the peanuts for 4-5 mins on low flame.Allow it to cool.Make it skinless - spread the peanuts on a tray and rub it with hands or a plastic wrap.
2.Pulse the skinless roasted peanut with oil and salt(the peanuts shd cover 1 inch space over the blades) for a
min or 2 till it becomes chunky.
3.Don't add anything even water and pulse it again for  4 - 5 mins till it becomes creamy. Leave it for 15 mins.
4.Gather it in a jar and store it in the fridge. U can use it for 2 weeks.

Creamy Paneer Korma

This recipe states a quick and non-spicy Korma done with Lowfat cream and Paneer. This can serve an alternate gravy or replacement of Paneer Butter Masala or Paneer Tikka Masala for invited guests. Needs 12 - 14 mins cooking time to serve 4 -6 nos. Try this Creamy Korma variation at home and Enjoy an Easy Meal!. BonAppetit!.

Creamy Paneer Korma
Ingredients
75 gms Lowfat Paneer- oil-roasted for a min or 2 till done
1 onion -pasted
1 tomato - pasted
50 ml lowfat cream
1 tbsp coriander leaves
1/4 tsp crushed (jaipathri + 1 clove + 1 cardamom)
ground spices paste (of 3-4 redchillies,1 tsp coriander seeds,1/4 tsp cumin seeds,1/2 tsp saunf,1 cm cinnamon stick,little star-anise,3 garlic cloves and 1 cm ginger piece)
250 ml veg stock or water
3/4 tsp salt -to taste
2 tsp + 1 tsp oil
Directions:
1.Heat oil in a non-stick Kadai,saute onion paste,tomato paste and the ground spices mix for 5 - 6 mins on medium flame till done.
2.Add the crushed jaipathri mixture and coriander leaves and stir-cook it for 2 mins.
3.Add Paneer cubes,lowfat cream,needed salt and veg stock or water and let it boil and done or 4 - 5 mins.
4.Let it get thick n creamy for a min more.
5. Serve it hot with steamed rice,Fried Rice and Pulao or Indian Breads.
