Cauliflower - Greenpeas Masala - A Microwave Recipe

This Very tasty and easy Gopi-Peas Masala can best-accompany the plain rice or the bread slices or the Indian Breads like Chapati,Parota,Idli or Dosa,etc .If u r using dry greenpeas,then soak it overnight and then use.If u r using frozen greenpeas, soak it for 30 mins atleast.This dish needs 12 mins microwave-cooking time with fresh or frozen green peas and 1 - 2 mins more with the dry greenpeas.Try this recipe at home and drop ur comments.Enjoy Easy Cooking at home!. Cauliflower - Greenpeas Masala - Cauliflower Florets cooked with peas and spices
Ingredients:
    100gms Cauliflower (florets sliced)
    1 cup fresh or frozen Green peas, cleaned atleast 5 times
    1 big onion, chopped fine
    1 big tomato, chopped fine
    1 tsp cumin seeds
    1 tsp mustard seeds
     1 tsp chilli powder
    1/4 tsp turmeric powder
    3/4 tsp garam masala or any good mutton masala
    1 tsp ginger-garlic paste
    2 tbsp coconut paste(ground with 1 tsp Saunf,1 small onion and 2 cashewnuts)
    3/4 tsp salt or to taste
    few curry leaves
    few coriander leaves
    1 cup water
    2 tsp refined oil

Directions
    1.Take a microwave bowl and add refined oil,chopped onions,cumin seeds,mustard seeds and curry leaves.
    2.Microwave this on high for a min.Take the bowl out.
    3.Add all the other ingredients including 3/4 cup water except the coconut paste.Mix all the ingredients well so that the masala gets evenly blended and Microwave(high) this for 8 mins.
    4.Add the coconut paste and check for salt.Mix this well and microwave this on high for 3-4 mins till water runs dry.
    4.Serve this tasty Gobi-Mattar masala with rice and Curd or chapathi or Idli.

Drumstick Leaves Stirfry (a Microwave Recipe)

This recipe is served as the Healthy recipe of the Day.Drumstick leaves are said to be rich in Iron.Drumsticks tree can be seen at every home in South TamilNadu.This Drumstick leaves Stir-Fry is an easy, tasty and popular side-dish which needs 12 mins microwave cooking-time.U can try this recipe with Spinach and other Greens.Can do Rasam,Soup,Salad, Raita, Vadai,Pongal,KootanSoru(Mixed Rice),Lentil Combo Kootu etc with Drumstick Leaves.This side-dish is a good combination for rice with sambar or karakuzhambu and other variety Rices.Try this at home.Enjoy Ur Meal!.BonAppetit!

Ezy Drumstick Leaves Stirfry - Drumstick leaves are stirfried with spices
Ingredients:
    3 cups finely chopped Drumstick leaves
    1/2 cup finely chopped onions
    3 whole red chillies
    1/2 tsp cumin seeds
    1/2 tsp mustard seeds
    1/2 tsp split urad dhal-uzhunthu
    1/4 tsp turmeric powder
    3 tbsp grated coconut - optional
    1/2 tsp or salt to taste
    3/4 cup water
    few curry leaves
    few coriander leaves
    2 tsp refined oil

Directions:
     1.Take a microwave-safe bowl,add refined oil,chopped onions,red chillies,cumin seeds,mustard seeds, split urad dhal and curry leaves.
    2.Microwave this on high for a min.Take the bowl out.
    3.Add all the other ingredients except grated coconut including 3/4 cup water and Microwave(high) this
for 7-8 mins.
    4.Take the bowl out after the7th min and mix the mixture well.
    5.Again microwave this on high for 3-4 more mins or till water runs dry.
    6.Take the bowl out and mix grated coconut with the Drumstick leaves Stir-fry
    7.Serve this Drumstick leaves Stir-fry hot with rice and sambar or karakuzhambu.

Pumpkin Curry

This  Pumpkin Curry tastes so good that U will luv to have it more.U can have it with Indian Breads,Bread and Steamed rice.This serves 3-4 nos. and needs 12 mins cooking time only.U can do the same adding 2-3 tbsp coconut paste instead of  coconut milk.U can add 1/2 cup mashed boiled Turdal in Step 5 before adding milk and finish doing it.Enjoy Easy cooking at home.Enjoy ur Meal! Pumpkin Curry - Pumpkin pieces cooked with spices in coconut milk


Ingredients

    200 gms  yellow pumpkin pieces - cut
    5-6 nos finely chopped shallot(sambar onions)
    150 ml  tamarind pulp(of gooseberry size tamarind)
    1/2 tsp subji masala powder
    3 green chillies
    1/2 tsp cumin seeds
    1/2 tsp mustard seeds
    few curry leaves
    a pinch turmeric powder
    1 tsp salt - to taste
    1 tbsp chopped coriander leaves
    2 tsp coconut milk powder - dissolved in 200 ml water
    2 tsp refined oil

Directions

    1.Cook green chillies and tamarind pulp together for 3 mins on good flame.
    2.Add turmeric powder,1/2 tsp subji powder,salt and pumpkin pieces and 100ml water and cover it with lid and cook for 6 mins on good flame.
    3.When cooked,mash half the pumpkin pieces with a spoon.
    4.Heat oil in a kadai,add cumin seeds, mustard seeds,curry leaves,chopped coriander leaves and chopped shallots.saute them for 2 mins.
    5.Add the cooked pumpkin mixture with coconut milk to the kadai and cook for 5 more mins till oil separates on top.
    6.Serve this pumpkin curry hot with rice or chapati.Yummmy Yellow Pumpkin Curry indeed!

Ezy Stuffed Bittergourd Masala(Microwave Recipe)

This stuffed masala can be prepared  - either of the two ways.Either oil-sauted masala can be stuffed and then deep-fried with a coating of maida and corn-flour mix in oil and then done with tomato-onion masala. Otherwise, shallow-fried bittergourd can be stuffed with masala and then done with onion-tomato masala.This can be done in 15-20 mins time.Try this tasty stuffed bittergourd masala and enjoy ur meal with steamed rice and yoghurt.

Ezy Stuffed Bittergourd Masala:

Ingredients

150 gm tender Bitter-gourds
4-6 sambar onions-peeled
1 tomato - chopped fine
2 tbsp grated coconut
3 tbsp peeled peanuts-roasted
3 - 4 black peppercorns
2 thin green chilli -slit
1/2 tsp chilli powder
a pinch of turmeric powder
1 cm size ginger piece-peeled
3 garlic cloves-peeled
1/2 tsp saunf seeds
1/2 tsp garam masala
few curry leaves
few coriander leaves
3/4 tsp salt
4 tsp refined oil
3/4 cup water

Directions:

1.Grind onions,grated coconut,peanuts,turmeric powder,ginger-garlic,saunf seeds,garam masala powder,salt,chilli powder and peppercorns into a coarse paste using mixer-grinder.keep it aside.
2.Transfer it into a microwave-safe bowl.Mix it with 2 tsp oil and microwave this on high for 1 min on high.
3.Cut the  bitter-gourds into 2 (not fully - leave little bottom intact) and rub 2 tsp oil over it and M/W this on
high for 2 mins.Stuff the step 1  ground masala inside.keep this aside.
4.Heat 2 tsp oil adding mustard seeds,chopped onions,chopped tomato,curry and coriander leaves in a microwave-safe bowl for 2 mins on high and take it out when done,mix and M/W this on high for a min more.
5.Now,clean the ground masala jar with 100ml cup water and add it to the step 3 bowl with the left-over ground masala (if any).M/W this on high for 2 mins.
6.Add the stuffed bitter-gourds,mix it ,M/W this on high for 3 mins and mix it once and M/W this on high for
another 2 mins or till water runs dry.
7.Serve this tasty stuffed buttergourd Masala with rice and sambar,curd rice etc or with Indian breads.

Tomato Gothsu(Gojju)

It can replace a routine of breakfast or Indian Bread sidedishes for a change or variety. Simple yet a delicious and mild accompaniment to Indian Breads.This is done by the Keralites (as I came to know abt this dish  from my Malayali Friend last year). Needs 20 mins cooking time for its arrival at the Dinning table.
This serves 4 nos.Enjoy cooking at home.Enjoy ur meal.Bon Appetit!.

Tomato Gosthu(Gojju) - Tomato-Onion Dhal Curry.

Ingredients:

3 medium-sized Tomatoes - chopped
15 small sambar onions -  peeled and cut into 2
3 green chillies  - slit lengthwise (Or U can add 2 greenchillies and 1/4 tsp chilli powder)
50 -70 gm yellow moongdal - pressure-cooked upto 3 whistles with turmeric powder and salt
1/2 tsp ginger and garlic paste
1/2 tsp cumin seeds
1 tsp jaggery - crushed or Sugar
3/4 tsp Salt or as needed
1/2 tsp mustard seeds
a sprig of Curry leaves
2 tsp gingely oil
1/2 or 1 tsp coconut Oil
1 tbsp coriander leaves - garnishing
1 tsp ghee

Directions:

1.Heat  refined oil in a kadai and splutter with mustard seeds,cumin seeds,small onions,curry leaves and green chillies and saute it for a  min or two.
2.Add ginger-garlic paste and saute for a min.Add chopped tomatoes and turmeric powder and stir-cook till tomatoes melt.
3.Add pressure-cooked moongdal,1 tsp or 1/2 coconut oil,salt and simmer it for 5 more mins.Add Jaggery and mix it well.
4.Sprinkle 1 tsp ghee(optional) and mix well.Garnish  with chopped coriander leaves on top and serve with dosa or idli.

Note:

Don't add boiled moong dal more than 1/2 or  3/4 electric rice cooker cup.This will spoil the taste of the dish.

Bhindhi(Ladiesfingers) Masala(a M/W Recipe)

Very tasty and ethnic Bhindhi Masala.This can be done in 12 mins M/W cooking time.Adjust the spices as per ur taste.This serves 4.This can pair-up with Steamed rice,Bread or Indian Breads.U can do potato,Brinjal,Green peas masala with this recipe substituting Bhibdhi.Enjoy cooking at home.Enjoy ur meal!.Bon Appetit!.


Ingredients

20 Bhindi(ladies fingers)- Cut into 1 1/2 inch size pieces
2 medium sized Tomatoes - Sliced
1 medium sized Onion- sliced
1/2 tsp salt
2 tsp + 2 tsp refined oil
3/4 tsp Subji Masala or (1/2 tsp chilli powder + 1/4 tsp cumin powder)
a pinch of turmeric powder
1/2 tsp crushed jaggery or 1/2 tsp sugar
1/2 tsp cumin seeds
1/2 tsp mustard seeds
few curry  and coriander leaves
3/4 cup water

Directions

1.Take a microwave safe-bowl and add refined oil,and ladiesfinger pieces with a pinch of salt.Microwave this on high for 2 mins.Take it out and transform it into another bowl
2.Add 2 tsp oil and mustard seeds,Sliced onions,cumin seeds,few curry and coriander leaves to the empty step 1 bowl.Microwave this on high for 2 mins.
3.Take the bowl out add tomato slices,subji masala,100 ml water and salt.Microwave this on high for 3-4 mins.
4.Add the step 1 ladies fingers,50 ml water and mix well.Microwave this for 2 mins.
5.Add 1/2 tsp crushed jaggery or sugar and Microwave this on medium high for 2 mins.
6.Serve this Bhindhi Masala with Steamed Rice or Bread and Indian Breads.

Dhal Palak (Lentil Spinach Curry)

Dhal Palak(Lentils Spinach Curry) is a well-known dhal curry of North India.Spinach is rich in Iron and good  for anemic patients.So good for growing kids as this curry is rich in protein and  Iron.This gravy is done within 20 mins and can accompany Steamed rice as well as all Indian Breads.This serves 4.Enjoy ur meal!.Bon Appetit!.

Dhal Palak:

Ingredients:
70 gms Toordhal - washed well
1 bunch spinach - chopped fine
1 small onion - sliced
1 big tomato-chopped
1/2 tsp cumin seeds
a pinch turmeric powder
1/4 tsp asafoetida powder
3 green chillies - slit lengthwise
3 garlic pearls-peeled
1 tsp salt or salt to taste
3 whole red chillies
few curry leaves and coriander leaves
1/2 tsp mustard seeds
2 tsp refined oil + 1 tsp coconut oil
1 tsp ghee
500 ml water

Directions
1.Take a pressure-cooker,add the cleaned toordhal,turmeric powder,asafoetida powder,1/2 tsp cumin seeds and few coriander leaves.
2.Measure 300 ml water and add it to the dhal.Mix them well and Pressure cook it upto 7 whistles.Leave it aside.
3.Then,take a kadai and add both the oils,Splutter mustard seeds,cumin seeds,chopped garlic,onion slices,red chillies and curry leaves for two mins.
4.Add chopped tomatoes,green chillies and salt and saute it till tomato begins to melt(adding salt will speediate the melting of tomatoes).
5.Add the chopped spinach and saute it for a second.
6.Add the done dhal with coriander leaves and cover and cook for 5 mins.Let it boil for 2 mins.
7.Sprinkle ghee on top and garnish with coriander leaves.
7.Now the tasty Dhal Palak is ready to be served with Steamed rice or Indian Breads.

Grilled Healthy Green Kebab

The word Kebab is derived from the Arabic word 'Kebabu' meaning 'to burn or char'.Kebab includes 'grilled, roasted and stewed dishes of large or small cuts of meat or even ground meat'.It may be served on plates,in sandwiches or in bowls.It may be beef,goat,chicken,pork,fish,tuna or even vegetarian foods like falafel or tofu.The kebab has become part of everyday cuisine in many countries around the globe. U can do it well without step 2 and step3 but the taste definitely increases with 2-3 mins doing of the ground masala with spices.This is a Healthy Veg Kebab,  rich in proteins,which the growing kids most need.It can accompany main dishes or served as teatime snack or a meal anytime with Ketch up and French Fries.Enjoy ur Evening snack.Bon Appetit!.

Grilled Healthy Green Kebab

Ingredients:

50 gm sprouted Green Moongdal
1/2 cup soaked white Chick peas
1/2 cup oats
1/2 cup American sweet corn kernels
1/2 cup finely chopped spinach
1 tsp ginger garlic paste
1 tsp subji or mutton masala
1 tsp cornflour
1/2 tsp garam masala
1/2 tsp or needed
few chopped coriander and mint leaves
2 tbsp refined oil - for brushing

Directions:

1.Pulse the first 4 ingredients 2 times with oats without adding water coarsely.
2.Heat 2 tsp oil in a pan and add the ground ginger-garlic paste and saute it for 2 mins.
3.Add the pulsed green moongdal and corn mixture,subji or mutton masala and salt.Stir it for a min and add chopped spinach,chopped coriander and mint leaves.Saute it for 2-3 mins.
4.Add corn flour and mix it well for binding.Turn off the flame.
5.Knead it into a dough when cool and do into kebabs of ur desired shapes
6.Brush oil on the grill toaster and grill the kebab till it turns light brown on both sides brushing oil on on the
sides.(Two mins/side  first time and 1 min/side the second time).
7.Serve this Kebab hot with ketch-up.

Capsicum-Spring Onion Masala

This Capsicum Spring Onion Masala is done with a specially ground masala - a variant of kadai Masala.Very easy to do and needs 15 mins cooking time really.U can try this recipe with Fried Paneer,Fried Cauliflower florets, fried Soya Chunks or Boiled,chopped Egg pieces,Fried Brinjal pieces,fried Ladiesfingers or fried sausages.Ur family will relish the taste of it.It should be served hott with Indian Breads or Bread slices or Fried Rice.Enjoy cooking the same.Bon Appetit!.

Capsicum-Spring Onion Masala


Ingredients:

1 green capsicum - cut into 1 inch cubes
6 spring onion(onion part) - cut into halves
1 tsp coriander powder
1/4 tsp cumin powder
1 tsp kashmiri red chilli powder
1/2 tsp chilli flakes
4-5 pepper corns
1/4 tsp garam masala powder
1 cm size ginger
2 garlic cloves
1 big tomato - chopped
1 medium sized onion -chopped
2 tsp lemon juice
2 tbsp chopped coriander leaves
3/4 tsp salt
1 tbsp refined oil

Directions:

1.Dry saute coriander powder,Jeera powder and kashmiri red chilli powder for 20 secs and turn off the flame.
2.Add 1 tsp oil and saute the onion for 2 mins and add tomato with 1/4 tsp salt and saute it till tomato begins to melt.Turn off the flame.
3.When it is warm,grind it with garlic,ginger,pepper corns,sauteed Onion and Tomato,coriander and red chilli powders.Last add red chilli flakes and pulse it once .
4.Heat  2 tsp oil in a kadai,and saute spring onion pieces and capsicum pieces for 2 mins.
5.Add the ground masala with 1/4 tsp garam masala and salt and bring it to boil till oil separates on top for 8-10 mins on medium-flame.
6.Sprinkle lemon juice and turn off the flame.
7.Serve it hot with Indian Breads or Bread or Fried Rice.

Channa Masala in Chinese Sauce

Yesterday I did this Channa Masala for Chapati in Chinese style- with a little twist in its original preparation and it tasted awesome.Try this recipe at home and see how some untouchable Curry or Masala can be made a great success or ur family's favourite with a little twist in its preparation.U can try this recipe with Soy granules,Meat balls,Fried Paneer,boiled Green Peas,Capsicum,fried Mushrooms,fried Cauliflower(dipped in corn flour coating), Brinjal,Sprouted Green Moongdal,boiled Tapioca,fried or Ladies-fingers,boiled or fried Yam and Chopped Egg whites.U can replace the Channa masala with Subji Masala or any mutton or chicken masala(which suits ur taste) in this recipe and try the same.This needs little more than 15 mins cooking time.Enjoy ur Cooking at home!.Bon Appetit!.

Channa Masala in Chinese Sauce
Ingredients:
    60 gms white Chickpeas -soaked for 3 hours and 3/4th cooked with required water(upto 3 whistles)
    1/2 cup finely chopped onions
    3 tbsp tomato garlic sauce or tomato sauce
    1 tsp Soy Sauce
    1 garlic clove - chopped finely
    1 cm size grated ginger piece
    1/2 tsp fennel seeds
    1 tsp channa masala powder
    3/4 tsp salt
    1 tsp crushed jaggery or sugar
    1/2 tsp lemon juice
    1 tbsp refined oil
    few coriander leaves
    100 ml water

Directions:
    1.Heat oil in a non-stick pan,saute the chopped garlic,ginger and saunf(this add a fine flavor to the dish), chopped onions(take 2 tbsp of onions and keep it away) and then tomato Garlic sauce and saute for 2 mins.
    3.Add channamasala powder and Soy sauce.Stir-cook for 2 mins.
    4.Add 100ml water,3/4th cooked chickpeas and needed salt and cook for 3-4 mins till it becomes semi-dry or till oil separates on top.
    5.Add the crushed jaggery or sugar and stir it for 30 secs.Turn off the flame.
    6. Garnish with chopped coriander and sprinkle lemon juice and chopped onions on top.
    7.Serve it hot with Bread or Indian Breads or Curd Rice or Plain rice.

Note:
U can add 50 ml coconut milk powder(2 tsp) dissolved lukewarm water or 1/2 tsp corn flour dissolved lukewarm water in Step 5 to improve the thickness and quantity of the Gravy.

Dhal Fry (using Microwave)

'Dhal Fry' is a well known dish in India esp it best- accompanies Steamed Rice or Chapati or Roti.This tasty Dhal Curry can be done Using Microwave Cooking very easily which most of us don't try.Try this at home and Enjoy Easy Cooking at home.Bon Appetit!.

Dhal Fry (using Microwave) - Simple Dhal Curry that accompanies Chapati or Roti


Ingredients:
100 gm Toordhal - washed well
1 small sized onion - half sliced and half chopped fine
1 tomato-chopped
1/4 tsp cumin seeds
a pinch turmeric powder
1/4 tsp asafoetida powder
2 green chilli-slit legthwise
5 garlic pearls-peeled - optional
1 tsp salt or salt to taste
3 whole red chillies
few curry leaves and coriander leaves
1/2 tsp mustard seeds
2 tsp refined oil + 1 tsp coconut oil
2 tsp ghee
700 ml water

Directions
1.Take a microwave-safe bowl,add cleaned toordhal,sliced onion,chopped tomato,turmeric powder,asafoetida powder,green chillies,1/4 tsp cumin seeds,few coriander leaves and garlic pearls.
2.Measure 700 ml water and add it to the bowl.Mix them well and microwave them on high for 25 mins - keeping it covered.(mix it once after 15th min)
3.Take another bowl,add 2 tsp refined oil + 1 tsp coconut oil,chopped onions,mustard seeds,remaining (1/2 tsp) cumin seeds,whole red chillies and curry leaves.Microwave this on high for 2 mins.Take the bowl out and add the seasoning(tadka) to the step 2 dhal gravy bowl.Mix Dhal  well.
4.Sprinkle ghee on top and garnish with coriander leaves.M/W this on high for 2 mins.Take it out after a min.
5.Now this tasty Dhal Fry is ready to be served with Steamed rice,Bread slices and Indian Breads.

Raw Banana Green Fry

Yet Another Easy - do RawBanana  fry with green coriander masala shallow-fried with spices.This dish can be done in 5 mins time and its a tasty green masala fry to have it alone or with Steamed Rice and Dal Curry. This can also be served as a starter in Parties. U can do the same with sliced onions,Brinjal slices,Yam pieces,Potato slices,Sliced mushrooms,bread pieces. Raw Banana Green Fry - Raw Banana Pieces fried with coriander leaves and spices
Ingredients:
1 raw banana - cut into round pieces
1 tbsp refined oil
a pinch of turmeric powder
one handful chopped coriander leaves
1 green chilli
a pinch of cumin seeds
1 cm pieces Ginger piece
1 tsp lemon juice-optional
1/2 tsp corn flour-optional
1/2 tsp salt or needed salt

Directions:
1.Grind  chopped coriander leaves,green chilli,a pinch of turmeric powder,cumin seeds,1 cm ginger piece and salt into a smooth paste adding lemon juice(optional) and 1/2 tsp corn flour -optional.
2.Peel the raw banana skin and slice into round pieces.Apply this green masala on raw banana pieces and keep it aside.
3.Heat 1 tbsp oil in a tawa or Grill Toaster and shallow fry the raw banana pieces both sides,till golden brown.
4.Serve it with Rice and sambar or alone with tomato ketchup.

Ingredients:

1 big potato - cut into 2 cm size
1 big carrot - Cut into 1 cm size
1 big onion - sliced lengthwise
1 small size tomato-sliced or 1/2 big tomato-sliced -optional
1/4 tsp grated ginger
2 green chillies - slit lengthwise
a pinch of turmeric powder
1/2 tsp mustard seeds
2 tsp split chanadal(kadalai paruppu)
1/4 tsp subji masala powder
1 sprig curry leaves
few coriander leaves
200 ml water
1 tsp salt or needed as per taste

Directions

1.Pressure cook potatoes upto 4 whistles with water covering the potatoes.Leave this for sometime to release the pressure.Peel off the skin and cut into cubes.
2.Heat oil in a kadai.Add mustard seeds,split chanadal and curry leaves.
3.Add slit green chillies and onion slices.Saute till this turns little brown.
4.Then add tomato slices and saute this till tomato begins to melt.
5.Add the carrot pieces and 150 ml water cover and cook for 10 mins.Add the boiled potato pieces together with turmeric powder,subji masala powder and salt.Let this cook for a minute.
6.Add 50 ml water and chopped coriander leaves.Mix this well.Cook for 3-4 mins till thickens.
7.Potato - Carrot Masala is ready to accompany main meals now.

French Fries Veg Salad in Garlic Sauce

If U buy in KFC, U get loads of French Fries which most of us keep it untouched.U can do salad with it -the best side dish for Chapati or any non-veg dishes or U can have it alone.It can accompany Biryani,pulao or fried rices like raita.Very tasty tea time salad for the kids.Best done with french fries or shallow-fried potato pieces with other Veg and garlic sauce. French Fries Veg Salad in Garlic Sauce - Salad Made with French Fries and Vegin Garlic Sauce


Ingredients

    3 tbsp Garlic Sauce
    1/2 carrot -cut into 1 cm cubes
    15 nos French Fries(potato Fries)-cut into bite size cubes
    4 french beans - cut into 1 cm size
    2 tbsp Cucumber-finely chopped
    1 green chilli - slit
    1/2 tsp white pepper powder
    a pinch of salt or needed
    2 tsp chopped coriander leaves
    2 tsp coconut oil
    1 tbsp crushed cashew nuts

For the Lebanese Garlic sauce:

Ingredients:
4 Garlic pearls
2 egg whites
80 ml refined oil
2 tsp lemon juice
salt to taste

Directions:
    1.Chop the French Fries into bite size cubes.Keep this aside.
    2.Heat 2 tsp coconut oil and stir -fry Carrot and french beans with a pinch of salt.
    3.Take a bowl and add the chopped french fries and half-done carrot and french beans.Mix this well and
microwave this on medium high for a min.
    4.Take another bowl and add 3 tbsp Garlic sauce,chopped coriander leaves,green chilli,1/4 tsp white pepper  powder and a pinch of salt .Mix this well .
    5.Add  the microwaved-veg bowl mix to this and mix well.
    6.Add the crushed cashews and chopped cucumber.Mix this well.Check for salt.
    7.Serve this immediately.

For the garlic sauce:
1.Press the garlic with Garlic-press and mix it with Lemon juice.
2.Add this to the Mixer Grinder jar with 2 egg whites and a pinch of salt and pulse it 2 -3 times.
3.Add the refined oil or vegetable little by little and kep on pulsing it 8-9 times till it becomes creamy and thick.

Sesame Chutney

This Very tasty Chutney can be done in few mins - when u have no grated coconut or other options left to prepare chutney for Idli and Dosa.This will taste like tomato-Onion Chutney and try this once to taste it truly good.This serves 3-4 nos.Enjoy ur Breakfast or Dinner with this Chutney.

Sesame Chutney -Chutney done with White Sesame Seeds

Ingredients

40 gms white sesame seeds
2 tbsp skinless Urad dhal
a gooseberry size tamarind
2-3 red chillies
1 garlic pearl + 1 sambar onion
3 sambar onions - chopped fine
1/2 tsp salt
1/4 tsp mustard seeds
2 tsp refined oil
few curryleaves
few coriander leaves -for garnishing

Directions:

1.Dry roast white sesame seeds and uraddhal for a min or 2 in low flame till nice smell start to rise and turn off the flame before it begins to change colour.
2.Allow it to cool for sometime before and grind it with tamarind,redchillies,garlic pearl,one sambar onion and salt.
3.Heat oil in a frying pan.Splutter mustard seeds.
4.Add chopped onions,fry till little brown with curry leaves.
5.Add this seasoning to the ground chutney.
6.Serve this with Idli or Dosa.

Idli- Milagai podi(Chilli Powder)

This Idli Mizhagai Podi is a helpful substitute for chutney-(when u r not able to prepare chutney for Idli or Dosa).U can also do Chilli powder Dosa with it.U can pack Idli- Milagai podi(Chilli Powder) for long travels.This can be taken with gingely oil or ghee - mix it with or alone. A tasty Idli Chilli powder recipe (of our family) is given here to try at home.Keralites sometimes add dry- roasted grated coconut or dessicated coconut to ( after making a)  the fine powder of  the below ingredients and grind it coarsely to call it Chilli-Chutney powder.Enjoy Idli with Idly Chilli powder.


Ingredients
100 gm Urad dhal(skinless)
6-7 lengthy red chillies (add 1 red chilli more -if u need it chilly)
3 tbsp skinless peanuts-roasted(optional)
3 garlic pearls
1/4 tsp asafoetida powder
5-6 curry leaves-sauted in 1 tsp oil
1/2 tsp salt - to taste

Directions

    1.Dry-roast uraddal on medium flame.After 2 mins,add red chillies and saute for 3 more mins.Allow this to cool.
    2.Grind the dry-roasted uraddal with other ingredients in a mixer-grinder and store this in a container.
    3.It will be helpful those days u r unable to do chutney for Idli or Dosa.

Note:
U can saute the curry leaves and garlic pods together in 1/2 tsp oil till they turn crispLlet it cool.Add both to the done Idli-chilli powder and grind them using mixer-grinder till they r powdered.U should take this with Idly alongwith gingely oil or ghee (add 2 tsp gingely oil or ghee  to 1 tsp Idli-chilli powder).

Soya Masala

Soya Masala - Soya Granules done with tomato and spices
Ingredients:
50 gms Soya granules-soaked for 2 mins in lukewarm water and squeezed to drain excess water
1 medium sized tomato -chopped  fine
a pinch of turmeric powder
1/2 tsp Subji or Chole masala
1 tsp fresh ginger-garlic paste
1/4 tsp maze powder
1/2 tsp garam masala powder
1/2 tsp mustard seeds
few chopped coriander leaves
1 onion -chopped fine
3/4 tsp salt or to taste
2 tbsp chopped onion
2 tsp refined oil

Directions:
1.Heat oil in a non-stick kadai,splutter mustard seeds,chopped onions and coriander leaves.
2.Add ginger-garlic paste,tomato pieces,soya granules and salt.Saute this for 2-3 mins till the rawness of Ginger-garlic paste diminishes.
3.Add turmeric powder,maze powder,subji or chole masala and garam masala powder.Add 100 ml water and stir-cook till it becomes dry.Garnish with chopped onion.
4.That's all!.It can accompany ur family's all meals.

Capsicum-Mushroom Masala - Capsicum and Mushroom pieces cooked with choicest spices

Ingredients:
1 Capsicum - chopped into 1 cm pieces
50 gms Mushrooms - chopped
a pinch of turmeric powder
1/2 tsp subji masala
1/2 tsp fresh ginger-garlic masala(optional)
1/4 tsp chilli powder
1/4 tsp garam masala(optional)
1/2 tsp mustard seeds
few chopped curry leaves and coriander leaves
1 onion -chopped fine
3/4 tsp salt or to taste
2 tsp refined oil

Directions:
1.Heat oil in a non-stick kadai,splutter mustard seeds,chopped onions,curry leaves and coriander leaves.
2.Add ginger-garlic paste,capsicum pieces,mushroom pieces and salt.Saute this for 2-3 mins till the rawness of ginger-garlic diminishes.
3.Add turmeric powder,chilli powder,subji powder and garam masala.Add 50 ml water and stir-cook till it becomes dry.

Channa Masala in Peanut Spicy Sauce

Channa Masala in peanut Spicy Sauce

Ingredients

    60 gms white Chickpeas -soaked for 2 hours and 3/4th cooked with required water(upto 3 whistles)
    1/2 cup finely chopped onions
    1/2 cup finely chopped tomatoes
    2 tbsp roasted and peeled peanuts(groundnuts)
    1 garlic clove
    1 cm size ginger piece
    1/2 tsp fennel seeds
    1 tsp channa masala powder
    3/4 tsp salt
    1 tsp crushed jaggery or sugar
    1/2 tsp lemon juice
    1 tbsp refined oil
    few coriander leaves
    3/4 cup water

Directions

    1.Grind the roasted peanuts,ginger,garlic and saunf seeds together in a mixer-grinder.keep this aside.
    2.Heat oil in a non-stick pan,saute the chopped onions and chopped tomatoes for 2 mins.
    3.Add the ground peanut masala and channa masala powder.Stir-cook for 3-4 mins.
    4.Add 3/4 cup of water,3/4th cooked chickpeas and needed salt and cook for 6-8 mins till it becomes semi-dry or till oil separates on top.
    5.Add the crushed jaggery or sugar and stir it for 20 secs.Turn off the flame.
    6. Garnish with chopped coriander and sprinkle lemon juice.
    7.Serve it hot with Bread or Indian Breads or Curd Rice or Plain rice .

Carrot Moongdal StirFry - A Microwave Recipe

Today I made this stir-fry and I found very little left in the end to take a click.This Carrot Stir-Fry is a popular side-dish of South India(Carrot Paruppu Usili-a Variation).U need 15 mins microwave cooking-time to prepare this dish. This less-spiced side-dish can pair up with rice and sambar or Puzhikuzhambu or Kara Kuzhambu or Korma or rasam since moongdal has been added.Try to add ur feedback after trying this dish at home.Bon Appetit!.
 
Carrot Moongdal StirFry - A Microwave Recipe - Carrot stir fried with Moongdal and spices

Ingredients

    1  Carrot-big -chopped fine
    1/2 cup finely chopped onions
    1 small green chilli-chopped fine
    1 handful yellow moongdal(split)-payatham paruppu (soaked for an hour and 3/4th cooked using M/W Oven,U can M/W this on high for 6 mins with 100ml water and a pinch of salt)
    1/2 tsp mustard seeds
    1/2 tsp split urad dhal-uzhunthu
    2 tbsp grated coconut - optional
    3/4 tsp or salt to taste
    100ml water
    few curry leaves
    few coriander leaves
    1 tsp refined oil + 1 tsp coconut oil

Directions
    1.Take a microwave safe bowl and add both the oils,chopped onions,mustard seeds,split urad dhal  and curry leaves.
    2.Microwave this on high for a min.Take the bowl out.
    3.Add all the other ingredients except grated coconut including 3/4 cup water and Microwave(high) this for 6 mins.
    4.Take the bowl out after 6 mins and mix grated coconut with the mixture well.
    5.Again microwave this on high for 2 more mins or till water runs dry.
    6.Take the bowl out and Serve this Carrot Stir-fry hot with rice and sambar or Korma or Rasam.
