This Soup, is a colourful and healthy mix that can be easily made at home to be a part of a Filling Meal. Homemade Soups are hygenic and nutritiously delicious.U can adjust few calories or spices if U prepare it at home.This Yellow Pumpkin Soup is done in 15 mins and serves 4 nos. U can have it Anytime. Red Pumpkin Soup:
Ingredients:
250 gms Red Pumpkin - peeled n grated
2 tsp butter
1 bay leaf
1 garlic -finely crushed
a pinch of grated ginger - optional
6 - 8 blaclk peppercorns
1 medium sized onion -sliced fine
1/4 tsp salt
1 tsp white pepper powder
1/2 tsp lemon juice
1/4 tsp dried mixed herbs
2 tsp fresh cream
Directions:
1.Heat butter in a pressure pan.Add bay leaf,pepper corns,pressed garlic,grated ginger and onions.Saute this for 2-3 mins on medium flame.
2.Add grated pumpkin and saute for a min or 2.
3.Add 500 ml water and pressure-cook upto 1 whistle.Wait 10 mins for the pressure to be released.
4.Train and collect the stock, remove the bay leaf and puree the pumpkin reserves.
5.Strain the puree again and add the stock with 250 ml water and bring it to boil for 2 mins adding white pepper powder,salt and lemon juice.
6.When it boils add 2 tsp fresh cream ,mix it well and turn off the flame.
7.Serve it hot garnished with a pinch of dried herbs or 1 tsp fresh cream on top.That's All!.
