This recipe serves U not the original Chinese 'H n S Noodles Soup' but an Indo-Chinese 'Hot n Sour Chicken Noodles Soup' using fresh South Indian traditional Milagu Thani Chicken Soup for stock(done with 100 gm Chicken pieces with 1/2 tsp salt,1/2 tsp turmeric powder,5-6 ground pepper corns,3 crushed garlic flakes, crushed 1 inch ginger piece and 1100ml water and Cook this in Pressure pan upto 4 whistle.Strain this to get Indian Chicken Stock. Hot and Sour Chicken Noodles Soup
Ingredients:
1 cup done noodles(broken well before cooking)
1 stick Lemon grass - tender inner parts only - finely chopped
2 tsp lemon juice
2 tsp soy sauce
2 tsp chili sauce
2 tsp corn flour mixed with 1 tbsp water
50 gm boiled Chicken pieces-shredded
1 tsp white pepper powder
2 tsp Olive oil
5 small Spring onions- cut finely
finely chopped 1 cm piece Ginger
finely chopped 2 garlic flakes
2 tsp grated carrots
2 tsp grated cabbage
2 tsp Coriander leaves-finely chopped
2 tsp finely chopped Capsicum
2 sticks of Celery-thinly chopped
1 tsp salt - or to taste
1 tsp sugar
1 tsp butter
For 1 ltr chicken (Soup or) stock:
150 gm Chicken pieces
1/2 tsp salt
1/4 tsp turmeric powder
5-6 ground pepper corns
3 crushed garlic flakes
crushed 1 inch ginger piece
1100ml water
Directions:
1.Heat olive oil and butter in a saucepan,add the chopped garlic,chopped ginger and half the spring onion pieces (the onion part).Saute this till (spring) onion becomes tender.
2.Add the grated carrot,grated cabbage,boiled and shredded chicken strips. Add Soy sauce and chilli sauce and stir-fry until it changes color.
3.Add the powdered pepper corns,the other-half spring onion leaves, chopped celery,chopped lemon grass,chopped capsicum and saute for 2-3 mins.
4.Add the done noodles and half coriander leaves.
5.Add the chicken stock(or soup) and bring to the boil and simmer for 10 mins.
6.Add salt and sugar to taste.Mix well for 1 min.
7.Add the diluted corn flour mixture and stir until it turns thick.
8.Add the remaining chopped spring onion leaves and the remaining chopped coriander leaves.
9.Add the lemon juice,mix well and turn off the flame.
10.Serve this Hot and Sour Chicken Noodles Soup topped with Herbed Croutons.
