Healthy Carrot Ginger Soup - Soup done with Carrot and all medicinal spices like ginger,pepper,ajwain,honey and basil leaves.
Ingredients:
150 gm or medium sized carrot - peeled and grated
1 tsp grated ginger
3 black pepper corns
1/4 inch cinnamon stick-little crushed
1 bay leaf-crushed
1/4 tsp corn flour
2 tsp honey
1 tsp oil or butter
1 cm size ginger
1 garlic flake - finely chopped
a pinch of salt - to taste
1 clove-crushed
1 soup stick or 2 - 4 toasted croutons-for serving
few mint leaves - for garnishing
a pinch of ajwain -powdered or 2 basil leaves-optional
200ml water
1 tbsp fresh cream(optional)-for garnishing.
Directions
1.Take a blender and blend the peeled and grated carrot with ginger piece and black pepper corns,adding 1 cup (200ml) water to the residue and pulse it 3-4 times using a blender and strain the mixture..
2.Heat butter and oil in a non-stick sauce-pan and add bay leaves,finely chopped garlic flakes,grated ginger then the cinnamon stick,cloves,pinch of ajwain powder or 2 basil leaves for about 2-3 mins.
3.Add the strained soup in the pan,add salt,honey,corn flour-dissolved in hot water and make this boil for 5 mins till it thickens.
4.Strain it and Pour it into a soup bowl and top it with fresh cream(optional) and serve this hot with toasted croutons and mint or bay leaf on top.Have a great Day.Enjoy ur Meal!.BonAppetit!.
