Today Raw Papaya Soup has been served fresh as Healthy Recipe of the Day -a warming and healthy Soup to kick-start a hectic Day. Ripe papaya is eaten fresh- after taking out the skin and the seeds.The raw Papaya that is not fully ripe or raw - can be used in this Soup preparation.This is extremely good for health - a rich source of Iron,Calcium and Vitamins and minerals.Enjoy Cooking at home.Enjoy Ur meal!. Healthy Papaya Soup
Ingredients
2 tsp olive oil or butter
2 shallots (diced)
1 tsp celery
1 clove garlic (chopped)
1 cm ginger - crushed
2 cups Veg(or chicken)stock or water
2 cups papaya puree (that of 200 gms raw papaya)
a pinch of sage
2 bay leaves
salt and fresh pepper powder(or white pepper powder)to taste
Directions
1.Heat the Olive oil or butter in a large sauce pan.
2.Add bay leaves,shallots and celery and saute till it gets tender,for 3 mins.
3.Add the crushed ginger and chopped garlic and saute for a minute.
4.Add the papaya puree and sage and saute for 2-3 mins-till it begins to boil.
5.Add the Veg stock(or chicken stock) or plain lukewarm water and allow this to boil for 5 mins.
6.Season with salt and pepper,reduce the heat and simmer for about 5 more mins.Allow it to cool.
7.Remove bay leaves and crushed ginger and blend the soup.Strain it if U want to or serve as such.
8.Serve it garnished with toasted croutons and a pinch of pepper and cinnamon powder in soup bowls.
Tips:
U can add Egg White in Step 6 and have as such - without straining it..
