Egg Raita

We all know that boiled Egg slices can pair up with Biryani along with raita as the simple n Easy taste-match.This recipe states a raita done with Egg slices- served an yumm-accompaniment to rich Pulao and Biryani varieties. I tasted it in my relation's house this month and luv to share that recipe here.U can try this recipe with Sliced Egg or make slits on Eggs(without slicing it). Hope U will try it at home and enjoy a tasty feast this weekend. Needs just over 12 mins and  2 boiled Eggs can serve 4 nos.Enjoy Easy n Tasty recipes at home!.Enjoy ur Meal!.BonAppetit!.

Egg Raita
Ingredients
2 hard-boiled Eggs - deshell n slice
200 ml yoghurt
1 tsp mayonnaise
4-5 Palak leaves - chopped finely
1 garlic pearl - thinly sliced
1 onion - thinly sliced
a pinch of jeera
1 -2 green chillies
1 tbsp grated carrot
few curry n coriander leaves
2 tsp tomato sauce
1/2 tsp white pepper powder(optional)
a pinch of salt
1/4 tsp oil
Directions:
1.Heat oil and saute garlic slices and add palak, jeera and salt.Saute it for 3 mins.
2.Beat mayo with yoghurt and then mix it with grated carrot,sliced onion,green chilli slices,Palak mixture,curry
and coriander leaves
3. Check for salt.Arrange this raita on the serving plate.
4.At the time of serving, spread Egg slices over it with tomato ketchup on it and sprinkle a pinch of pepper n salt over it(optional).
5.This goes well with Biryani,Pulao and Chapati.

Chilli Egg Masala - Chinese

Thus done Chinese Chilli Egg Masala is so delicious and Easy-made. This needs 15 mins Cooking time and serves 4 nos. This is my adapted and easy-to-do version of Chinese Style Egg Masala.U can also use 1 tsp Aachi Chilli chicken Masala mixed with 2 tsp yoghurt instead of chilli powder for a flavored Egg preparation. This goes well with any Variety Rice or Fried Rice or Pulao or Biryani or Indian Breads. Try this Egg Masala at home for a tasty variation!. Enjoy Easy Cooking at home!. Enjoy Ur Meal!. BonAppetit!

Chilli Egg Masala
Ingredients:
3 - 4 Eggs  - Cut slits on the sides
1 medium sized Onion - Chopped fine
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp garam masala powder
1 tsp ginger-garlic paste
1 1/2 tsp soy sauce
1 tbsp tomato puree
2 tsp corn flour
1/2 tsp salt - to taste
few capsicum slices
2 tbsp finely chopped spring onions
oil - for shallow-frying and 2 tsp oil
few coriander leaves

Directions:
1.Boil Eggs for 8 mins.Allow it to cool n de-shell it.Make slits on the sides.
2. Make a paste of corn flour,turmeric powder,chilli powder, garam masala.ginger-garlic paste and 1/4 tsp salt.Rub it over the Eggs and Keep the remaining spices paste aside.
3.Shallow-fry the Eggs heating 1 tbsp oil a non-stick Tawa till its done golden brown on both sides.Keep it aside.
4.Heat oil in a Tawa,stir-fry onion slices with pressed garlic,capsicum slices for 2 mins on medium flame.
5.Add tomato puree and remaining masala paste.Stir it for a min .
6.Add Soy sauce and stir it well for a min.
7.Add shallow-fried Eggs,spring onions and coriander leaves. Mix it well.Turn off the flame after a min or 2.
8.Serve it hot with any Variety Rice or Biryani,Fried Rice,Pulao or Indian Breads.

Egg Pakora

U might have heard of boiled Egg Pakora which needs 10 mins extra time to finish the snack and thus done boiled Yolk pieces almost get wasted in the process.Try this Scrambled Egg Pakora (needs less time) for a change.It can serve U a good and perfect teatime snack quickly.Very tasty and kids will love it.U need 10 mins time in the kitchen and this serves 4 nos.Try this recipe at home and Enjoy delish Egg Pakoras this Teatime.Yummy!.

Egg Pakora:
Ingredients:
2 Eggs - scrambled with 1 tsp oil.
3/4 cup aachi bajji bonda mix
1/5 tsp of chilli powder
1/3 cup water
2 cloves of garlic - crushed
1 tsp chopped coriander leaves
3 curry leaves - chopped
1 tbsp butter - optional
a pinch of salt
a pinch of maze powder
200 ml oil - for deep frying

Directions:
1.Mix Aachi bonda/bajji mix with garlic cloves,Butter, a pinch of maze powder,salt,chilli powder, curry and
coriander leaves and needed water.Mix well so that no lumps should form.The batter should be very thick .
2.Add the scrambled eggs to the gramflour batter and Mix well.Arrange the gramflour batter in shapeless pieces.
3.Heat oil in a kadai and  deep-fry the packoras till it turns golden brown.
4.Serve it hot with tomato ketchup or coconut chutney.
Microwave Recipe of the same:
After doing step1 and 2
3.Arrange the gramflour batter in shapeless pieces with few drops of oil sprinkled on top over a MicroWave-safe tray.Similarly make all the pakoras.
4.M/Wave this on high for 3 mins.Take the tray out.Flip the pakoras and sprinkle few drops of oil on top.M/wave this on Medium High for 4-6 mins.(Times may vary by 1-2 mins.Check Ur Oven Manual before rushing to the kitchen).Take this out.
5.Serve it hot with tomato ketchup or coconut chutney.

Egg Moglai Gravy

A rich and very tasty home of Egg preparation is given here to try on special occassions.A typical Moglai recipe  which ur family will enjoy having it for Dinner with Bread or Indian Breads.Enjoy Cooking at home!. This can be done in 15 mins time and this serves 4 nos.U can do this dish with whole Eggs/Egg halves or with/without Kasur methi.Enjoy ur Meal!.Bon Appetit!

Egg Moglai Gravy - a Tasty home preparation Of  Mughalai or Moglai Egg Curry
 Ingredients:
    4 Eggs
    1/2 tsp red chilli powder
    a pinch of turmeric powder
    a pinch of coriander powder
    a pinch of nutmeg powder
    a pinch of maze powder
    1 onion - medium sized (sliced)
    1 tbsp chopped coriander leaves
    1 tbsp yoghurt(curd)
    1/2 tsp kasoori methi
    1/2 tsp garam masala
    lilltle more than 1/2 tsp salt - to taste
    250 ml water
    1 tbsp cooking oil(or butter)
     ground onion masala paste of 1 onion with 1/2 inch size ginger + `1 big clove of garlic + 1 tbsp yoghurt +               1/2 tsp garam masala
     ground tomato masala paste of  1 tomato (medium-sized) + 6-7 cashewnuts + 2 tsp poppy seeds(soaked for 20 mins)
Directions
    1.Hard boil the eggs for abt 8 - 10 mins,shell them and cut them into halves.Keep them aside
    2.Heat the oil in a pan and fry the onion slices till golden brown, then add ground onion masala and fry till
oil starts to leave the mixture.i.e upto 4-5 mins on good flame.
    3.Add the red chilli powder, turmeric powder, coriander powder,nutmeg powder and maze powder and saute it for 2 mins.
    4.Add the tomato paste with 250 ml water, then add curd, salt to taste and the chopped coriander leaves.
    5.sprinkle garam masala and saute well for a min.
    6.Add the eggs and mix it well till it is covered well in the masala.Don't turn it often.
    7.Cook for about 2-3 minutes and then add kasur methi and stir-cook without disturbing the Egg for a min or 2 more mins till done.(Otherwise U can add boiled eggs at the end when the gravy is done).
    8.Serve it hot with Steamed  rice or Bread or Indian Breads.

Potato Frittata

I happened to taste this Potato Frittata - a simple savoury breakfast recently and wished to share it with U all.It can be said as Potato and Egg Flan -  Quiche sort of.U can adjust the flavor by choosing your fav herb(s) for this simple frittata with Parmesan cheese.This serves 3-4 nos and needs about 15 mins cooking time.U can have it any time.Enjoy Cooking at home.BonAppetit!.

Potato Frittata - Potato and Egg Flan
Ingredients:
1 potato(3/4th boiled,peeled and chopped)
1 small onion - chopped fine - optional
2 dried cherry tomatoes - optional
2 tbsp butter or olive oil
6 eggs
2 tbsp freshly grated Parmesan cheese
a pinch of Salt
1 tsp white pepper powder- to taste
1/2 tsp minced fresh parsley leaves- for garnishing or any herb U like

Direction:
1.Preheat the oven to 350 degrees F.
2.Beat the eggs adding grated parmesan Cheese,salt, chopped boiled potatoes,2 tsp refined flour,50 ml milk,any herb - little only and stir them in to egg mixture using a hand mixer.
3.Then,add chopped onion,dried cherry tomato pieces,boiled and chopped potatoes and mix it well.
4.Place the butter or olive oil in a medium Oven-proof Non-stick skillet and cook undisturbed it in low flame for 2-3 mins till the bottom of the frittata becomes firm.
6.Shift the skillet to the oven. Bake for 20 mins - checking every 5 minutes after crossing the 10th min or till the top of the Frittata becomes firm.Leave it for 5-10 mins.
7. Garnish with chopped parsley or any herb u like and serve hot.

Egg Capsicum Stirfry

This tasty Egg-stirfry can be a perfect match for Chapati or bread slices or steamed or variety rices.U can try this recipe with boiled and coconut oil-sauteed potato pieces,spinach,bajji chillies,oil sauteed Mushrooms or grated carrot or chopped cauliflower instead of capsicum slices.The result will be awesome.

Egg Capsicum Stirfry(Poriyal)

Ingredients:

4 boiled eggs - Boil it for 8-10 mins on good flame.then de-shell and chop fine
1/2 capsicum - sliced fine
2 - 3 tbsp grated coconut
1/2 tsp ginger garlic paste
1 onion -sliced
1/2 mustard seeds
1/2 tsp Aachi or any good Mutton Masala
1/4 tsp salt
few curry and coriander leaves -chopped fine
1 or 2 green chillies or red chillies
2 tsp refined oil

Directions:

1.Heat oil in a non-stick kadai,splutter mustards seeds,onion,green or red chillies,ginger-garlic paste and curry leaves-adding one by one and stirring it till done for 3 mins atleast.
2.Add the capsicum slices and mutton masala powder and stir-fry for 2 mins.
3.Add the chopped egg pieces,grated coconut,chopped coriander leaves and salt.Mix it carefully (so that egg pieces not too much de-shaped) for a min.
4.Serve it hot with Steamed rice or Chapati or  bread slices or variety rices.

Egg Butter Masala

I got this recipe idea when I was tasting Dolma Mutton in a Tamil Muslim Restaurant in Dubai 10 days back.They have added  boiled and chopped Egg whites in that Mutton Gravy.It was said that U can prepare Butter Masala with not only with Vegs,Greens,Lentils(Dhal),Green Peas,Paneer,Tofu Paneer,Soya Chunks,Chick (White) Peas,Tinned Baked Beans,Peanuts,Cashew Nuts,.boneless chicken,Tinned Tuna and  Meatballs,fresh sausages and also with  boiled egg whites (chopped and marinated with  masala and then added to the butter masala gravy) or U can add the wholke egg(slit 3-4 times on the sides and try this recipe.Serve this butter masala hot with Bread slices or Indian Breads.This can be done quickly in 12-15 mins cooking time.I used green chilli masala paste .U can do it with red chilli powder instead.Enjoy Cooking at home!.Bon Appetit!.


Ingredients :
4 boiled Egg whites - cut into 1 cm pieces

For the Marinade:
1 tbsp yogurt
1/4 tsp green chilli paste
a pinch of salt to taste
1/4 tsp ginger paste
1/4 tsp lemon juice
1/4 tsp garlic paste
a pinch of garam masala powder

For Butter Masala Gravy:
 2-3 tbsp tomato puree
1 tbsp butter
1/2 tsp green chilli paste
1/4 tsp kasoori methi-(not more than 1/4 tsp)- optional
2 tbsp fresh cream
1/2 tsp ginger-garlic paste
1/2 tsp salt to taste
1/2 tsp garam masala powder
1 tsp sugar

Directions
1.Boil 4 eggs for 10 mins and de-shell it and take the whites .Cut the Egg whites into 1 cm pieces..
2.Hang the yogurt in a muslin cloth and squeeze tightly  to take off extra water.Grind greenchilli with 1/4 tsp kasur methi(optional).
3.Apply the marinade on the the pieces and marinate for 10mins.(U can saute this marinated egg pieces i 1 or 2 tsp butter for 2 mins and add it to the Gravy-but it is optional)
4.Heat 1 tbsp butter and saute the ginger-garlic paste.Add tomato puree,green chilli-kasur methi paste,garam
masala,salt and stir it for 2-3 mins
5.Add sugar and the marinated white pieces and mix well for 2-3 mins. Turn off the flame.
6.Add fresh cream and mix well.Serve it hot.

Ezy Egg Fry

Boiled Egg can be done in varieties.One of them is this Masala stir-fry. An easy dish to try at home .This needs ur attention for 12 mins only.If you don't like the taste of sambar powder,just add 1/2 tsp chilli powder or 3/4 mutton masala and with other mentioned spices.If u add mutton masala  powder,then add 2 tbsp coconut + cashews paste + a pinch of nutmeg powder to make this dish semi-dry.very tasty side dish to go with rice and Paruppu Kuzhambu. or yoghurt or chapatis.Enjoy ur Meal!.Bon Appetit!.

Ezy Egg Fry - Boiled egg pieces fried with spices

Ingredients:

5 nos Eggs (boiled,shells removed and cut into pieces)
1 big onion - finely chopped
1  tsp Aachi sambar powder
1 sprig curry leaves
1/2 tsp mustard seeds
few chopped coriander leaves
a pinch of turmeric powder
1/2 tsp lemon juice
1/4 tsp salt
1-2 tbsp refined oil

Directions:

1.Boil eggs for 8 mins and put them in cool water, remove the shells and cut into pieces.
2.Heat oil in a non-stick pan, add mustard seeds,curry leaves,chopped coriander leaves,chopped onions and
saute them for a min or two..
3.Add the chopped egg pieces,1 tsp sambar powder,a pinch of turmeric powder and 1/4 tsp salt and saute
carefully so that the egg pieces should not get sticky for 3 - 5 mins,adding 1 tsp oil 2 times in between.
4.Add 1/2 tsp lemon juice on top.Turn off the flame.
5.Serve hot with Rice or Curd rice.

Egg Omelette Curry

If u love to spend little more time for an egg curry  than going for a plain omelette, this one is an ideal option. If u r trying for an Egg Gravy and u have no- time left for trying the Boiled Egg or Kadai-dropped Curry- then also this one is an ideal option.U can save 7 mins cooking time since the Egg curry done with boiled or dropped egg curry requires more time.To even shorten the time u spend in the kitchen - u can try this curry with plain Omlette (than the one said in Step 1 and 2) done with beaten egg + a pinch of salt.This Omelette Curry (not only saves time but also an egg since it) serves 4. This very tasty omelette curry which needs 12 mins cooking time  and will go with rice,bread slices or Indian Breads.Bon Appetit!

Omelette Curry-Egg Omellete cooked with spices

Ingredients

    3 eggs,beaten
    2 onions, finely chopped
    2 tomatoes,finely chopped
    1 tsp ginger-garlic( freshly ground paste)
    1/2 tsp mustard seeds
    1 sprig curry leaves
    1 tbsp coconutmilk powder-dissolved in 100ml water
    2 green chillies, finely chopped
    1 tsp chilli powder
    1 tsp any subji or mutton masala powder
    1/2 tsp Saunf powder
    2 tbsp oil
    Salt to taste
    1 tsp coriander leaves, finely chopped

Directions

    1.Beat the eggs with green chillies, chopped onion(1 no), 3 curry leaves, little salt and little coriander leaves.
    2.Heat oil in a tawa,pour the beaten egg mixture. cover and cook for 2 minutes and turn the omelette and cook the other side till golden brown in colour.keep it aside. Wrap them with tissue paper so that excess oil is removed from the omlette.Cut them into 2 cm size pieces(10 pieces).
    3.Heat the rest of the oil in the same pan, fry the mustard seeds,curry leaves,the chopped onions,the chopped tomatoes,ginger-garlic paste and needed salt. cook till oil separates.
    4.Add the boiled water and other spices till the gravy thickens and oil separates.
    5.Then add the omelette pieces and cook for 2 more mins.
    6.Garnish with coriander leaves and serve hot with rice,bread slices or chapati.

Dropped Egg-Brinjal Curry - A Microwave Recipe

This Egg preparation is famous in my Husband's family.Whenever I think of doing dropped Egg Curry,I go for this dish.This recipe needs 20 mins of ur time only.Try this very tasty Brinjal-Egg Curry at home and Enjoy ur meal.This goes with Plain rice,Pulavs,Bread slices and Indian Breads.
  
Dropped Egg-Brinjal Curry - Curry made with eggs and brinjal pieces

 
Ingredients

    4 Eggs
    4-5 good Brinjals(small)- each cut into 4 pieces
    1 Onion - chopped
    1 Tomato- chopped
    2 Green chillies (slit lengthwise)
    1/2 tsp Cumin powder
    1/4 tsp turmeric powder
    1/2 tsp red chilli powder
    1/2 tsp coriander powder
    1 tsp ginger-garlic paste
    2 tbsp coconut paste (with 1 small onion and 5 Black pepper corns)
    2 cups water
    1/2 tsp cumin seeds
    1/2 tsp mustard seeds
    1/2 tsp fenugreek seeds
    few curry leaves
    1 tsp Salt to taste
    4 tsp of refined oil
    few Coriander leaves-chopped

Directions

    1.Take a microwave bowl,add 2 tsp of refined oil and Brinjal pieces.Microwave this for a min.Take the brinjal pieces and keep that aside.
    2.Add 2 tsp mustard seeds,fenugreek seeds,cumin seeds,Chopped onions,chopped tomatoes and curry
leaves.Microwave this on high for a min or 2.
    3.Take the bowl out and add all the other ingredients except eggs and a cup of water and mix this well. Microwave this on high for 7 mins.
    3.Take the bowl out, mix well and drop the eggs,one by one,removing shells.Microwave this on high for
at-least 10 -12 mins atleast covered.
    4.Garnish this Gravy with few Coriander leaves.Serve this with rice or Chapathi,etc.,.

Note:
U can try this recipe without M.Oven.Heat 2 tsp oil in a kadai and do the step1.Mix all the other seasoning ingredients and stir-fry till tomatoes melt.Mix all the other ingredients except eggs(including 1 cup of water) and let it boil for atleast 10 mins.Then Add 1 cup water and when it boils,drop the eggs,one-by-one and let it cook for another 8-10 mins till oil sepates on top.Garnish with few chopped coriander leaves.Enjoy cooking!. Cauliflower Egg Lollipop

In this recipe the  Cauliflower florets are delicately fried with egg and spices.U need to cut each floret with
1 1/2 inches stem for this Egg fried Lollipop.This can be done in 7 mins so quickly and  can also be served as a starter for family get-togethers.U can have it alone or with Sambar and Rice.Enjoy Cooking this recipe at home!.Enjoy Ur Meal!.BonAppetit!.

Cauliflower Egg Lollipop - Cauliflower florets fried with egg

Ingredients

15 cauliflower florets(cut with little stem)
2 no.s beaten eggs
1 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp black pepper powder
1  tsp salt
3-4 tbsp refined oil
5 cups water

Directions

1.Boil 5 cups of water well and put 1 tsp chilli powder,3/4 tsp salt and 1/4 tsp turmeric powder.Turn off the
flame.
2.Add cauliflower florets to it and close the lid then drain the water after 5 mins. keep it aside.
3.Add pepper powder and a pinch of salt to the beaten egg mixture. mix that well.
4.Heat oil in a kadai and dip all the cauliflower florets in beaten egg-mixture and shallow-fry them on both sides till they turn golden brown.
5.Serve them with tomato-ketchup or rice and sambar.
