Vegetable Seekh Kebab

This can serve a tasty Vegetable Kebab for Parties and Get-togethers.Taste of this juicy kebab is simply super inviting and flavorfully delicious.This will melt in ur mouth if perfectly done.Though  typically Skewer type,U can try it deep or shallow frying this or in grill and barbecue this kebab.U can have it alone or as taste-match or can wrap it in Chapati and serve it as breakfast or Dinner with  Sauce of ur choice and Dip or with green mint chutney.Enjoy this easy-to make Veg.version of Seekh Kebab.Enjoy Easy cooking at home!.Enjoy Ur Meal!.BonAppetit!.

Vegetable Seekh Kebab - Easy to make Vegetable Seekh Kebab
Ingredients:
    1/2 carrot
    6 cauliflower florets
    6 french beans
    1 potato - boiled and mashed
    2 tbsp green peas-ground coarsely
    2 tsp ginger-garlic paste
    1 green chilli - pasted fine(optional)
    1/2 tsp garam masala powder
    1/2 tsp salt or needed
    1/4 tsp red chilli powder
    2-3 tbsp breadcrumbs
    few mint and coriander leaves
    2 tbsp refined oil (optional)
    lemon wedges(for garnishing)

Directions:
1.Cut the vegetables.Parboil them,drain the water and let it cool.Wipe the water with tissues and grind
them to a paste.
2.Mix all the other ingredients together and mix this with ground vegetable paste well.
3.Shape them into sausages and shallow fry or(Using skewers and) grill them in oven barbecue till golden
brown on both sides after applying oil on the sides.
4.Garnish with lemon wedges and serve hot.

Sheesh Kebab(Tawook)

This famous Kebab of the MiddleEast is a treat to ur tastebuds.U can have it  added to  bread salad and this is often  served with hammos or plain rice.U can add 1/4 tsp red chilli sauce if u need it slightly spiked up.Normally done with 1 1/2 inch size boneless chicken pieces but I made with larger pieces to be used for sandwich filling.Enjoy cooking at home.Enjoy ur meal!.BonAppetit!

Sheesh Kebab(Tawook)
Ingredients

400 gms boneless chicken pieces-cleaned with 1/4 tsp turmeric powder.Wash it well.
2 tbsp yoghurt
1/2 tsp garlic paste
1/2 tsp green chilli sauce
3/4 tsp salt
1 tsp lemon juice
2 tbsp refined oil
1 tbsp butter or olive oil( for brushing)

Directions
1.In a bowl,mix yoghurt, garlic,lemon juice,green chilli sauce &  1 tbsp oil.
2.Rub this on the chicken pieces and marinate it for an hour.
3.Skew the chicken pieces in skewers.Barbeque them for 5 mins rolling it so that it is done on all sides and brush butter and olive oil mix once and BBQ them for another 5 mins till the chicken to tender up to a nice golden colour and done.Apply brushing again and serve it with Tomato ketch up.

Note:
1.U can grill it in oven for 12 - 15 mins.U can pause and brush it once after the 8 th min if it is done with M/W
oven in Grill mode.
2.U can do it in pressure-cooker.Just add the marinated chicken pieces with 50 ml water and Pressure-cook upto  4 whistles.When the pressure is released,open the lid and stir-cook till the pieces become dry.U won't lose the taste of it- though it is done pressure-cooked.U can do chapati rolls and sandwiches.
3.U can shallow fry this on Nonstick tawa,covering it with lid,on low flame turning it twice on both sides 2 mins and brushing them each for abt 10-12 mins.

Potato Chickpeas Cheesy Kebab

'Crispy outer-layer with less spiced and softy texture inside' - best describes this Kebab and makes U long for more.This Cheesy kebab  will melt in ur mouth as soon as U realize the taste of it.This Kebab is surely one of the Wonders of the listed Teatime Snacks.This will  that will go with Tomato Ketch-up or can have it alone.It requires minimum ingredients and Serves 5.U can try this recipe with Potato alone.Enjoy ur Teatime!.Bon Appetit!.

Potato Chickpeas Cheesy Kebab - Soft kebab made with Potato,Chickpeas and Cheese

Ingredients
1 potato - boiled,peeled and mashed
50 gms White Chickpeas - soaked for 4 hours,boiled and mashed
1 tsp finely chopped celery or coriander leaves
a pinch of garam masala
1/4 tsp ginger-garlic paste
1 tsp white Pepper powder
2 Low Fat sandwich cheese spreads(salted)
2 tbsp corn flour
5 tbsp Plain Cornflakes- (finely powdered)
3 tbsp bread crumbs(fresh)
1/4 tsp salt - to taste
1 tbsp oil + 50 -70 ml oil -for shallow frying


Directions
1.Heat 1 tsp oil and add ginger-garlic paste,mashed potato,mashed chickepeas and salt  and Saute it for 3-4 mins.
2.Add garam masla(a pinch) and chopped celery or coriander leaves.Stir it well for a min.Turn off the flame.
3.Add white pepper powder,2 cheese spreads,corn flour and bread crumbs and mix well.
4.Do round shape Kebabs,roll it in Cornflakes powder and Shallow fry it in 50 - 70 ml oil till both sides turn light brown.
4.Serve it hot with Tomato Ketch-up as a Teatime Snack.

Babycorn Veg-Chicken Kebab

Few years ago,this Kebab recipe flashed in my mind,when I started trying a South-Indian version of a North-Indian Kebab.I added Babycorn and minced Chicken as new ingredients for this Combo Kebab and Believe
me, the taste turned out to be amazingly awesome.The soft and tender layers of this Kebab will simply melt in ur mouth if done well.This can serve as a fantastic starter for family get-togethers.U can shallow-fry this kebabs in oil or grill or barbecue this kebabs(7-8 mins per side) brushing little butter or oil on them.U can try a pure Veg version of this Kebab with Mixed Veg and Babycorn with spices.Anyway,this Kebab is a winning Combo all the way.This recipe is almost 2 years old-since it was first published in KK.Com and re-posted here.Enjoy Cooking at home!.Enjoy ur Meal!.Bon Appetit!.

Babycorn Veg-Chicken Kebab - a Combo  Kebab with Babycorn,mixed-Veg and minced Chicken with selected spices


Ingredients:
100 gms minced Chicken
3 babycorns -boiled for 10 mins with water and corns shredded-keeping the centre stem intact
1 tsp ginger-garlic paste
1/2 tsp salt - to taste
1/2 tsp white pepper powder
1 tsp lemon juice
2 bread slices- toasted in a pop-up toaster and powdered after edges removed
2 tbsp grated carrot
1 potato -boiled for 12 mins with needed water,peeled and mashed
1/4 tsp nutmeg powder
1/2 tsp mutton masala powder
1 tsp garam masala powder
2 tsp corn flour
few coriander( one handful) and mint leaves(10)-chopped fine
4 tbsp refined oil(optional)-if shallow fried on non-stick Dosa pan
1 tsp butter(optional)
lemon wedges-for serving

Directions:
1. Mix all the ingredients(except lemon wedges,oil and butter) together well and pulse it using a mixer-grinder once for 2-3 secs.
2. Shape the Corn-Chicken kebab mix around bamboo skewers and corn stems (3 no.s) and shallow-fry till
done on bothsides.
3.Serve them hot with tomato ketchup and lemon wedges.

Note:
1. U can Grill or barbecue these kebabs(7-8 mins per side) brushing butter or Oil on the kebabs once.
2.U can try a pure Veg version of this kebab.Ex. U can try this with finely chopped celeries, spring onions, broccoli,Soya Granules,Finelychopped Cauliflower florets etc, instead of  shredded Babycorn. and adding ur fav Vegs.
