Parsee Red Chicken Curry

Previously said that I received a Fabulous Giveaway Book of '50 great Curries of India' from Mrs.Reva of
Karasaaram  for the Royal Feast Biryani Event(Thanks again Dear) & delighted to do a recipe from this book. Though its a Lent time till Easter and we don't spend much on Fooditems this period strictly avoiding all Non-Veg food preparation,making it as simple as possible, yet happy to post a Chicken Curry from that book. Its called Red Chicken Curry(A Parsee Preparation) since its done with less ingredients n needs less cooking time.

The Author Camila Punjabi says that this Mumbai Parsee homestyle Curry yields a bright red chicken Curry which has a Goan influence on this curry. The rich red colour is from the use of Good-quality Kashmiri Red Chillies and I tried this recipe with boneless Chicken and added a greenchilli (optional) as it needed in the last stage to make it spicy good. The crushed bayleaf added may luk like curry leaves in the clicks. Strict Vegetarians can try this recipe with baby potato, paneer, mushroom, capsicum, Cauliflower or soy chunks. Parsee Red Chicken Curry
Ingredients:
400 gms Boneless Chicken
3-4 Kasmiri Red chillies - soaked in warm water for 20 mins
2 cm sized ginger pieces
2-3 garlic cloves
2 medium sized onions - coarsely chopped
3 medium sized tomatoes - chopped fine or pulsed
1/4 tsp cumin seeds
3/4 tsp coriander seeds
1 cm sized cinnamon stick
1 bay leaf - crushed
1/4 tsp turmeric powder
1 tbsp oil
1/2 tsp or salt to taste
Directions:
1.Grind kashmiri red chillies,ginger,garlic,cinnamon,cumin and coriander seeds into a fine paste using 1 tbsp water. Add onions and tomatoes and grind it fine again and gather it.
2.Heat oil in a pressure pan and fry bay leaf for 30 secs, then the paste and saute well for abt 4-5 mins till oil separates on top.
3.Add chicken pieces and stir-fry for 2 mins.
4.Add 1 cup water and salt to taste and cover and cook upto 4 whistles.(or U can cook it on slow fire too for abt 20 mins - stirring it gently when needed). Turn off the flame. Leave it for 10  mins for the pressure to be released.
5.Open the lid  and stir-cook for 2-3 mins on medium flame gently till water runs semi-dry.
6.Garnish with Coriander leaves and serve it hot with rice.
Tips:
U can add 1 1/4 tsp kashmiri red chilli powder for the curry if U r not able to go for the K.Red chillies.

Popcorn Chicken

Popcorn Chicken can be said as the Best served Starter/ Snack/Sidedish and an alltime kid's fav Snack.This breaded Chicken fry is an ideal replacement for Chicken cutlet and requires less time.It can be done with plain n boiled chicken or 3-4 pieces chicken left-over in the A/N Chicken Curry(don't add spices therefore). U can do Grill/Bake instead of Deep-frying to make it even healthier(since it takes oil if deep-fried).Left-over (will vanish within mins),if any, can be added in Chilli Chicken or Manchurian in the Dinner Menu. Enjoy this Yumm snack. Enjoy Ur Teatime/Meal!. BonAppetit!.

Baked Popcorn Chicken
Ingredients
    100 g Boneless chicken breast -boiled 3/4th and pulsed twice for a sec
    1/2 tsp Ginger garlic paste
    1/4 tsp Soya sauce
    1 1/2 tsp refined flour
    1 Egg - beaten well
    1 tbsp refined flour
    3 tbsp bread crumbs
    2 tbsp pulsed fine cornflakes
    Oil  To deep fry or 1 tbsp
    1/4 tsp green chilli sauce
    1 tsp white pepper powder
    1/4 tsp salt
    1/2 tsp lemon juice - optional
Deep-fried Popcorn Chicken
Directions:
    1.Mix the chicken with salt,soy sauce,white pepper powder,green chilli sauce,ginger garlic paste,lemon juice (optional),bread crumbs and refined flour.
    2.Shape this into tiny round shaped balls and keep this aside.
    3.Preheat the Oven to 180 C
    4.Transfer the beaten egg to a flat tray or saucer.Roll each ball so that in the beaten egg(shd not get wet) and then into the pulsed fine cornflakes.Pour 1/4 tsp oil over each balls.
    5.Place this on a greased baking tray and bake for 18 mins or till done(or Grill it for 20 mins or deep fry in a kadai till done) and serve it after 10 mins with tomato ketch up.

Chilli Chicken

This is an easy Chinese Chicken preparation to try at home. Paprika is a spice made from the grinding of dried Capsicum (Bell Peppers or Chilli Peppers).If U need it to be semi-dry, add 1/2 tsp corn starch dissolved 70 ml warm water after adding the soy sauce in step 6. U can use ready-made(like Aachi Chilli Chicken Masala powder- 1 1/2 to 2 tsp)  instead of  Chilli Powder +  Paprika and try this dish.Treat Your Tastebuds with Delightful Chinese Delicacy. Chilli Chicken - Very tasty dry Chinese Chicken
Ingredients:
    chicken pieces(boneless) - 200 gms
    egg - 1 no
    chilli powder - 1/2  tsp or 3/4 tsp white pepper powder
    paparika (dry capsicum powder) - 1 tsp
    vinegar or lemon juice- 1 tsp
    soy sauce - 2 tsp + 1/2 tsp
    salt - 3/4 tsp or to taste
    finely chopped onion- 1 no
    green chilli - 1 no
    Garlic - 2 -3 nos
    Capsicum - 1/4 no
    pinch of  ajinomotto
    few spring onions - chopped
    little food colour(red)
    refine oil for deep frying
Directions
    1.Mix the chicken pieces with vinegar, 2 tsp soy sauce, chilli powder, paprika, little food colour, little salt and beaten egg.Keep aside for 1/2 an hour.
    2.Slice the onion,Spring Onion,Garlic,Capsicum and green chilli thin.
    3.Heat oil in a pan and deep fry chicken pieces.(keep aside the remaining marinade).
    4.Remove from oil keep aside. Remove oil from pan leaving about 1 tbsp. Add the  chopped onion,garlic pieces and green chilli and saute till golden brown.
    5.Add the capsicum and the remaining marinade and cook till  it gets thick,say for about 2 mins.
    6.Add deep-fried chicken pieces, remaining soy sauce, ajinomotto,chopped spring onions,1/4 cup chicken stock and little salt.Cook till done for 3 more  mins on medium flame and serve it hot with Indian Breads and Chinese Fried Rice and Noodles.

Chicken in Garlic-Ginger Sauce

This recipe is simple but a classic delicacy done without oil and in 12 mins time.This tasty and tangy chicken dish will make everyone asking for more.U can serve it as a starter or side dish.Delight your tastebuds with this garlic and ginger sauce that adds an incredible flavor and taste to the chicken.Needs less ingredients, spices and time.U can do it without out Chilli and turmeric powders but add 1 tsp white pepper powder instead. Chicken in Garlic-Ginger Sauce  - Chicken pieces Cooked in tangy,tasty Garlic Ginger Sauce
Ingredients:
200 gms Boneless chicken pieces or 6 chicken drumsticks - cleaned well with turmeric powder
1/2 tsp white pepper powder
1/2 tsp chilli powder
a pinch of of turmeric powder
2 tsp soy sauce
1 1/2 tsp garlic paste
1 1/2 tsp ginger paste
4 tsp lemon juice
1/4 tsp salt - to taste

Directions:
1.Mix all the spices and other ingredients except white pepper powder and mix it with chicken pieces well and marinate it for 30 mins in the  fridge.
2.Take a pressure pan,add the chicken pieces along with marinade and 50 ml marinade washed water.Cover and Pressure-cook it for about 4 whistles and leave it for 10 mins.
3.Open the lid and stir-cook sprinkling 1/2 tsp white pepper powder till it becomes dry and Serve it with
Steamed Rice or Bread slices or Indian Breads.

Malai Chicken Curry(Chicken in a Creamy Sauce)

This thick Chicken curry is rich in taste and U can serve it to Special Guests with less effort and time to make a difference.Strict Vegetarians can try this dish with Potato,Brinjal,Capsicum,Mushroom and Soya Chunks or Meal maker.This mild-spiced and creamy Chickencurry  is really easy to do,richly aromatic and well-flavored.U can substitute ready-made chicken masala powder and garam masala powder to the added spices  for variation.Serve it hot with steamed rice,Bread slices and Indian Breads etc.Can do it in 15 + mins and this serves 4 nos.Enjoy Ur Meal!.Enjoy cooking home-made delicacies!.BonAppetit!.

Malai Chicken Curry Richly aromatic Chicken in Creamy Sauce
Ingredients:
    300 gms chicken pieces
    1 onion - sliced
    paste of 1 onion with 1  tomato
    2 green chillies chillies
    2 cloves, 2 cardamoms,1 cm chinnamon stick,1 bay leaf
    1 tbsp Lowfat cream
    1 tsp coriander powder
    1/4 tsp cumin powder
    1/2 tsp curry masala powder
    1 tsp chilli powder
    1/4 tsp turmeric powder
    1 tsp ginger-garlic paste
    2 tbsp chopped coriander
    3/4 tsp salt to taste
    2 tsp refined oil
Directions:
    1.Heat oil in a pressure-pan.add green chillies,cloves,cardamom,cinnamon stick and bay leaf.Fry till bay leaf turns golden brown.
    2.Add the onion and saute it for 2 mins and onion tomato paste and ginger - garlic paste and saute it 4 minutes.
    3.Add the chicken pieces and sprinkle in chilli powder,dhania powder,cumin powder and turmeric powder and mix well for 2 mins.Cover and pressure-cook the chicken pieces, salt (add 100 ml water if needed) and cook for upto 4 whistles.
    4.Add the curry masala and coriander leaves and the cream and cook for a few mins .
    5,Serve it hot with rice or Indian Breads anytime.

Coriander Chicken Curry

This Green Chicken Curry is done with coriander leaves masala cooked with selected spices.If you like the taste and flavor of coriander leaves,try this one at home for a change.U can also try chicken using Mint paste instead. Coriander leaves r rich in Iron,speediate digestion and hence its intake in anyform is healthy.Serve it with Steamed Rice,Bread slices or Indian Breads like Idli,Dosa,Chapati,Roti and Parota.Can be done in 15 mins time and serves 4-5 nos.Enjoy Easy Cooking at home.Enjoy Ur Meal!.BonAppetit!.

Coriander Chicken Curry - Chicken cooked with corianderleaves masala
Ingredients:
    300 gms boneless chicken pieces (cleaned with water and salt)
    2 handful coriander leaves pasted and few coriander leaves chopped
    1 onion - pasted fine
    2 green chillies
    2 garlic cloves
    2 cm ginger pieces
    1/2 tsp curry masala
    1/4 tsp turmeric powder
    1 tsp lemon juice
    2 tsp refined oil
    1 tsp mustard seeds
    1/2 tsp cumin seeds
    3/4 tsp salt
    250 ml water

Directions:
    1.Prepare 1 cup coriander paste with green chillies ,garlic and ginger.Keep this aside.Chop few coriander
leaves.
    2.Heat oil in a pressure pan ,fry mustard seeds,cumin seeds and onion paste and saute for 2 mins.
    3.Add turmeric powder,coriander paste and salt .Cook for 5-6 mins till the raw smell diminishes - stirring
continuously.
    4.Add the chicken pieces,curry masala and 250ml water and pressure cook upto 4 whistles.keep it aside for the pressure to be released.
    5.Now open the lid and add chopped coriander leaves and stir-cook till it becomes semi-dry.
    6.Sprinkle lemon juice on top.
    7.Serve it with Steamed Rice,Bread slices or Indian Breads like Idli,Dosa,Chapati,Roti and Parota.

Coconut Chicken Fry

U can do this Chicken Fry without adding oil.Try this recipe at home to believe it.This easy Chicken fry is done without oil and that goes well with all variety rices including Rasam Sadham.No need to add oil in the process(since the Chicken will get-done in the oil or fat leaving the Chicken).U can use it in Chapati rolls,wraps,sandwiches etc.Can be done well-under 15 mins cooking time and serves 4-6 nos.U can also try it without adding coconut paste.Try this easy-to-do Coconut Chicken Fry at home and Enjoy Ur Meal!. BonAppetit!.

Coconut Chicken Fry - Chicken pieces cooked with spices
Ingredients:
500 gm chicken fleshy pieces
1 tsp chilli powder
1/5 tsp turmeric powder
3 tbsp coconut Pasted Coarsely
1/2 tsp garam masala - optional
3/4 tsp ginger-garlic paste
3/4 tsp salt
1 tsp chopped coriander leaves
100 ml water - Don't add more

Directions:
1.Take a pressure-pan and add all the ingredients,mix them well (including 100ml water and coriander leaves) so that the masala gets evenly spread.
2.Pressure cook upto 4 whistles and leave it for 10 mins for the pressure to be released.
3.After the pressure is released,Turn on the flame and stir-cook till the water runs dry,say for abt 3-4 mins.
4.U will get chicken as if being done in oil.That's all.Serve it hot with Steamed rice or Variety Rices or Indian Breads and Bread slices.
Tips: U can add 1 tbsp(3 tsp) grated coconut(optional) in step Step3 and stir-cook .

Ezy Nadan Chicken Curry

Nadan Chicken Curry is a well-known Malabar Chicken Curry.An easy-to do variation of this traditional Keralite gravy is given here to try at home.Authentic Curry is done using fresh coconut milk or without it.U can substitute the ground masala adding (chilli powder 3/4 tsp,coriander powder-1 tsp,cumin powder -1/4 tsp) and try this dish.Try this tasty Chicken delight for variation at home and Enjoy ur Meal!.Bon Appetit!.

Nadan Chicken Curry - Chicken cooked in coconut milk with selective spices

Ingredients

500 gms  fresh chicken
1 1/2 tsp masala powder (dry roast and grind these spices 6 red chillies, 1 tbsp coriander seeds, 1/4 tsp cumin seeds)
1 small size onion  + 1 medium-sized tomato - (paste it fine)
1/4 tsp turmeric powder
1cm size ginger - crushed
3 garlic pearls - pressed with Garlic-press or back of the knife
1 tsp salt or to taste
2 tsp refined oil
1 tbsp coconut milk powder dissoved in 200ml water
200 ml water
1 tsp mustard seeds
a sprig of curry leaves
3 green chillies(slit) or red chillies
1 tsp chopped coriander leaves
1 cm cinnamon stick,2 cloves,2 green cardamoms

Directions:

1.Marinate the chicken pieces with half the ground masala powder,turmeric  powder and 1/2 tsp salt for 20 mins in the fridge.
2.Heat oil in a pressure pan,fry cinnamon stick,cloves,green cardamoms.Splutter mustard seeds,add curry leaves,whole green or red chillies,crushed garlic and pressed garlic and saute for a min or 2 till onion becomes transparent.
3.Add the onion-tomato paste,then the remaining dry-roasted ground masala powder,turmeric powder,then add the marinated chicken pieces and bring it to boil for 3 mins .
3.Then add cicken pieces,salt and 200ml water and mix well.Cover with pressure-cooker lid and pressure-cook upto 4 whistles.Keep it aside for 10 mins.
4.After 10 mins,add the dissolved coconutmilk and chopped coriander leaves,cover with a lid and bring it to boil for 5-7 mins till the gravy becomes thick and oil begins to flow on top on medium flame.Turn off the flame.Garnish with chopped coriander leaves.
5.Serve this yumm Nadan Chicken Curry hot  with steamed rice or Indian Breads.

Garlic Chicken Masala - a variation

This is not a Garlic Chicken preparation but Garlic Chicken Masala(an Indian Version).For Garlic lovers,a tasty South-Indian preparation of this masala is given here.For an Indian Garlic Chicken preparation,try the same recipe avoiding tomato(use tomato puree instead) and curry leaves.U may find it odd to accept the following truth.My father used say that Non-veg dishes shd not be dined outside but u can taste the Vegies that r done away from home since the N-Veg Dishes are prepared at home well-cleaned and done.So,try avoiding N-Veg Dishes done outside as much as possible.Enjoy cooking at home.This recipe may seem long but can be done easily in 18-20 mins cooking-time.This serves 4-5 nos.Strict Vegetarians.can try this recipe with Soya Chunks or Mushrooms thereby reducing the spices and using Subji masala for chicken masala powder. Enjoy ur Meal!.Bon Appetit!.

Garlic Chicken Masala - Chicken Masala prepared with garlic and other spices


Ingredients

    300 gms boneless chicken pieces - cleaned well and cut into 1 1/2 inch size pieces
    10 garlic pearls -chopped fine
    1 big onion - pasted  with  1 big tomato
    1/2 tsp garam masala powder
    1 1/2 tsp Aachi or any good chicken masala powder
    1/2 tsp ginger paste
    1 1/2 tsp garlic paste(don't add more)
    1/2 tsp white pepper powder
    a pinch of turmeric powder
    1 tbsp cashew paste (optional) or 1 1/2 tbsp coconutmilk powder(don't dissolve it)
    1/2 cinnamon stick,2cloves,2 green cardamoms,1/2 tsp saunf,1/2 tsp maze - all crushed
    2 tsp refined oil + 1/2 tsp butter + 1 tsp pure coconut oil
    3/4 tsp salt  or to taste
    1/2 tsp lemon juice(don't add more)
    1 tbsp chopped coriander leaves
    few fried curry leaves
    few fried onions and Garlic(finely chopped)
    250 ml water

Directions

    1.Marinate Chicken pieces in 1/2 tsp garlic paste + 1/4  salt  for 15 mins
     2..Heat ghee in a pressure pan,add chopped garlic pearls and saute it for 30 secs.Take a spoonful of garlic and keep it aside for garnishing later.
    3.Add 2 tsp refined oil and saute 1/2 cinnamon stick,2cloves,2 green cardamoms,1/2 tsp saunf,1/2 tsp maze - all crushed.Add curry leaves and a tsp of chopped coriander leaves and saute it for 20 secs.
    4.Add pasted ginger and 1 tsp garlic paste paste and stir it well for a min in good flame.Add 1/2 tsp Chicken Masala  and saute this for 30 secs
    5.Add onion -tomato paste(or chopped onions- Saute till the chopped onions become slightly golden brown in colour and add chopped tomato after a min).
    6.Add the marinated chicken pieces,the remaining 1/2 tsp Chicken Masala  and a spoonful of.chopped Coriander leaves.Stir it for a min or 2 so that the chicken pieces blend well with the spices.
    7.Add water and 1/2 tsp salt and mix it well and pressure cook upto 4 whistles.Leave it for 10 mins for the pressure to be released.
    8.Open the lid and add the cashew paste or the coconut milk powder, 1/2 tsp white pepper powder and the remaining 1 tsp coriander leaves.Stir it carefully for 2 mins.Turn off the flame.
    9.Sprinkle 1/2  tsp lemon juice and 1 tsp coconut oil on top.Garnish with chopped garlic and fried onions .
    10.Serve this aromatic Garlic Chicken Masala hot with steamed rice , Bread or Indian breads,etc,.

Note:
 If U r not using Chicken masala, u can  add 1 tsp  Chilli powder + 1/2 tsp coriander powder + 1/4 tsp cumin powder + 1/4 tsp turmeric powder here in this recipe.

Babycorn Veg-Chicken Kebab

Few years ago,this Kebab recipe flashed in my mind,when I started trying a South-Indian version of a North-Indian Kebab.I added Babycorn and minced Chicken as new ingredients for this Combo Kebab and Believe
me, the taste turned out to be amazingly awesome.The soft and tender layers of this Kebab will simply melt in ur mouth if done well.This can serve as a fantastic starter for family get-togethers.U can shallow-fry this kebabs in oil or grill or barbecue this kebabs(7-8 mins per side) brushing little butter or oil on them.U can try a pure Veg version of this Kebab with Mixed Veg and Babycorn with spices.Anyway,this Kebab is a winning Combo all the way.This recipe is almost 2 years old-since it was first published in KK.Com and re-posted here.Enjoy Cooking at home!.Enjoy ur Meal!.Bon Appetit!.

Babycorn Veg-Chicken Kebab - a Combo  Kebab with Babycorn,mixed-Veg and minced Chicken with selected spices


Ingredients:
100 gms minced Chicken
3 babycorns -boiled for 10 mins with water and corns shredded-keeping the centre stem intact
1 tsp ginger-garlic paste
1/2 tsp salt - to taste
1/2 tsp white pepper powder
1 tsp lemon juice
2 bread slices- toasted in a pop-up toaster and powdered after edges removed
2 tbsp grated carrot
1 potato -boiled for 12 mins with needed water,peeled and mashed
1/4 tsp nutmeg powder
1/2 tsp mutton masala powder
1 tsp garam masala powder
2 tsp corn flour
few coriander( one handful) and mint leaves(10)-chopped fine
4 tbsp refined oil(optional)-if shallow fried on non-stick Dosa pan
1 tsp butter(optional)
lemon wedges-for serving

Directions:
1. Mix all the ingredients(except lemon wedges,oil and butter) together well and pulse it using a mixer-grinder once for 2-3 secs.
2. Shape the Corn-Chicken kebab mix around bamboo skewers and corn stems (3 no.s) and shallow-fry till
done on bothsides.
3.Serve them hot with tomato ketchup and lemon wedges.

Note:
1. U can Grill or barbecue these kebabs(7-8 mins per side) brushing butter or Oil on the kebabs once.
2.U can try a pure Veg version of this kebab.Ex. U can try this with finely chopped celeries, spring onions, broccoli,Soya Granules,Finelychopped Cauliflower florets etc, instead of  shredded Babycorn. and adding ur fav Vegs.

I tried this recipe when I had no other Non-Veg food left in the kitchen to accompany Sambar Rice - one fine Day last year.The picture shown below carries the image of Chicken Sausage pieces(non-smoked) after being shallow-fried with selective spices.This can well-replace Chicken in ur diet obviously and even tastes almost like Chicken 65 -if prepared exactly the same way with same ingredients and fresh Sausages.U can have it with Sambar Rice, Curd Rice etc.This can be done in just 6-8 mins. U can do it with 3/4 - 1 tsp Aachi chicken 65 masala (for 4 chicken sausages) with a pinch of salt (very little) for a quickie. U can fry sausages  with sambar masala powder or with chilli powder + turmeric powder + garam masala mix for an easy variation. Try this recipe at home and Enjoy ur Meal!.Bon Appetit!.

Ezy Sausage 65 - Sausage pieces shallow-fried with spices
Ingredients:
4 Chicken Sausages
1/4 tsp chilli powder
a pinch of turmeric powder
a pinch of curry masala powder
1/2 tsp Aachi chicken 65 powder
1/4 tsp salt or to taste
2 tsp yoghurt
1 sprig curry leaves
1 tbsp chopped coriander leaves
3 tbsp refined oil -for shallow-frying
few lemon wedges

Directions:

1.Clean the Sausages in water and drain the excess water.Cut the sausages into pieces.
2.Add all the ingredients except curry leaves and oil.Mix them well for a min.
3.Heat 2 tbsp oil in a non stick frying pan,add curry leaves and the spices mixed sausage pieces.
4.Shallow fry them or stir-fry them for 2-3 mins till done golden brown on both sides on good flame.
5.Serve with Sambar or Curd rice and lemon wedges - an ideal combination.Enjoy!.Bon Appetit!.

Chicken Masala - Chicken Cooked  with spices

Ingredients:

600gms chicken
2 onion-chopped fine
(1 clove,1 cardamom,1 cm cinnamon stick,1 bay leaf)
1/2 tsp chilli powder
1/2 tsp chicken masala powder
1/2 tsp white pepper powder
1 tsp fresh ginger-garlic paste
a pinch of turmeric powder
few chopped curry leaves
few chopped coriander leaves
1 tsp salt
2 tsp refined oil

Directions:
1.Heat oil in a pressure pan and saute clove,bayleaf, cardamom and cinnamon stick.
2.Add chopped onion and curry leaves and saute it for 2 mins till it becomes transparent.
3.Add ginger-garlic paste and saute this for a min or two.
4.Add the cleaned chicken pieces,turmeric powder,chilli powder,chicken masala and salt.Stir-cook for 2 mins.
5.Add 50 ml water and close the pan .Pressure cook upto 4 whistles.
6.Open the lid after the pressure is released and sprinkle the white pepper powder over it and add the chopped coriander leaves.
7.Stir-cook till it becomes dry and serve it with Rice and Rasam or Curd,Pulav,Biryani,Chapati,etc.

Reshmi Kabab - A tender and delicious starter

Ingredients
    100 gm minced chicken
    1 medium sized onions (ground coarsely )
    1 tsp ginger - garlic paste(fresh)
    1 tbsp coriander leaves (chopped)
    1 tbsp mint leaves (chopped)
    1/2 tsp cumin  seeds
    1 tsp pepper powder
    2 green chillies (ground with 1 tsp fennel seeds)
    2 tbsp split besan dhal powder (pori kadalai powder)
    1 tsp garam masala
    2 eggs (beaten well with salt pepper powder)
    1 tsp salt to taste
    onion slices (for garnishing)
    1 tsp coriander and mints leaves (finely chopped)
    2 tbsp refined oil

Directions
    1.Mix all the masala (except eggs) and the minced chicken well.
    2.Shape this mixture into sausages and dip this in the beaten egg mixture.
    3.Heat oil in a tawa and shallow fry these sausages shaped mixture on both sides.
    4.Garnish with onion slices and coriander - mint leaves.
Note:
You can saute the minced chicken-mixture(except beaten egg) in 2 tsp oil for a min or 2 before shaping them like sausages to improve the taste.Add 3 sambar onions or onion - 1 no.(medium sized) not 2 no.s- ground coarsely and 1 tsp lemon juice(optional) to improve the taste.

Cashew Chicken Gravy

Those who r on Diet - Please Excuse.This rich chicken curry is done without adding chilli powder and coconut.The authour of this tasty surprise is my Hubby.He demonstrated this recipe on a Easter Sunday(2008)-which turned out to be real delight.Those who luv varities can give this taaaasty recipe a try at home.U will LUV the rich and creamy taste of this cashew Chicken.Here is the recipe for u to try at home. Cashew Chicken Gravy-Chicken cooked in cashew paste with spices

Ingredients
    200 gm Boneless chicken pieces
    1 onion
    3 green chillies
    1 tsp ginger - garlic fresh paste
    2 tsp lemon juice
    1/2 tsp coriander powder
    50gms cashewnuts(pasted with 2 tsp poppy seeds (soaked for 10 mins))
    1/2 tsp fresh ground spices of 1/2 cm cinnamon stick + star anise -1 cm
    1 tsp salt
    2 cups water
    1 tbsp refined oil - 1 tbsp
for seasoning:
    chopped curry leaves - little
    chopped coriander leaves - little
    chopped onion pieces - little
    1/2 tsp mustard seeds
    5 crushed cashews
    1 tsp refined oil

Directions
    1.Marinate chicken pieces in lemon juice,ginger-garlic paste and salt.
    2.Make a paste of green chillies and onion .
    3.Heat oil in a pan and saute  onion -green chilli paste,ground spice masala,coriander powder,then marinated chicken pieces along with the marinade and saute this for 2-3 mins.
    4.Now,add the cashew paste,few chopped coriander leaves and salt and add water.
    5.Cover the pressure pan and cook upto 4 whistle.turn off the flame and keep aside for 10 mins.
    6.Take a kadai and heat oil,add mustard seeds,chopped onion,crushed cashews,curry leaves and chopped
coriander leaves.
    7.Saute this seasoning well and pour this to the cooked chicken curry and mix well.
    8.Serve hot with rice or idli,dosa,naan,parota and chapati. 

Chicken in Spicy Sauce

This is an easy hotel-taste chicken recipe.U can try this Chicken for variation.Savour the exotic flavour of chicken slices marrinated in a spicy Curry style sauce of fresh spices. and cooked in ( fresh) coconut milk  and spices.Try this at home for a tasty-spicy chicken.U can serve it with steamed plain basmati rice,ghee rice,jeera rice,veg fried rice or bread and Indian breads.Enjoy ur meal!Bon Appetit!.

Chicken in Spicy Sauce - Chicken pieces cooked in spicy sauce


Ingredients
    300 gm chicken-cut into thin boneless slices
    4 garlic cloves + 2 chopped garlic cloves
    1 inch grated ginger
    1 tbsp curry paste (of red chillies -5 no.s with 1 tsp vinegar,2 tbsp roasted peanuts(peeled) and 1/2 tsp salt,4 garlic cloves,ginger and 5 pepper corns)
    1/2 tsp Aachi Chicken Masala or any curry masala powder
    1 tbsp tomato garlic sauce
    2 tsp refined oil
    1 tbsp chopped spring onion
    few thin Capsicum slices
    1 1/2 tsp crushed jaggery or sugar
    100ml thick fresh coconut milk or dissolved coconutmilk powder
    1/2 tsp salt
    few coriander leaves

Directions

    1.Mix ginger-garlic Chilli-Curry paste and rub over the chicken.Set aside for 20 mins.
    2.Heat oil in a pan. Add spring onion and saute for a few seconds.Remove and keep aside.
    3.Saute the marinated chicken pieces for 2-3 mins and add the below ingredients before it changes colour.
    4.Add the the capsicum slices,tomato garlic sauce,washed masala (curry-paste) water,crushed jaggery or sugar,chicken masala or curry masala powder,salt,coriander leaves and coconut milk.
    5.Add the sauteed spring onions and stir well.Cover the pan and cook upto 3 whistle.Turn off the flame.        6.After 10 mins,See if the sauce is too thick,then add little fish sauce(50-100ml) or chicken stock(u can prepare it at home with the remaining chicken pieces with bones) or the second coconutmilk (if u prepared it fresh) and stir-cook till it begins to boil and turn off the flame after a min.
    7.Serve this hot with steamed rice.

Note:
You can get this fish sauce in some supermarkets.U can prepare this sauce at home also.

Fish Sauce Preparation:
2 cups finely cut or minced fish pieces,5 cups water,1 tsp garlic paste,2 tbsp whole black peppercorns,1/2
cup soy sauce,2 tsp lemon juice,2 tbsp vinegar,1 tbsp sugar,1 tsp ginger paste,1/4- tsp chili powder,2 tspsalt. In a large bowl, add 2 cups fish pieces + 5 cups water.Bring to a boil, then reduce heat and simmer for 15 minutes. Add garlic paste + peppercorns + soy sauce + lime juice + vinegar + sugar + ginger paste + chili powder+ salt.Bring to a boil, turn heat down to medium,add 2 cups water and cook for 15 minutes.You can adjust the salt.Allow to cool.Strain into a container.

Chicken Podimas(Chicken Stir Fry) - Cooked chicken shredded and sauteed with spices


Ingredients

    200 gms boneless Chicken (Cleaned and cooked in water with turmeric powder and salt)
    10 cashews
    1 onion - chopped fine
    2 chopped green chillies
    1 tsp mustard seeds
    1/4 tsp Saunf
    3  whole red chillies
    1 tsp cumin seeds
    1 tsp ginger-garlic paste
    1 tsp fresh garlic cloves-chopped
    1/4 tsp turmeric powder
    3 tbsp grated coconut
    few chopped coriander leaves
    few chopped curry leaves
    1/2 tsp salt + 1/4 tsp salt
    2 tsp refined oil

Directions

    1.Cook the chicken with turmeric powder and water and shredd the chicken  pieces.
    2.Roast the cashews in oil first and take them out.
    3.In this remaining oil saute mustard seeds,cumin seeds,Saunf,whole red chilies,ginger-garlic paste,garlic pieces,onions,Chopped green chillies,chopped curry and coriander leaves.
    4.Add  the shredded chicken,turmeric powder and salt and mix well.
    5.Add grated coconut and roasted cashews and mix well.
    6.Serve this Chicken  Podimas hot alone or with Sambar and Rice.

Honey Chicken - Chinese style Chicken preparation with drizzled honey


Ingredients

400 gm boneless chicken
3-4 tbsp honey
1 tsp soy sauce
1 tbsp tomato-garlic sauce
1 tsp garlic-chopped fine
1 tsp grated ginger
1/2 tsp garam masala
1 onion-chopped fine
ground masala of (1 tsp pepper corns,3 red chillies,1 tsp vinegar,1/4 tsp salt,1 garlic cloves,1 cm ginger,1 onion,2 tbsp tomato puree)
1 egg- beaten well
2 tsp corn flour
1/4 + 1/2 tsp salt
50ml refined oil
a pinch of ajinomotto
1/2 tsp lemon juice
spring onions-optional

Directions

1.Marinate the chicken pieces with half the ground masala,beaten egg,corn flour,1/2 tsp salt for half an hour.
2.Heat oil in a flat-bottomed pan and shallow fry the chicken pieces till golden brown.
3.Fry onions,garlic and grated ginger for a min,add soy sauce,tomato-garlic sauce, ajinomotto,spring onions,3/4 tsp salt,garam masala,the remaining ground masala and stir-cook for 2-3 mins.
4.Add the fried chicken pieces,honey and toss well or mix well for a min or two. Sprinkle lime on top and serve this semi-gravy chicken with Indian breads or rice,pulav,biryani etc,.

Orange Chicken

Orange Chicken - Chicken prepared with Orange pulp and other spices

Ingredients:

400 gm Boneless chicken pieces
1 orange-deseeded and pulsed once or 1 1/2 cup orange juice with pulp
1 tsp pepper corns
1 tsp jeera
1 tsp saunf
1 cardamom + 1 clove + 1 cm cinnamon piece + little star anise + 1 bay leaf
1/2 tsp paprika
1 tsp garam masala
1 onion-chopped fine
1 tsp ginger-garlic paste
1 tbsp tomato-garlic sauce
2 tsp refined oil
1 tsp mustard seeds
1 1/4 tsp salt
1/2 tsp white pepper powder
1/2 tsp chilli flakes-optional
few curry leaves
a handful of coriander leaves

Directions:

1.Marinate chicken pieces with salt ,paprika,1 tsp ginger garlic paste,tomato-garlic sauce,garam masala,salt, 1/2 cup pulsed orange pulp or juice and coriander leaves for 1/2 an hour.
2.Dry-roast 1 tsp pepper corns,1 tsp jeera,1 tsp saunf,cardamom,clove,cinna​mon piece,little star anise and
bay leaf for a min in a kadai.Grind this into a fine powder.
3.Heat oil in a pressure pan,splutter mustard seeds,add the chopped onion and curry leaves and stir for 2-3
mins.
4.Add the marinated chicken along with the marinade,remaining coriander leaves,paprika and the dry-roasted
and ground pepper masala.Check the salt and pressure cook upto 4 whistle.
5.Open the pressure pan lid after 10 mins,sprinkle 1/2 tsp white pepper powder and stir-cook adding the 1
cup orange juice with pulp till the chicken is semi-dry(for 5-7 mins).
6.Serve this lip smacking Orange Chicken hot with Biryani,pulaos,sambar and curd rice.

Ezy Chicken Masala - (a Microwave Recipe)

Ezy Chicken Masala can be taken with rice, indian breads, Idli etc. Can be done in 20-25 mins time.Try this recipe at home and Bon Appetit!.

Ezy Chicken Masala  (a Microwave Recipe) - Chicken pieces cooked in spicy Masala


Ingredients

500 gm boneless chicken pieces
1 big onion-chopped fine
1 big tomato- chopped fine
1 big onion and 1 big tomato- pasted fine
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp chilli powder
1/4 tsp turmeric powder
1 tsp any chicken masala
1 tsp ginger-garlic paste
1/2 tsp freshly ground pepper powder
2 tsp salt
few curry leaves
few coriander leaves
2 cups water
1 tbsp refined oil

Directions

1.Take a microwave bowl and add refined oil,chopped onions, cumin seeds,mustard seeds,chopped tomato and curry leaves.
2.Microwave this on high for 2 mins.Take the bowl out.
3.Add all the other ingredients including 2 cups water. Mix all the ingredients well so that the masala gets evenly spread and Microwave (high) this for 20-25 mins,stirring 2-3 times.
4. Serve this Ezy Chicken Masala with rice.

Ezy Grilled Chicken - Grill Recipe

This Grilled Chicken has an easy preparation and tastes very much like South-Indian Chicken Fry.This recipe needs 12-13 mins Grill-cooking time only, moreover done with few ingredients and turns out very well.Try at home and post your comments.

Ezy Grilled Chicken - Indian-taste Grilled Chicken Pieces


Ingredients:

250gm boneless chicken pieces- cut into 1 1/2 inch size
1 tsp chilli powder
1/4 tsp turmeric powder
1 tsp any good mutton masala
1 tsp plain yoghurt
1/2 tsp lemon juice
1 tsp salt or to taste
1 tsp refined oil
For Garnishing:
few fried curry and coriander leaves,onion slices and lemon wedges

Directions

1.Mix the masala well and apply the paste evenly on chicken pieces and marinate them for 20 mins atleast.
2.Remove the microwave-cooking tray and replace this with the tray used for grilling.
3.Grease the tray with 1 tsp refined oil using a brush(to a smaller area only).
4.Spread the marinated chicken pieces on the tray at equal distance.
5.Grill the chicken pieces for 8 mins and then turn them over and again grill for 5 more mins.
6.Wait for 5 mins and then remove the tray from the microwave-oven.Garnish them with fried curry leaves and Coriander leaves.
7.Serve them hot with rice,onion slices and lemon wedges.

Tips:
Grill 12 mins per side(for more than 400gms Chicken pieces) and brush oil after turning.Brush oil or little hot -water with lemon jiuce on each piece before serving, if u find them too hard or dry after sometime.
