Those who r on Diet - Please Excuse.This rich chicken curry is done without adding chilli powder and coconut.The authour of this tasty surprise is my Hubby.He demonstrated this recipe on a Easter Sunday(2008)-which turned out to be real delight.Those who luv varities can give this taaaasty recipe a try at home.U will LUV the rich and creamy taste of this cashew Chicken.Here is the recipe for u to try at home. Cashew Chicken Gravy-Chicken cooked in cashew paste with spices
Ingredients
200 gm Boneless chicken pieces
1 onion
3 green chillies
1 tsp ginger - garlic fresh paste
2 tsp lemon juice
1/2 tsp coriander powder
50gms cashewnuts(pasted with 2 tsp poppy seeds (soaked for 10 mins))
1/2 tsp fresh ground spices of 1/2 cm cinnamon stick + star anise -1 cm
1 tsp salt
2 cups water
1 tbsp refined oil - 1 tbsp
for seasoning:
chopped curry leaves - little
chopped coriander leaves - little
chopped onion pieces - little
1/2 tsp mustard seeds
5 crushed cashews
1 tsp refined oil
Directions
1.Marinate chicken pieces in lemon juice,ginger-garlic paste and salt.
2.Make a paste of green chillies and onion .
3.Heat oil in a pan and saute onion -green chilli paste,ground spice masala,coriander powder,then marinated chicken pieces along with the marinade and saute this for 2-3 mins.
4.Now,add the cashew paste,few chopped coriander leaves and salt and add water.
5.Cover the pressure pan and cook upto 4 whistle.turn off the flame and keep aside for 10 mins.
6.Take a kadai and heat oil,add mustard seeds,chopped onion,crushed cashews,curry leaves and chopped
coriander leaves.
7.Saute this seasoning well and pour this to the cooked chicken curry and mix well.
8.Serve hot with rice or idli,dosa,naan,parota and chapati.
