Yogurt Mixed Chutney

Reached Chennai after a short trip abroad last night. Happy to share with U the glad news that I won 3 Runnerup Mugs in Amul Master Chef India 2, conducted by Indiblooger.in and Amul, for the following recipes  Panchamirtha Fruity Nuts Salad, Chicken Tikka in Orange Sauce and Coconut Chicken Manchurian. I was declared a Second Runnerup for this recipe post of  Fiery Grilled Chicken - SetsYou On Fire as one among ten Indibloggers in the KFC Fiery Grilled Contest conducted by  Indiblogger.in and KFC.  Thank U so much Indiblogger, KFC and Amul. This is a simple and so delicious chutney that can go well with Chapati,Pulao, Biryani, Fried Rice etc. and an ideal replacement for raita. Yummy to try and taste and very flavorful or can have it alone. Try this Yogurt Mixed Chutney and Enjoy Easy n Tasty Meal at home. BonAppetit!.

Yogurt Mixed Chutney
Ingredients:
250 ml Lowfat yogurt
1 small green brinjal - (grilled or Microwaved(10 - 12 mins) till done and Skins removed and pulped)
1/4 tsp grated ginger
1 1/2 tsp chopped mint leaves
½ tsp sugar
½ tsp salt
1 green chilli
1 - 2 Green Olives - pitted
1/5 tsp jeera
1 tsp grated coconut(optional)
1 tsp roasted and skinless -peanuts(optional)

(optional) seasoning:
2 red chillies
1/4 tsp mustard seeds
a pinch(very little) of asafoetida
2 sambar onions - chopped fine
few curry leaves
1 tsp olive oil
Directions:
1.Grind all the ingredients(except Yogurt and that of seasoning) coarsely.
2.Now add Yogurt and grated coconut(optional) and pulse this again 2-3 times.Pour the pulsed Chutney to a bowl. Keep it aside or serve it with Chapati,Pulao, Fried rice or Biryani.Yummy!.

For the Seasoning(optional):
1.Heat olive oil and do seasoning with the above mentioned seasoning ingredients.
2.Add it to the Yogurt Chutney when u serve this tastematch.

Olive Chutney

This Chutney is healthy,nicely olive-flavored and super yumm. If U have extra Canned olives at home or left-over Olives untouched, then  try  this chutney before it go wasted. This very simple and easy to do chutney needs 5 mins time in the kitchen and serves 4 nos.U can use it as a spread(centre) for Masala Dosa or Vada Pav instead of  red chilli chutney or Peanut chutney spread respectively - if done without grated coconut but adding 1 sambar onion instead. This can best-accompany all Indian Breads and variety rices.Try it at home when U need a healthy variation. Enjoy Easy recipes at home. Enjoy Ur Meal!. BonAppetit!.

Olive Chutney
Ingredients:
100 gms Green Olives - canned n pitted
1 small green chilli
1/2 tsp grated ginger or 2 small garlic cloves
3 tbsp grated coconut
a pinch of salt - optional since salt has already been added to the olives
For the seasoning
1/2 tsp mustard seeds
1 tbsp finely chopped onions
2 small red chillies
1 sprig curry leaves
1 tsp oil
Directions:
1.Clean or wash Olives and grind it with ginger or garlic, green chilli,grated coconut and salt if needed.
2. Heat 1 tsp oil in a kadai and fry the seasoning ingredients starting from the mustard seeds and in the same order till curry leaves.When it get roasted,add it to the ground Olive Chutney and serve it with Indian Breads or variety rice.
Healthy n Yummy Chutney indeed!.

Healthy Green Chutney


I  used to have this Healthy Green Chutney regularly when I was Young. Iron-rich Grandma's recipe is given here to try at home
Ingredients:
Take a handful of curryleaves, a handful of coriander leaves, 4-5 mint leaves, 5 black peppercorns, 1 garlic
clove, 1 cm ginger piece, 1/4 tsp salt,1 tsp lemon juice and 1 tbsp coconut oil.

Direcions:
Grind curry leaves, coriander leaves, mint leaves with pepper corns,garlic,ginger and salt. Heat oil in a kadai, add this ground green paste,saute it for 3-4 mins on good flame stirring it continuously till its rawness diminishes, add lemon juice and mix it well.Can have it mixed with steamed rice or Indian Breads.

Cabbage Chutney

U might have heard abt Cabbage Raita or Coleslaw done with grated cabbage.Chutney can be made too.I learned this recipe from my Mother-In-Law,Mrs.Creda Isaac(an expert cook herself) when I got married - 15 years ago.This chutney recipe is given here as today's Healthy recipe.This chutney is tastier and healthier than coconut chutney.Trust me,it is very easy-to do too.This Chutney will appear on our Dinner Table whenever we needed a variation on tastematch.Can be done in 5 mins time and this serves 4 nos.U can do this as thick Chutney(Thogaiyal ) also.Serve this Cabbage chutney with idli,Dosa, Vada, Bajji,Bonda and other Indian Breads etc.Enjoy Easy Cooking at home.Enjoy Ur Meal!.BonAppetit!.

Cabbage Chutney - Very tasty chutney made with cabbage
Ingredients:
    100 gms cabbage - grated
    2-3 big green chillies
    gooseberry size tamarind(optional)
    2 tbsp grated coconut or split besandal(pottu kadalai)
    2 whole red chillies
    1/2 tsp mustard seeds
    1/2 tsp split urad dhal
    2 tsp chopped sambar onions
    few curry leaves
    2 tsp + 1 tsp refined oil
    1 tsp salt or needed

Directions:
    1.Heat 1 tsp oil in a kadai and saute grated cabbage for 2 mins on good flame.
    2.Allow it to cool.Grind it with green chillies, tamarind (optional),salt and grated coconut or split besandal(pottu kadalai) to a fine paste with 50ml water and then add 200 ml mixer-grinder jar washed water.
    3.Heat the remaining 2 tsp oil in the same kadai and saute mustard seeds,split urad dhal,chopped sambar onions and curry leaves.
    4.Add this seasoning to the ground cabbage chutney.
    5.Serve this Cabbage chutney with Idli,Dosa and other Indian Breads etc.

Raisins Chutney

Raisins are dried grapes.The health benefits of raisins include relief from constipation,anemia and helps in weight gain.Indians use Raisins or kismis to season or garnish the desserts and sweets.Infact, U can do great recipes with it - like Jam,Pickle,Chutney,etc. This is an easy to do recipe.This sweet and tangy Raisins chutney goes very well with Idli, Dosa,Chapatis,Bread etc. Kids will love it.Try this at home and post ur feedbacks.Enjoy Cooking at home.Enjoy ur Meal!.Bon Appetit!.

Raisin Chutney - Tangy chutney made with Raisins


Ingredients:
    50 gms raisins(one handful)
    4 whole red chillies
    gooseberry size tamarind
    very little ginger(1 cm size)-peeled
    3 tbsp grated coconut
    1/2 tsp mustard seeds
    1/2 tsp split urad dhal
    2 tsp chopped sambar onions
    few curry leaves
    1 tbsp  refined oil
    1/2 tsp salt or needed
Directions:
    1.Heat 1 tsp oil in a kadai and saute the raisins for 20 secs only.
    2.Allow it to cool.Grind this with 2 red chillies,tamarind,ginger,salt and grated coconut to a fine paste with little water(1/2 cup).
    3.Heat the remaining 2 tsp oil in the same kadai and saute mustard seeds,split urad dhal,chopped sambar onions,the remaining 2 red chillies and curry leaves.
    4.Add this seasoning to the ground raisins chutney.
    5.Serve this sweet and tangy Raisins chutney with Idli,Dosa,chapatis,bread etc. Kids will love it.

Tomato - Onion Chutney - a Microwave Recipe

This Chutney is prepared using pepper and green chillies.Red chillies r not added.Very tasty chutney to go with Idli, Dosa,Chapati,evening Indian snacks,etc.Try it once.U will see ur family  asking for it more.Try this at home and enjoy!. Bon Appetit!.

Tomato - Onion Chutney( a Microwave Recipe)-Chutney done with Tomato,small onion and grated coconut

Ingredients:
15 sambar onions or 2 big onions-cut into bite size pieces
2 big tomatoes-sliced
2 small green chillies
2 tsp urad dal-split
1 big garlic clove
1 tsp lemon juice
4-5 pepper corns
1 tsp salt-to taste
4 tbsp grated coconut
2 tsp + 2 tsp refined oil
1/2 tsp mustard seeds
1 tsp gram dal(split)
1/2 tsp split uraddal
few curry leaves
300 ml water

Directions

1.Take a microwave bowl and add 2 tsp oil,onion pieces,2 tsp split uraddal and tomato slices.Mix this well and M/W this On High for 2 mins.Take the bowl out.
2.In another bowl,add 2 tsp oil with 1/2 tsp mustard seeds,1 tsp gram dal(split),1/2 tsp split uraddal and few curry leaves.Microwave this in high for 2 mins.Take the bowl out.
3.Meanwhile,Grind the oil-sauteed onion + tomato slices with salt,pepper corns,2 small green chillies,garlic clove and grated coconut into a fine paste adding 200ml water.
4.Add the lemon juice and the Step 2 seasonings to this chutney and mix this well..
5.Serve this tomato-onion chutney with Idli,dosa,chapati, etc,.
