Fish in Banana leaf

This Fish preparation is Popular in West Bengal and Kerala.Thus prepared Fish will be little crisp outside and tender inside.Its not that authentic recipe but a variation of it.It can be served as a delicious starter on special occasions.Can be done in 15 mins time and serves 4 -5 no.s.Try this at home and Enjoy Ur meal!. BonAppetit!.

Fish in Banana leaf- A Traditional Fish Preparation
Ingredients:
    1 Pomfret fish - (cut in one side,slit and cleaned ready for masala stuffing)
    1 tsp chilli powder
    1/4 tsp turmeric powder
    1/2 tsp freshly ground pepper powder
    1/2 tsp ginger-garlic paste
    3/4 tsp salt
    1 tsp chopper coriander leaves
    1 tsp fried curry leaves
    3 shallots - pasted
    1/4 tsp cumin powder
    1/2 tsp saunf powder
     little Fried Onions
    1 banana leaf
    3 tbsp refined oil
Directions:
    1.Mix the spices masala and onion paste.Slit the Fish Outer.
    2.Apply or coat the masala evenly over the fish and inside it too.
    3.Clean a Banana Leaf.Apply oil on Banana Leaf(inside part of the wrapping leaf that touches the Fish).Wrap the fish in banana leaf.
    4.Heat 2-3 tbsp oil in a Tawa and place the fish (wrapped in banana leaf),close the the tawa with a lid and cook  for 7 mins per side on medium-flame.
    5.Before serving the fish,brush little refined oil(or coconut oil)on the fish.Garnish with fried onions,chopped coriander leaves and fried curry leaves.
    6.You can do the same recipe by wrapping the fish with aluminum foil.
    7.This fish preparation is tastier than the normal fish fry.

hi kitchen flavors, i have to check out saunf powder, never know bout this before.
we do wrap up fish in banana leaves too with lots of marinades, but adding fried curry leaves is something new to try out..thanks for that

I have used foil for this but it didn't come out so good. Is there something I need to do when using foil instead of banana leaf?
