This simply colourful and simple stirfry recipe is given here as Healthy Recipe of the Day.Beetroot and Spinach are good blood generator and best suggested for anemic patients.This delicious-try recipe is an easy to make sidedish and needs 10-12 mins microwave cooking time to serve 4 nos.This sidedish is a good combination for rice with Sambar,Kara or vathal Kuzhambu or Variety Rices or chapatis.Enjoy Easy Cooking at home!.Enjoy healthy Meal!.BonAppetit!.
Spinach Beetroot Stirfry - Palak Beetroot stirfried with spices
Ingredients:
3 cups chopped Palak(spinach) leaves - clean well before chopping
100 gms grated Beetroot
1 big onion chopped fine
1-2 green chillies - chopped fine
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp split uraddal-uzhunthu
1 tbsp grated coconut-optional
1/2 tsp or salt to taste
150 ml or 1 cup water
few curry leaves
few coriander leaves
2 tsp refined oil
Directions:
1.Take a microwave-safe bowl.Add refined oil,chopped onions,cumin seeds,mustard seeds,split uraddal and curry leaves.
2.Microwave this on high for 1 1/2 mins.Take the bowl out.
3.Add grated beetroot,chopped palak,salt,green chillies and water except grated coconut and Microwave(high) this for 6-7 mins.
4.Take the bowl out after the 6th min and mix the mixture well.
Again microwave this on high for 3-4 more mins or till water runs dry.
5.Take the bowl out,Add chopped green coriander leaves and mix grated coconut with the Palak-Beetroot stirfry and do 1 min microwave on medium-high.
6.Serve this Palak-Beetroot StirFry hot with rice and Sambar or Kara Kuzhambu or Variety Rices or chapatis.
