Shahi Mutton korma

This rich creamy and traditional Mutton Korma  is a popular Meat Gravy with  unique flavor and taste (among North-Indian Muslims).Using right amount of ingredients is essential to get that fine-flavor added. This tasty saffron-flavored mutton korma is slowly cooked with mild spices and cream.Some get it done using plain milk instead of coconut milk.Needs 25 mins cooking time.It is normally done as a thick gravy but U can add 50-100 ml water more to make-up the quantity of the dish.Enjoy Cooking at home!.Enjoy Ur Meal!.BonAppetit!.

Shahi Mutton korma - Mutton pieces cooked with saffron,other spices and Cream


Ingredients
    400 gms boneless mutton pieces-cleaned
    2 medium onions(1 pasted and 1 chopped fine)
    1/2 cup low fat yogurt
    1 tsp of ginger and garlic
    few bay leaves and 2 blanched green cardamoms
    a pinch of saffron
    1 tsp salt- to taste
    2 tbsp low-fat cream
    6  nos almonds
    1 tbsp refined oil
    1/2 tsp coriander powder
    1/2 tsp freshly ground pepper powder
    1/2 tsp paprika
    1/4 tsp maze powder
    1/2 tsp red chilli powder
    1/2 tsp garam masala
    2 tbsp coconut milk powder dissolved in 150 ml luke-warm water or 150 ml fresh coconut milk
    1 tbsp blanched almond flakes

Directions
    1.Soak saffron in hot water.
    2.Prepare a masala paste of  onion and almonds.then mix it with 1/2 cup yoghurt and 1/2 tsp ginger-garlic paste.Marinate the mutton pieces in this yoghurt mixture for an hour.
    4.Heat oil in a pressure pan and fry the chopped onion.Keep it aside.
    5.Take a pressure pan.Add the mutton pieces,bay leaves,green cardamoms,1/2 tsp ginger-garlic paste,cumin powder,maze powder,coriander powder and red chilli powder.Mix it well and cook till the masala dries.
    6.Add one cup of hot water and pressure cook for 10 minutes or upto  5 whistles and then keep it aside for the pressure to be released.
    7.Add salt,pepper powder,paprika powder,garam masala and coconut milk and cook till oil sepataes on top.
    8.Add the fried  onions and the beaten cream.
    9.Add soaked saffron  with water to the cooked mutton masala and cook for 2 more mins.Garnish it with chopped coriander leaves and blanched Almond flakes on top.
    10.Serve it hot with Steamed rice or Indian Breads.
