Done in 30 mins time and best served with all Indian Pulavs,ghee rice,jeera rice, Biryani,Appam,Idli,Dosa nd other Indian Breads.Try this tasty mutton stew at home.(Follow the same recipe for Chicken Stew-except pressure-cooking upto four whistles).
Mutton Stew - a Stew done with mutton,coconut milk and other spices
Ingredients:
500 gm mutton pieces-cleaned well
1 onion - chopped fine
3 green chillies - slit lengthwise
3 tbsp coriander leaves-chopped fine
5-6 mint leaves-chopped fine(don't add more)
1 1/2 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp lemon juice
2 tbsp ground masala of (3/4 tsp saunf,1 cm cinnamon stick,1 clove,1 green cardamom,12 cashewnuts,1 tbsp
poppy seeds,2 tsp coriander seeds,2 green chillies)
1 cup thick coconut milk
1 cup second coconut milk
1 cup third coconut milk
1 1/2 tsp salt
2 tsp refined oil with 2 tsp ghee
1 cup water
Directions:
1.Heat oil and ghee in a pressure pan and saute onions,green chillies,few coriander and mint leaves, ginger-garlic paste and turmeric powder for 3-4 mins.
2.Add the ground masala and saute for 2-3 mins.
3.Then add the cleaned mutton pieces and salt and stir this for 3-4 mins.
4.Add the third coconut milk,1 cup water and coriander leaves and cover the lid .Pressure cook upto 5 whistles or 12 mins on medium flame.(Note:Don't pressure-cook the second and the first coconut milk-the
stew won't turn out well if u do so).
5.Open the pan after the pressure is released and add the first and the second coconut milk and check
for salt.Let this simmer for 7-9 mins and turn off the flame.
6.Sprinkle 1 tsp lemon juice on top and garnish with coriander leaves.
7.Serve this hot with with all Indian Pulavs,ghee lice,jeera rice,all Biryanis,Appam,Idli,Dosa and other Indian Breads.
Note:This can be done with selective vegetables together with mutton pieces.Add some peeled raw potato
pieces or carrots or cauliflower florets in step 3 after stirring the mutton pieces 3-4 mins.
