Potato(or Veg.) Stew

This recipe is from my Mother-in-Law Mrs.Creda Isaac.She has taught me many of her family recipes and this is one of them.She used to add a Seven Spices Mix(Ground Masala) in the recipe which makes the Stew tastier than my less-spiced plain preparation.This can be done in 25 mins time and best served with all Indian Pulavs, ghee lice,jeera rice,Biryanis,Appam,Idli,Dosa and other Indian Breads.Try this tasty potato(vegetable) stew at home & drop ur comments.

Potato(or Veg.) Stew - Stew done with potato or veg. and spices

Ingredients:

2 or 3 big potatoes - peeled and cut into 1 1/2 inch sized pieces
(1 small carrot- peeled and cut into bite sized pieces
5 french beans - cut into 1 1/2 inch length pieces
6-7 cauliflower florets-cleaned well)-Optional for Mixed Veg Stew
1 cup thick coconut milk
1 cup second coconut milk
1 cup third coconut milk
1 tsp grated ginger
2 tsp ground masala of (1/2 tsp saunf,1 garlic cloves,1/2 cm ginger,a small cinnamon stick,1/2 clove,1 green cardamom,5 cashewnuts,1 tbsp poppy seeds,1/2 tsp coriander seeds,2 green chillies)
3 green chillies - slit lengthwise
3 tbsp coriander leaves-chopped fine
5-6 mint leaves-chopped fine(don't add more)
1/4 tsp turmeric powder
1 tsp lemon juice
1 1/2 tsp salt
2 tsp refined oil with 2 tsp ghee
1 cup water

Directions:

    1.Heat oil and ghee in a pressure pan and saute onions,green chillies,few coriander and mint leaves,grated ginger and turmeric powder for 3-4 mins.
    2.Add the ground masala and saute for 2-3 mins.
    3.Then add the cleaned potato(or the vegetable) pieces and salt and stir this for 3-4 mins.
    4.Add the third coconut milk,1 cup water and coriander leaves and cover the lid.Pressure cook upto 3 whistles(4 whistles for potato stew) or 9-10 mins on medium flame.(Note:Don't pressure-cook the second and the thick coconut milk - the stew won't turn out well if u do so).
    5.Open the pan after the pressure is released and add the first and the second coconut milk and check
for salt.Let this simmer for 9-10 mins and turn off the flame.
    6.Sprinkle 1 tsp lemon juice on top and garnish with coriander leaves.
    7.Serve this hot with with  all Indian Pulavs,ghee lice,jeera rice,all Biryanis,Appam,Idli,Dosa and other Indian Breads.

 Note:U can add some mixed vegetable with potato pieces in step3 and do this a vegetable Stew.
