This Salad cum Sidedish is Healthy recipe of the Day.This recipe of mine got published in Khanakhazana 3-4 yrs back and welcomed widely.Both (greens and pomegranate fruit) the ingredients are highly nutritious.This Pomegranate-Greens Salad is an easy and tasty try to make ur kids have both.U can include a cup of Oats in Step 1 (and have this salad as such).This serves 3-4 nos and needs 3-5 mins microwave cooking-time only.Kids will luv this crunchy and colourful pomegranate seeds with greens.Enjoy Ezy Cooking.Enjoy ur Meal!.Bon Appetit!.
Pomegranate-Greens Salad - (a Microwave Recipe) - Chopped greens with spices and Pomegranate seeds
Ingredients
3 cups finely-chopped Greens or Spinach leaves-clean well before chopping fine
1 cup pomegranate seeds
1 cup finely chopped onions
2 green chillies - slit lengthwise
1/2 tsp white pepper powder
2 tbsp grated coconut - optional
1/2 tsp salt - to taste
1 tsp lemon juice
1/2 cup water
few coriander leaves
2 tsp olive oil
Directions
1.Take a microwave bowl. Add salad or olive oil,chopped onions,Slit Green Chillies,chopped Greens(Spinach),salt,1/4 cup water and coriander leaves.
2.Microwave this on high for 3-5 mins or till water runs dry.Take the bowl out.
3.Add lemon juice and white pepper powder and mix well.
4.Mix the grated coconut well with the Greens Salad.
5.Finally, add pomegranate seeds before serving this and mix this salad well.Healthy, Crunchy Pome greens salad is ready to be served. U can have it as a side-dish with Steamed Rice and Sambar or Kara Kuzhambu or any Variety Rice.
