Mashed Spinach with Corns - A Microwave Recipe

Palak(Indian Spinach) is one type of greens available in India.Its rich in Iron and vitamins.Its better if u could add this in ur Diet everyday with rice for Lunch.U need to revise its preparations like stir-fry,Curry with Lentils or even mashed greens to make sure that u don't get bored with it. U can try this dish with Spinach be done in 10 mins time. Try this at home and post ur comments.

Mashed Spinach with Corns - A Microwave Recipe - If cooked Greens mashed and corns added


Ingredients

    2 palak bunches - Chopped fine and cleaned well
    1/2 cup Sweet (American)Corn kernels - if u use frozen - soak this for an hour
    6-8 pepper corns (as per taste)
    1 tsp cumin seeds
    3/4 tsp salt - to taste
    250ml water
 
    For the Seasoning:
    1/2 tsp mustard seeds
    1 garlic pearl - finely chopped
    1/2 tsp cumin seeds
    few curry leaves
    1-2 tsp refined oil

Directions

    1.Take a microwave bowl and add Chopped Greens,1 cup water,6-8pepper corns,3/4 tsp salt and water.Mix this well. Microwave this on high for about 5-6 mins.Take the bowl out and allow this to cool.
    2.Meanwhile take another microwave bowl,add 1/2 cup water and 1/2 cup Sweet Corn Kernels.Microwave this on high for 5 mins.
    3.When the mixture mentioned in Step 1.comes to room temperature, mash the greens using mixer-grinder
(2-3 pulses).
    4.Take another bowl and mix the ingredients given in tadka and microwave this for a min on high.Take the bowl out.Mix the mashed greens,boiled Sweet-corns well and the seasoning.
    5.Microwave this on high for a min.Serve this with rice.
