(Purple)Greens Paruppu Thoran - a Microwave Recipe

A simple variation of the dish Greens Stir-fry is given here to try at home.This greens preparation is tastier than the stirfried greens and will be loved by all. This can be taken as such or with rice or with Chapathi.Try this at home and enjoy this dish(Bon Appetit!).

(Purple)Greens Paruppu Thoran - a Microwave Recipe



Ingredients

3 cups chopped Greens(Purple colour Sirukeerai)-cleaned well
2 garlic cloves - chopped
3 tbsp split yellow moongdal(boiled for 5 mins in 3/4 cup water or microwave this on high with 3/4 cup water for 8 mins)
2 green chillies-slit lengthwise
a pinch of turmeric powder(less than 1/4 tsp)
2 tbsp grated coconut
1 onion -chopped fine
1 tsp jeera seeds
1/2 tsp mustard seeds
1 tsp salt
1 cup water
2 tsp refined oil

Directions

1.Take a microwave bowl,add 2 tsp oil,mustard seeds,cumin seeds and chopped onions and microwave this on high for 2 mins.
2.Take the bowl out,add the chopped greens,chopped garlic cloves,salt,green chillies and turmeric powder and mix well.
3.Add the half-cooked split moongdal along with water,1 cup water and mix well.Microwave this on high for
5-7 mins.
4.Take the bowl out and mix well.Add the grated coconut and microwave this on medium for another 3 mins.
5.Serve this hot with rice and kara kuzhambu or Puzhi Kuzhambu or rasam or with chapatis.
