Upuma is a South-Indian short-meal Speciality mainly done with Semolina or Suji.For variation U can try it with pounded Lentils(Paruppu) and .with or w/o adding chopped Vegs.It can be done in 12 mins cooking-time and serves 4 nos.Can have it with thick Coconut Chutney or with Avial.Enjoy Easy Cooking at home!. Lentils Veg Upuma - Done with pulsed Lentils and Veg added
Ingredients:
1/2 cup Gramdal (Kadalai Paruppu)
1/4 cup Turdal
1/4 cup raw rice
1 cup chopped Vegs(Carrots,french beans...)
a pinch of asafoetida
1/2 tsp mustard seeds
5 whole red chillies(or green chillies)
1 Onion - finely chopped
1 sprig curry leaves
3 tbsp grated coconut
1 tbsp refined oil
1/2 tsp salt or to taste
1/2 tsp grated ginger
10 crushed cashews (roasted in 1 tsp ghee)
Directions:
1.Soak the Turdal,rice and Gramdal in 1 litre water for an hour.Then drain the water and pulse it with 2 redchillies 3-4 times coarsely.
2.Heat oil in a pan, fry mustard seeds,grated ginger,a pinch of asafoetida,3 whole red chillies,chopped onions and curry leaves and saute them for a min.
3.Add chopped Veg and stir it.Add 1 cup water and salt and when it boils add the pulsed Lentils.Stir-cook it for 5 mins atleast.Sprinkle 1/4 cup water after 3rd min.Check for doneness of the Upuma,if needed stir-cook a min more,sprinkling little water
4.When it gets done, add grated coconut,chopped coriander leaves and crushed cashews and mix well.Turn off the flame.
5.Serve it hot with thick coconut chutney and Avial.
