Fried Brinjal in Creamy Yoghurt Sauce

This Brinjal Yoghurt gravy is made from a blend of coconut and cashews and done with little spices available in your kitchen.Adding Yoghurt gives the gravy a twist in taste.I found it good enough to be made for a change. Just try it.It can be done in 15 mins Cooking-time and serves 4-5 nos. This can be done with Fried Okra or potato or french beans or spinach also.It will go with Steamed rice or Ghee Rice or Jeera Rice or Fried Rice or pulao or Chapati instead of  Veg.Raita.

Fried Brinjal in Creamy Yoghurt Sauce - Fried Brinjals cooked in ground coconut masala with yoghurt.


Ingredient
    200 gms Brinjal
    10 shallots - chopped fine
    2 green chillies
    50 ml fresh Low Fat yoghurt
    5 cashew nuts
    2 tsp soaked Poppy seeds
    2 tbsps grated coconut
    1-2 bay leaves Crushed
    1/4 cm maze powder
    1/2 tsp fresh garlic-ginger paste
    2 tsps garlic peanut powder
    1/2 tsp fenugreek seeds  
    1/4 tsp chilli powder
    a pinch of turmeric powder
    2 tsp cornflour
    1/2 + 1/2 tsp salt to taste
    1/2 tsp mustard seeds
    2 tsp + 1 tbsp oil
    few curry leaves  and coriander leaves for seasoning

For the Garlic Peanut Powder:
2 garlic pearl + 1 tsp urad dhal + 2 tsp peeled peanuts + a pinch of asafoetida - Dry- roast them for a min and ground them to a paste.

Directions
    1.Cut brinjals into 1 cm size round pieces,mix them with red chilli powder,corn flour,salt and shallow fry them in 1 tbsp oil and set aside
    2.Grind grated coconut with 2 green chillies, cashews and soaked poppy seeds to a smooth paste adding water.
    3.Heat 2 tsp oil and season with crushed bay leaves,mustard seeds,shallots,maze powder,ginger-garlic paste and curry leaves.Saute it for 2-3 mins.
    4.Add Garlic peanut powder and stir it for a min.
    5.Now add the fried Brinjals and stir it for few secs.Add the ground Coconut paste and salt.If it is not spicy enough u may add a pinch of chilli powder to it.
    6.Allow to cook with a little water so that it could not stick to the bottom. cook till oil sepeartes for 5-7
mins.
    7.Add 1/2 cup plain yoghurt and coriander leaves and boil for few more secs.Mix it well and Turn off the flame.
    8.Serve it hot with Steamed rice or Ghee Rice or Jeera Rice or Fried Rice or pulao or Chapati instead of
Veg.Raita.
