Pesarattu is a speciality 'Lentil Pancake' or 'Green Moongdal Adai' done in Andhra Pradesh. This can be done with Bran Rice added and best served with a spicy ginger chutney as a healthy Breakfast/Dinner option. This is very filling as well as light Healthy Snack item. This can be done in 15 mins and yield 9-10 Branrice Pesarrattu. U can try this adding Spinach or Oats or Uraddal and its taste infact increases with this extra ingredients. BranRice Pesarattu Pancake: Deliciously Healthy Lentil based Pancake
Ingredients:
3/4 cup Bran Rice - soaked for 2 hours
100 gm Sprouted Moong dal -soaked for 30 mins and drained
1/4 cup split yellow moongdal -soaked for an hour
1 cup finely chopped onions
1/4 tsp grated ginger (adrak)
1/4 tsp jeera
2 small green chillies
1/2 tsp salt to taste
3 tbsp Rice flakes or Aval or poha - 5 mins soaked
3-4 curry leaves and 1 tsp finely chopped coriander leaves
2 tbsp grated coconut - optional
50 ml refined oil
Directions:
1.Wash the soaked Sprouted Moongdal.yellow moongdal and Bran Rice, drain excess water and grind in a mixer grinder along with soaked riceflakes, grated ginger,jeera and green chilli to a smooth batter without adding water.
2.Add salt,chopped onions,grated coconut(optional),Curry leaves and coriander leaves.Mix it well. Keep aside.
3..Heat a Non-stick Tawa,add a spoonful of the batter to thge Tawa at the centre and spread it like dosa from the centre.Sprinkle a little oil around.
4.Cook till the pesarattu becomes crisp and flip it the other side so that it gets done sprinkling a tsp oil around.
5.Repeat the same process to do all pesarattu.
6..Fold it with ginger-split besandal spread and serve it hot.
For The Ginger Chutney:
