Curryleaves Biryani

This aromatic Biryani is simple made and healthy.U can try this recipe with coriander and mint leaves or try adding chopped greens or Spinach.It can be done in 20 mins and serves 4-5 nos. Try this Biryani for vatiation and serve it with boiled Egg slices or Potato Chips or ur choicest raita. Enjoy ur Meal!. BonAppetit!.

Curryleaves Biryani
Ingredients:
1 1/2 cups(150 gms) Basmati Rice
1 tbsp ghee
2 cloves + 2 cardamoms + 1 inch cinnamon stick(crushed) + 1 bay leaf
1/6 tsp turmeric powder
2 sprigs of curry leaves
1 onion - sliced fine
1 tomato - sliced fine
1 tsp Aachi Biryani Masala
1 cm ginger piece + 2-3 garlic cloves + 1 green chilli pasted with 5-6 sprigs of curryleaves
2 green chillies - slit
 1/2 handful coriander leaves
1 tbsp mint leaves
1/2 tsp salt or needed
2 tsp refined oil
Directions:
1.wash the basmati rice and  ghee-roast it for 2 mins and keep it aside.
2.Heat 2 tsp oil  in a pressure pan. Add cloves +  cardamoms + cinnamon stick + bay leaf + chopped 2 sprigs o curry leaves + chopped coriander leaves + chopped mint leaves.
3.Fry the onions and slit green chillies for 4 mins till done golden brown and then add the tomato slices with Aachi Biryani Masala powder,turmeric powder and salt and saute it or 3 mins.
4.Add ginger garlic paste cashew masala .Check for salt and stir-fry it for 3 mins.
5.Add the ghee-roasted basmati rice with 2 1/2 cups water and mix well and cover and cook upto 1 whistle and turn off the flame.Wait for the pressure to be released.
6.Serve it hot with raita of ur choice, boiled Egg slices, chips,stew or korma of ur choice.

Coriander Oats Biryani

Biryani may have its origin in West Asia(Iran and Arabia) but has become an integral part of Indian Culinary for over 100 years.This delectable and versatile dish has been prepared in mind-blowing varieties from the mild-spiced Dum Biryani, well-spiced Tamilnadu Biryani to rich Mughlai Biryani.The aromatic blend of spices used gives an appetizing flavor that lingers in ur tastebuds even a day long if done well.The varieties include finger-licking Biryanis done with different meat types,different vegs and different grains like Basmati, Wheat granules, Oats,Rice-flakes,Bread Pieces etc...This Biryani is done with Oats and Coriander leaves.Try this deliciously aromatic Biryani at home and Enjoy Ur week-end!.Enjoy ur Meal!.BonAppetit!.

Coriander Oats Biryani - Flavorfully Appetizing
Ingredients:
150 gms Oats
Coriander Leaves - 1 bunch
1 big onion - sliced fine
1 tomato - sliced fine
1 cardamom,1 bay leaf-crushed,1 clove,1 cm cinnamon stick
1 tsp biryani masala
1 cm ginger piece
1 big garlic clove
1 green chilli - slit fine
1 tbsp ghee
2 tsp + 2 tsp refined oil
1/4 tsp salt or needed
Directions:
1.Oil-saute the chopped coriander leaves for 5 mins and keep it aside to cool.Grind it coarsely without adding water.
2.Ghee-saute the oats for 2 mins on medium flame and turn off the flame before it turns colour.
3.Heat 2 tsp oil in a kadai and fry 1 cardamom,1 bay leaf-crushed,1 clove and 1 cm cinnamon stick for 30 secs.
4.Add onion slices  and saute it for 3 mins.Then add green chilli,tomato slices,salt,Biryani masala and saute it for 3-4 mins till tomato gets done.
5.Add the coriander leaves paste and saute it for 2 mins.Check for salt.
6.Now,add the ghee-roasted oats and sprinkle 2 tsp water every 30 secs 3-4 times(don't add more) and stir-cook it till done or blended well with spices for say about 3-4 mins.
7.Serve it with raita of ur choice and stew or korma.Yummy!.

Badham Mutton Biryani

A simple and rich Mughlai Biryani preparation is given here for those who want Biryani differently.U can also try this recipe with 1 tomato-chopped fine and 2 tbsp cashew paste and with few crushed cashewnuts.Try this at home and enjoy your Meal!.BonAppetit!.

Badham Mutton Biryani - Mutton Biryani-  little differently
 Ingredients:
    2 cups basmati rice-washed and sauteed in 2 tsp ghee
    1 kg mutton pieces-cleaned
    1 cup thick coconut milk
    2 cups second coconut milk.
    1 tbsp ghee
    2 cups golden-fried onions
    1 tsp mint-coriander leaves paste
    1 tbsp ginger-garlic paste
    1 tbsp ground-spices( 1 cinnamon stick,2 cloves,2 green cardamoms,1/2 tsp saunf, 10 pepper corns)
    1 tsp nutmug powder
    7 green chillies-slit
    1 cup fresh curd
    a pinch of saffron soaked in 2 tbsp rose water
    2 tbsp almond paste and 5 crushed almonds(peeled)
    1/4 tsp black-cumin seeds(crushed)
    2 tsp sugar
    juice of half-lemon
    1 tbsp refined oil
    few coriander and mint leaves

Directions:
    1.Wash the mutton pieces with little salt atleast 5 times.keep it aside.
    2.Heat refined oil in a kadai and add saffron,sugar and fried onions and saute for 3 mins.
    3.Take a pressure pan,add mutton pieces,ginger-garlic paste,saffon-fried onions step 2 mixture, ground spices,mint-coriander paste, almond paste, curd,green chillies,salt,lemon juice and ghee.
    4.Now add 1/4 cup (ginger-garlic paste) ground masala washed water,1/4 cup almond paste washed water and  1/4 cup mint-coriander paste washed water.
    5.Pressure cook upto 5 whistles or 10-12 mins and keep it aside for 10 mins.
    6.Prepare the coconut milk(1 + 2 cups).Wash and ghee-saute 2 cups basmati rice.
    7.Open the pressure cooker and add ghee-sauted basmati rice and 3 cups fresh coconut milk.Sprinkle 1 tsp salt,crushed black cumin seeds and nutmug powder.Mix well for a min.
    8.Pressure cook this upto 1 whistle and turn off the flame.
    9.Serve this Mutton Biryani hot with raita of ur choice or kebab or boiled Egg or Chips or Korma or stew.

Veg Bread Biryani - A Microwave Recipe

It can be a startling teatime snack or a sizzling short-meal with a perfect accompaniment.Its an easy to do Biryani and needs 15 - 16 mins microwave-cooking time only to serve short-meals(2 nos) or Teatime Snacks (4 nos).Those who need an easy Biryani can try this recipe cause it has all the ingredients to make a special occasion memorable.U can try this recipe with Oats or few secs soaked Riceflakes(poha) for variation or with chicken or mutton or prawns using Bread pieces.Try this recipe and  Enjoy Easy Bread Biryani at home!. Enjoy Ur Meal!. BonAppetit!.

Veg Bread Biryani
Ingredients:
6 bread slices - edges removed and cut into bite sized pieces
1 onion - sliced fine
1 tomato - chopped fine
2 small green chillies - slit
1 cardamom,1/2 bay leaf - crushed,2 cloves,1 cm long -cinnamon stick
1/2 tsp ginger garlic paste
1/2 carrot - diced fine
5 french beans - chopped fine
1 small potato - peeled and chopped fine
3 tbsp fresh green peas
1 tsp Aachi biryani masala
a pinch of turmeric powder
a pinch of salt
2 tsp chopped coriander leaves
1 tbsp refined oil
Directions:
1.Add oil,cardamom,bay leaf - crushed,cloves and cinnamon stick to a Microwave-safe bowl.Add the sliced onions and green chillies. Microwave it for 2 mins on high.
2.Add the sliced tomatoes and ginger-garlic paste to the same bowl and micowave it for 3 more mins.
3.Take the bowl out and add the chopped vegetables,1/2 cup water and salt and Microwave it on high for 5 mins.
4.Take the bowl out and add turmeric powder and biryani masala powder.Mix it well.Microwave it on high for 2 more mins.
5.Add bread pieces and chopped coriander leaves to the bowl and mix it well and microwave it for 3-4 mins on medium-high.
6.Serve it hot with raita or as such.

Ezy Chicken Biryani

I tried this Biryani first time with few tips from my Mother-In-Law few years ago.This was deliciously made with few ingredients quickly...and tasted so good that I thought to share this recipe with  U here...We all know its a busy world and quick recipes r needed the most.This tasty home-made Biryani is done with few ingredients and trust me - in 25 mins.Enjoy it's rich taste.Easy to make and Great for luncheons.U can Send it to school in lunch boxes too with Raita,Chips and Boiled Egg slices.Garnish with Coriander and ghee-roasted cashews if desired.Enjoy ur Meal!.BonAppetit!.

Ezy Chicken Biryani - a Variation
Ingredients
2 Cups basmati rice- cleaned well and ghee-sauted for 2 mins(with 1 tbsp ghee)
1 kg chicken pieces-cleaned well
3 big onions- cut lengthwise
1 big tomato- sliced (don't add more)
6-7 green chillies - slit lengthwise
1 tsp ginger paste (don't add more)
1 1/2 tsp garlic paste
1/4 tsp turmeric powder
2 cloves (don't add more)
1 1/2 cm cinnamon stick- crushed
4 green cardamoms
1 bay leaf or brinji leaf
1 tsp - Aachi Biryani Masala
1 cup thick coconut milk
2 cups second coconut milk
1/2 cup chopped coriander leaves
1/3 cup chopped mint leaves
1 tsp salt or to taste
1 tbsp refined oil + 1 tsp pure Coconut Oil
1/2 lemon -juice it
few ghee-roasted cashews

Directions:
1.Heat oil in a kadai,saute brinji leaf,cloves,cinnamon stick and cardamoms in the oil.
2.Add sliced onions and saute well for 3 mins on good flame.Add green chillies and ginger and garlic paste and saute well for 2-3 mins - till the rawness of the pastes diminishes on good flame.
3.Add the tomato pieces.Saute for a min in oil with turmeric powder.Add the chicken pieces and 1 tsp - salt and 1 tsp Aachi biryani masala.
4.Add 1/2 cup water,few coriander and mint leaves and Keep stirring till the chicken and the spices blend well and the oil separates(for 5-6) mins.
5.Add few mint and coriander leaves and keep on stirring for 4 more minutes till the gravy thickens.
6.Now add the ghee-sauted basmati rice,1 tsp salt,both the coconut milks + 1/2  cup water and few coriander and mint leaves.
7.Pressure cook upto 1 whistle or 10 - 12 mins on medium flame( without adding any water).Turn off the flame.
8.Once it is done, add a dash of ghee on top , sprinkle the juice of 1/2 lemon over it .Toss gently so that the spices and the rice blend well.
9. Garnish with ghee-roasted cashews on top and serve this tasty home-made Chicken Biryani with raita of ur choice and Mutton Stew or Potato Stew or  Chicken Korma or boiled-eggs or Brinjal Biryani Masala or potato chips.

Tips:
1. Ginger paste shd be less than the garlic paste for a fine flavor.
2.Try adding chopped coriander leaves and mint leaves 3 times separately rather than once.This improves the taste.
3.U can add2-3 tbsp coconut paste-finely ground- instead of adding coconut milk.The taste never diminishes.
