Raw Mango Jam

I learned this easy to make Mango Jam from my Mother-In-Law Mrs.Creda Isaac - an expert cook herself. This needs 8 - 10 mins cooking time only.U can try this recipe with pulsed Ripe Mango,Apple,tomato, pineapple,dates,papaya,yellow pumpkin, beetroot, plums, cherry,strawberry,raisins,watermelon,seedless grapes etc and the cooking time differs with the quantity of fruits/ vegs being added.Adjust the quantity of sugar as per taste.If the Jam is done with Vegs then add 1/2 to 3/4 cups sugar more.U can do this with grated raw mango exactly the same way but pressure-cook it upto 4 whistles and then mash it nicely .This can be an ideal replacement chutney or chutney powder on a hectic Day to pair-up with Bread or Indian Breads or Biryani.Enjoy easy cooking at home.Enjoy Ur Meal!.Bon Appetit!.

Raw Mango Jam - Jam made with raw mango

Ingredients:
    4 cups + 1/2 cup chopped raw mango(350 gms)-peel and then chop it
    2 1/2 cups sugar (almost two times of the pulsed fruits/vegs)
    1 tsp vanilla essence(optional)

Directions:

    1.Grind the chopped raw mango with sugar without adding water to a fine paste - pulsing it 3 times.
    2.Pressure cook the pulsed raw mango  mixed with vanilla essence(optional) and the remaining chopped for 8 - 10 mins or upto 2 whistles.
    3.Let it cool.(Can be stored like other jams in the fridge and will stay good for 2 weeks if properly used).Serve it with Idli,Biryani etc.
