Lemon and Curd Noodles

This Lemon Noodles is done with a South-Indian touch (Using the same recipe for Lemon Rice and Sevai (Vermicelli or Rice Noodles)).It can be done in 5 mins cooking time - one of the Quickest Meals.This serves two.It can be packed for Lunch.If done for adults,U can add 1/4 tsp grated ginger while seasoning,this adds flavor and taste.The Same way U can do Curd Noodles too.Enjoy Easy Cooking at home!.Enjoy ur Meal!.BonAppetit!.

Lemon  and Curd Noodles - Indian Noodles Preparation with Lemon juice and Curd or Plain Yoghurt respectively.
Lemon Noodles:
Ingredients:
100gm noodles
1/2 lemon's juice
1/2 tsp mustard seeds
2 redchillies
1 tsp and curry leaves and coriander leaves - finely chopped
1 pack tastemaker
a pinch of salt
1 tsp coconut oil + 1 tsp refined oil

Directions:
1.Heat a non stick sauce pan and do noodles with needed water(350 ml) w/o adding tastemaker for 2-3 mins.
2.Heat both the oils,splutter mustard seeds,red chillies,curry leaves and coriander leaves.Saute it for 40 secs and add lemon juice,tastemaker and a pinch of salt-if needed.Stir it for a min and add the done noodles.Turn off the flame and mix it or toss it well.
3.Serve this lemon noodles hot or pack it for lunch(to pack it for lunch the noodles must not be done dry).

                    Curd Noodles:

Ingredients:

a pinch of salt
1 tsp coconut oil + 1 tsp refined oil

Directions:
1.Heat a non stick sauce pan and do noodles with needed water(350 ml) for 2-3 mins w/o adding the tastemaker.
2.Heat both the oils,splutter mustard seeds,red chillies,curry leaves and coriander leaves.Saute it for 40 secs and the done noodles.Mix it or toss it well.Turn off the flame.
3.Add a pinch of salt and curd or yoghurt and mix it well.
4.Serve this Curd noodles hot sprinkling taste maker on top or pack it for lunch(to pack it for lunch the noodles must not be done dry).

Lemon Chicken

This recipe gives u the preparation of tasty and tangy Lemon Chicken -  done in Indian way.Try this at home and enjoy the dish.Very mild spiced and glowing chicken is all set to accompany bread and Indian breads.This can be served with white sauce.Enjoy cooking at home with easy to do recipes.Enjoy ur meal!.Bon Appetit!

Lemon Chicken - Chicken prepared with lemon juice and other spices

Ingredients

500 gms boneless chicken pieces(preferably breast pieces-3 nos)
2 tsp Lemon juice
1 tsp chopped lemon grass
1/2 tsp fresh ginger-garlic paste
1 tsp white pepper powder
a  pinch of turmeric powder
1 tsp chopped parsley
1 tsp coriander leaves-chopped
1 tsp olive oil
1 tsp coconut oil

Directions

1.Marinate chicken pieces with ginger - garlic paste,turmeric powder,1 tsp lemon juice and salt.Mix this well and keep it aside for 25 mins(in the fridge).
2.Heat 1 tsp olive oil in a pressure pan,add the marinated chicken pieces along with the marinade,lemon grass and  with 100ml water and pressure cook upto 4 whistle.
3.Open the lid when the pressure is released.Sprinkle 1 tsp coconut oil,1 tsp lemon juice,white pepper powder,coriander leaves and cook this(without covering) till water runs dry and garnish with chopped parsley.
4.Serve this Lemon chicken with bread slices or Indian breads.

Lemon Rice

This is one of the variety rices being served in South India esp in TamilNadu.This mild and less spicy Rice can be done easily in 18 mins cooking-time and served with potato masala,thick coconut chutney and Chicken Fry. Best suited for a packed-lunch or food esp.for school kids and for long journeys. Enjoy Easy Rice Varieties at home!.Enjoy Ur Meal!.

Lemon Rice ( a Variation) - Rice made with lemon juice and other spices
Ingredients:
2 juicy lemon or 2 tbsp Lemon juice
1 3/4 cups basmati rice or 1 1/2 cups raw rice
2 tsp split gram dal
1/2 tsp Salt - to taste
a pinch of asafoetida
1/4 tsp turmeric powder
3-4 whole red chillies
1/4 tsp grated ginger(optional)
1/2 tsp mustard seeds
few curry leaves
few coriander leaves
few ghee-roasted cashewnuts
2 1/2 cups water (or 3 cups for raw rice)
2 tsp refined oil

Directions:
1.Wash the basmati rice well and pressure-cook with 2 1/2 cups water up to 1 whistle. Leave this aside.
2.Heat the refined oil in a kadai.Fry mustard seeds,red chillies, red chillies, split gramdal and curry leaves for 2- 3 mins.
3.Add the lemon juice,turmeric powder,green chillies,asafoetida, grated ginger and salt. Allow this to boil for a min.When it begins to boil, turn off the flame within a min (otherwise the lemon rice will turn little bitter).
4.Add the cooked basmati rice to it and mix well till it gets evenly spread. Check for salt and garnish with roasted cashew nuts and coriander leaves.
5.Serve this Lemon rice with potato masala,thick coconut chutney and Chicken Fry.

Tips:
 U can add 1 tbsp grated Carrot to make it tastier.
