Tabbouleh is the most loved Arabian salad which is traditionally done with bulgur wheat, spring onions, tomato, finely chopped parsley and mint, often including spring onion bulbs and garlic, seasoned with olive oil, lemon juice, pepper and salt. The Lebanese Tabbouleh is more made of herbs and chopped parsley and in other Arabian Countries its more of bulgur wheat or cracked wheat or half-done couscous. Tabbouleh
Ingredients
2 tbsp bulgur(bulgor) or cracked wheat - Soaked for 15 mins till nicely fluffed up and drain excess water
2 - 3 tbsp finely chopped parsley
1 - 1 1/2 tsp finely chopped spring onions
1 tsp finely chopped mint leaves
1 small firm tomato - finely chopped after scooping out the centre flesh with seeds
1 1/2 tsp lemon juice
a pinch of salt
1/2 tsp crushed pepper corns
1 - 2 tsp olive oil
a pinch of all spice powder or a 7 spices mix Lebaneese spice powder
1/2 garlic clove - finely chopped and done 1/2 tsp with olive oil - optional
finely chopped spring onion bulbs - optional
Directions:
1.Take a salad Mixing bowl. Add Cracked wheat, chopped spring onion (chopped Bulbs-optional) and Parsley, finely chopped fresh mint and tomato.Mix it well.
2.Add the dressing or seasoning like done garlic,lemon juice, crushed peppercorns, a pinch of all spice powder, salt and finally the remaining olive oil.Toss it to mix well.
3.Serve it Chilled .

@ Pari - I did it for my H's friends, when I visited Dubai few weeks back - not after reaching Chennai.U don't even get this Parsley here(in Chennai) Pari. U can use an all spice Mix instead as it tastes good.
