Vegetable Dopiaza(Dopyaza)

You can make cooking more interesting by doing something special everyday.U will fall in Luv with this Dopiaza if done perfectly with selective spices.This sumptuous gravy offers a sheer delightful treat to your tastebuds.This rich and tasty Mughlai Veg Gravy is done a fusion of Mediterranean and Asian flavor(for  the 1 tbsp low-fat cream,you can add coconut cream and plain lowfat yoghurt for cream in step 6  for variation). This easy version can be done in 15-18 mins time.This is light and less-spiced creamy Veg Gravy to  accompany Steamed Rice or Naan, Bread and Indian Breads. Enjoy Cooking!. BonAppetit!.

Vegetable Dopiaza - A healthy and delicious vegetables in creamy masala.
Ingredients:
    1/2 Carrot (1 cm cubes)
    10 small florets cauliflower
    15 chopped pieces french beans
    1/2 potato (cut into 1 cm cubes)
(cook the above vegetables in 150 ml water with salt(1/2 tsp) for 5 mins after cleaning).
    2 tbsp green peas + 2 tbsp chick peas
(soak the above peas for an hour and cook with 150 ml water with salt(1 tsp) for 10 mins).
    1/4 green capsicum
    a pinch of turmeric powder
    1/4 tsp garam masala
    2 tsp finely ground paste(6 cashewnuts + 1 big greenchilli )
    1 tbsp low fat cream
    1 small sized onion -chopped fine
    1 small sized onion - pasted fine
    1/2 tsp ginger-garlic paste
    1 bay leaf
    3/4 tsp salt (to taste)
    2 tsp refined oil
    1/2 tsp olive oil

Directions
    1.Cook the above vegetables in 150 ml water with salt(1/4 tsp) for 5 mins after cleaning.soak the above peas for an hour and cook with 50 ml water with salt(1/4 tsp) for 10 mins.
    2.Heat oil in a pan,add bay leaf,chopped fine onion,onion paste,capsicum pieces and ginger-garlic paste and saute it for 3-4 mins on good flame
    3.Add the half-cooked vegetables and cooked peas without straining the water.
    4.Add ground cashewnut - green chilli paste and salt.Cook this for 2-3 mins.
    5.Add garam masala and stir-cook it for 2 mins.
    6.Add cream  and stir it for 20 secs before removing from the flame.Sprinkle 1/2 tsp olive oil on top.
    7.You can serve it hot with Steamed Rice or Naan,Bread and Indian Breads.Very tasty veg-gravy indeed.
