This month's Indian Cooking Challenge recipe, given by this Event hoster Srivalli of Cooking4 All Seasons, is Thekua, a Pooja sweet or Prasadham of Bihar, deep-fried aromatic Cookies or Fried Bihari Biscuits in short. Its easy to make,soft and flavorful - if done perfectly. You can store it in airtight container for upto two weeks or a week's time more. This excellent teatime snack needs less ingredients and time.U can try baking this cookies instead of deep-frying - for a healthier option. This needs 15 mins cooking time, serves 4 nos and can do 15+ Cookies. Enjoy ur snack-time with Thekua!. BonAppetit!. Yummy!!!.
Thekua (Fried Bihari Biscuit)

Ingredients:
Wheat flour / Maida - 1 Kg
Sugar, powdered - 300 gms
Copra / Dry Coconut - 50 gms
Sooji / Rava - 1 cup
Ghee - 100 gms
Water/ Milk to knead
Cardamon powder 1/4 tsp
Oil for Deep frying
I used smaller measurement for this month's challenge and did it with Maida and powdered sugar.U can try it using Wheat flour and jaggery syrup instead.
Smaller Measurement:Ingredients:
Wheat flour / Maida - 1 cup
Sugar, powdered - 3 -4 tbsp
Dry Coconut - 2 tsp
Sooji / Rava - 2 -3 tbsp
Ghee / Refined Oil - 3 - 4 tsp
Water/ Milk to knead
Cardamon powder a pinch
Oil for Deep frying
Directions:
1.Mix refined flour with cardamom powder,crushed fennel, dessicated coconut (or dry-roasted fresh grated coconut), ghee and powdered sugar. Mix it well sprinkling water little by little.
2.Knead it into a smooth dough and spread it thin.
3.Cut it into desired shaped cookies.
4.Heat refined oil in a kadai and deep-fry them 4 at a time till golden brown or done on bothsides.
5.Remove excess oil using absorbent papers.Serve it warm with Tea/Coffee or Let it cool and store in an Air-tight container. That's all!.

Lovely cookies and nice step by step pictures.
I have not used a milk boiler and my assumption is it would work too for melting chocolate since we are doing the same thing with 2 vessels.
