Coffee Cream Pie

Celebrated my BirthDay Yesterday(Dec 16) since my Hubby's maternal Grandpa (Rev.Paul Gnanaiah - aged 101) has passed away this week on Dec 12 , not much to say about the Celebration.Our Thatha lived a God-fearing Life till his end and a Real-Blessing and Source of Inspiration to all his Grand Children,Families, Relatives and Friends around.We will remember his Inspiring Words(Sermon) and supportive Prayers life-long. Yesterday, I got a chance to taste this wonder Pie in my Friend's house.I found the taste of this Dessert so good and thought of sharing this recipe with U all. The crust of this Pie is done with Soya flour(optional) mixed with finely-powdered Cashewnuts and filled with Chocolate Cream.I should be sharing 3 Awards with U all. Enjoy this Yummy Pie!. Coffee Cream Pie  - Delectably Tasty Pie with Coffee Cream Filling.
1/2 cup refined flour
1 tbsp soya flour (optional)
15 cashewnuts - powdered fine
2 tbsp butter
1/4 tsp baking powder
4 tsp finely powdered sugar
needed water to make dough
For Coffee Cream Filling:
4 tsp instant coffee powder
50 gms castor sugar
50 ml double cream
5 tsp butter
1.Sift the flour and baking powder.Stir-in the powdered cashews and sugar. Add butter.Mix it well using fingers to get a crumbled dough.
2.Add few tbsps water(sprinkling little by little) and mix it into a smooth dough. Do not knead the dough hard and cover with a damp cloth and chill for 30 mins.
3.Meanwhile,whisk the double cream and castor sugar.Add butter and instant coffee powder and whisk again till it gets  soft peaks.
4.Preheat the oven to 360 F or 190 C.
5.On a flat-surface,roll the dough into big round of 1/4 cm thickness.Using pastry cutter,cut it out into 2 layers in the shape of 4 baking dishes or tart shells.Now line them with with 1 layer and then stuff with Step 4 Coffee Cream filling.Cover it with another layer(or with a hole in the middle) and press the sides to seal it.
6.Place  them in a baking tray.Bake it for 11 - 13 mins at 190 C. Leave it for 10 mins to cool and take it out. Brush them with 2 tsp butter(otherwise it is seen dry).
7.Serve it warm or chilled  with coffee cream and Cherry on top.
