Ivy Gourd Stir Fry - a Microwave Recipe

Ivy gourd is Tindli(Kovaikai in Tamil).Many don't even heard abt it or never eat this Veg.After experimenting my skills on it,I really become addicted to it few years back.This dry side-dish can be done in 7 mins and tastes good.One of the best combination for rice with Sambar or Rasam or Yoghurt.Try this less spiced and Yumm preparation at home and enjoy ur meal!.Bon Appetit!.

Ivy Gourd Stir Fry-Ivy gourd stir fried with spices  

Ingredients

    100 gms Ivy gourd pieces (cut into pieces)
    3 whole red chillies
    1/2 tsp Mustard seeds
    1/2 tsp cumin seeds
    1 sprig Curry leaves
    1 onion, chopped
    few chopped Coriander leaves
    1/2 tsp Red chili powder
    a pinch of turmeric powder
    1 tbsp coarse coconut paste (ground with jerra seeds-1/2 tsp)
    Salt to taste
    2 tsp refined oil
    1 tsp grated coconut

Directions

    1.Take a Microwavable bowl.Add oil ,red chillies,mustard seeds,cumin seeds,curry leaves,onion -chopped and chopped Coriander leaves.Microwave this on high for 1 1/2 mins.
    2.Add Ivy gourd pieces, turmeric powder,salt,50 ml water and chilli powder.Microwave this on high for 3-4 mins.
    3.Add coconut paste and mix well.Microwave this on medium high for 3 mins more.
    4.Garnish with 1 tsp grated coconut and chopped coriander leaves.
    5.Serve this hot with rice and sambar.

Note:
U can try this dish without adding coconut paste .In this case add 1 tsp Everest Subji Masala and reduce the chilli powder to 1/4 tsp. U can have this Ivy gourd preparation with Chapati,Bread slices and Phulka.
U can even add boiled dhal and have it as a main-dish in ur Lunch Menu.
