American Chopsuey

This very appetizing recipe can be said as a 'Chinese Bhel on Crispy-fried Noodles' instead of Chopsuey.I wonder why they call this Chinese preparation as 'American'. Some people term this as an unhealthy dish - taking into account the amount of oil and Sauces used in its preparation.Anyway, for those of you who love
this dish,here is the preparation.

American Chopsuey - Chicken/prawns in sweet and sour Chinese sauce over Crispy-fried Noodles served with Bull's Eye -  Serves : 3-4

Ingredients:

200gms - Noodles
1/2 inch ginger piece - crushed fine
3 garlic flakes - crushed fine
Salt to taste
3 tbsp Oil + 200ml oil - to deep fry
2 tsp - Cornflour/ corn starch
1 onion - sliced fine
few Carrot juliens
few capsicum juliens
1 tbsp sping onions-chopped fine
50 gm Boneless chicken - half-boiled and cut into thin strips
50 gms prawns - boiled and cut into halves
1/2 tsp - White pepper powder
1/4 tsp - Ajinomotto
1 tsp - Sugar
3 tbsp Tomato sauce
2 tbsp Tomato chilli sauce
1 tsp green chilli sauce
1 tsp - Vinegar
100 - 150 ml - Chicken stock
1 egg - half -fried (boiled like bull's eye)

Directions:

1.Boil 700ml water,1/4 tsp salt and 2 tsp oil and bring to a boil.Add noodles and cook over 3/4th done(it shd be don 80%).Remove,drain and cool.
2.Divide the done noodles into five equal parts and deep fry in hot oil till light brown and crisp.Remove and drain excess oil.
3.Dissolve corn starch in 30ml water and keep it aside.
4.Heat 2 tbsp oil in a wok, add crushed garlic,ginger and stir-fry briefly.Add sliced onion and sauté for a
minute or until it turns transparent.
5.Add chicken strips and prawns and stir-fry for two minutes or until the moisture evaporates.Add Capsicum, carrot and cabbage and stir-fry for two minutes or until the vegetables are just cooked but still crunchy.
6.Add pepper powder,Ajinomotto,salt and sugar.Stir in the tomato sauce,tomato chilli-sauce and the green sauce.Stir in the vinegar and spring onions.
7.Pour in the chicken stock,bring to a boil,reduce heat and stir in the dissolved cornstarch.Simmer for two minutes till it gets thickens.
8.Half-boil(fry) the Egg with 2 tsp oil or the remaining oil in a non-stick pan.
9.Serve this with the sauce over the fried noodles and top with a half-boiled egg. Serve hot immediately.

Tips:

Make sure the noodles are fried fine(Shd be crispy) U can try a Vegetarian version with 5 French beans - cut into thin strips,10 Spinach leaves - shredded, 1/4 cup Bean sprouts and 30 gms - Tofu, cut into thin strips instead of chicken and prawns.
