Banana Stem-Spinach Stirfry - a Microwave Recipe

Banana Stem is good for health and it is easily available this season.This spinach combo stir-fry is given here as the healthy recipe of the Day.This stir-fry needs about 15 mins cooking time and this serves 4 nos.Easy to make and yumm to have Stir-fry can be done with Microwave.U can add 1 tbsp grated coconut in Step 4 with coriander leaves but it is optional.U can even try this recipe with either Banana Stem or Spinach alone.Try this recipe at home and Enjoy ur Meal with curd rice or rice with rasam or karakuzhambu or variety rices. BonAppetit!.

Banana Stem-Spinach Stirfry
Ingredients:
100 gms Banana Stem -peeled,chopped and soaked in 100ml buttermilk
1 bunch spinach - cleaned and chopped fine
split yellow mungdal - 50 gms -soaked for 30 mins
2-3 green chillies slit lengthwise
a pinch of turmeric powder
1/2 tsp mustard seeds
2 tsp refined oil
1/4 tsp or to taste salt
1 tbsp coriander and curry leaves - chopped fine

Directions:
1.Take a microwave-save bowl and add refined oil,mustard seeds and curry leaves.Microwave it on high for 30-40 secs.
2.Tae the bowl out and add green chillies and soaked split mungdal with turmeric powder and 100ml water.Mix it well and microwave it for 4 mins on high.
3.Add strained banana stem,spinach and salt with 30 ml water and microwave it on high for 8-10 mins.
4.Take the bowl out mix it well with coriander leaves and microwave on medium-high or 1-2 mins till water runs dry.That's all.
