Ghee Rice ( a Microwave Recipe) - Mild spiced and Aromatic rice cooked with ghee and selected spices
Ingredients : (Serves:3-4)
Basmati rice-1 1/2 cup
Water- cups
Ghee- 3 + 1 ttbsp
ginger-garlic paste - 1/4 tsp - optional
Salt-3/4 tsp - to taste
Nutmeg Powder- 1/4 tsp
saunf - 1/4 tsp
Star Ani seed-4 -crushed
Cloves-3
Bay(brinji) leaves-4
Cinnamon stick-1 -crushed(i inch)
green Cardamom - 4 crushed
lemon juice - 1 tsp (optional)
Garnishing:
fried onions -50 gms
ghee roasted Cashews and kismis - one handful
chopped cherries - 2 tbsp(if u have kids of 1-5 age)
chopped coriander leaves - little
mint leaves - just 5 leaves
soaked saffron - 5 strands
Method
1.Clean the Basmati rice and soak it in 1 1/2 cups water for 10 minutes and ghee roast the soaked basmati rice with 2 tbsp ghee for a min.
2.In a microwavable bowl add ghee roasted rice + 3 cups water.(Take X 2 quantity water for microwave cooking and for normal cooking u need to reduce the quantity water by 1/2 cup).
4.Add half the ani seed,nutmeg powder,Cinnamon stick, cloves,cardamom & Bay leaves(You may pound or crush it slightly for a strong flavour).Add 1 tbsp Ghee,1 tsp lemon juice and salt.
5.Mix this well and microwave this on high for 17 -18 mins. (With trial and error I have noted this time and this may vary with models).It is better to stir the rice two times 15 th between - in the 7 th min and 12th min.
6.Heat 1 tbsp Ghee in a non-stick frying pan.Add fried onions, Saunf,half the ani seed,nutmeg powder,Cinnamon stick, cloves,cardamom & Bay leaves,ginger and garlic paste and stir it for 2 mins.
7.Add the done rice and ghee roasted and raisins,(chopped cherries or saffron stands and the soaked water - optional) and stir it for 2 mins.
8.Garnish it with chopped coriander and mint leaves.Serve it with Korma or Stew of ur choice & Onion-Cucumber Raita. Bon Appetit!.
