Sesame Brinjal Masala
Ingredients
150 gms Brinjal - Cut vertically into 4-5 equal size pieces
1 tbsp white sesame seeds
1/2 tsp grated ginger
2 garlic cloves
3-4 red chillies
2-3 curry leaves
a pinch of turmeric powder
1/2 tsp garam masala powder
1/4 tsp white pepper powder
1/3 tsp salt - to taste
2 tsp chopped coriander leaves
2 tsp refined oil
Directions
1.Dry-roast the sesame seeds for 2 mins on medium flame.Add red chillies, curry leaves,garlic and ginger and roast it for a min more.
2.Paste it fine adding 1 tbsp water.
Heat oil in a kadai,add the Brinjal pieces,turmeric powder,salt and 70 ml water.Leave it till done and water runs dry or for 5 - 6 mins on medium flame.
3.Now add the ground roasted sesame paste,garam masala,half the chopped coriander and 30 ml water.Stir-fry it till the masala gets done for 4-5 mins on medium flame.
4.Now sprinkle the white pepper powder and the remaining coriander leaves and mixit well for a min or 2.
5.Serve it hot with Steamed Rice,Variety Rices or Indian Breads. Easy n Yummy!.
