Egg Plant in Peanut Butter Curry

I tried this Egg Plant Curry the day I prepared Peanut Butter. I wanted to try it after seeing a different recipe but with this Yumm Combo in Mrs.Priya Suresh's Blogspace. This Curry tasted awesome even with Steamed rice. It can be done in a Jiffy (12 mins) to serve 4 nos with less efforts. Its seen deliciously creamy even with 1 tbsp Peanut Butter. (My Mom does this gravy with cashew paste too).This serves an yumm an easy taste match with Rice and Indian Breads. Try this Easy n Yumm Curry at home and Enjoy Easy Cooking at home!. Yum Yum!. Enjoy Ur Meal!. BonAppetit!.

Egg Plant in Peanut Butter Curry
Ingredients:
150 gms Egg Plant
2 tsp - 1 tsbp Peanut Butter
1 green chilli + 2 garlic pods + 1 cm ginger piece - pasted fine
1/2 tsp any good mutton masala or Subzi masala
a pinch of turmeric powder
1/4 tsp garam or curry masala
1/4 tsp white peper powder - an optional
1 tsp lemon juice - optional
1/4 tsp mustrard seeds
few chopped curry and corianderleaves
2 tsp oil
1/2 tsp salt - to taste

Directions:
1.Marinate Egg plant pieces in chilli ginger-garlic paste and turmeric powder with lemon juice(optional)  for 5 - 10 mins.
2.Heat oil in a non-stick Kadai and splutter mustard seeds and curry leaves,
3.Add the marinated Egg plant pieces allong with the marinade and the mutton or subzi masala with salt. Stir-fry for 2 - 3 mins till little done.
4.Add 150 ml water and cover and cook for 3 mins on good flame.
5.Now add the Peanut Butter, garam or curry masala and coriander leaves .Stir-cook gently for 2 more mins till the Egg plant gets done.
6.Check the salt and Sprinkle a pinch of white pepper powder (this adds flavor to Brinjal Curries) and turn off the flame.
7.Serve it hot with with Rice and Indian Breads.
