Gulab Jamun was made popular by the Mughals in India,Pakistan,Sri Lanka,Nepal and Bangladesh. It is made of a dough consisting of khoya together with flour,rolled and then deep fried. Then soaked in sugar syrup flavored with cardamom seeds and rosewater, kewra or saffron.Kemal Pasha,a turkish Dessert like Jamun, is done adding unsalted Cheese. I tried a sweet Choco variant of it. It turned out Yumm. U can try it using Jamun ready mix adding 2 tsp Cocoa Powder for 1 cup of Mix for an easy Dessert. Choco Gulab Jamun
Ingredients:
2 tbsp All-purpose flour
3 tbsp instant Milk powder or 1 tbsp khoya
1 1/2 tsp cocoa powder
1/4 tsp baking soda
1 tbsp butter - melted
4 - 5 tsp milk - to make the dough
1/2 tsp corn flour
1 - 2 tsp powdered sugar
Oil for frying
For the Sugar Syrup:
250 ml water
100 gms sugar
3 cardamon pods - crushed slightly
2 strands of saffron (optional)
1 tsp rose water
Directions:
1.Combine all-purpose flour,milk powder or khoya,cocoa powder,corn flour,butter and baking soda to make the dough.
2.Add enough milk to roll into smooth dough.
3.Divide into 12 round shaped balls. Roll gently between your palms to make it even and do the same for all.
4.Heat oil in a non-stick kadai and fry on low flame.Deep-fry them till it turns little done on the sides. Not more than 3 mins as it will taste bitter
5.Boil water and sugar over a low flame in a sauce pan and mix it till sugar dissolves and add soaked saffron,cardamoms and rose water and let it thickens for sometime. Mix it well and turn off the flame.
6.Soak the Jamuns for 12 -15 mins atleast.
7.Serve these Jamuns in Dessert bowls with cashew flakes on top and 1 tbsp sugar syrup on it (or serve it with Cream in winter and Ice-cream in summer).
