Coconutmilk Poha

This is a healthy and delicious mixture of riceflakes with fresh Coconut Milk.Very mild spiced,yumm and aromatic Poha.It can serve U a wonderful Breakfast or a short-meal well under 10 mins cooking time and serves 3-4 nos.You can do this poha preparation with plain milk or yoghurt with selective Vegs. or fruits of ur choice too.Enjoy easy cooking at home.Enjoy Ur Meal!.BonAppetit!.


Ingredients

    fresh and coarsely ground masala -(ginger- 1 cm,green chilli-1,1/4 tsp cumin seeds and grated coconut-3 tbsp)
    1 cup thick  Coconut milk
    2 cups 2nd coconut milk
    4 cups white rice-flakes(electric rice cooker cups)
    1 bay leaf - crushed
    1/4 tsp salt - little
    2 red chillies
    1/2 tsp mustard seeds and uraddal
    chopped curry and coriander leaves - little
    2 tsp refined oil
    1 tbsp ghee
    5-7 cashew nuts

Directions
    1.Heat 1 tbsp ghee in a non-stick pan and roast  cashewnuts and take it out and keep it aside.Then add rice flakes  for 30 - 40 mins.Keep it aside
    2.Heat oil in the same pan and add bay leaf,mustard seeds,uraddal,redchillies and curry and coriander leaves fry for a min.
    3.Then add the masala paste and saute for 2 mins.Add ghee-roasted riceflakes and the second coconutmilk and stir it for a min..
    4.Now pour the cocunut milk let this milk mixture cook for 4-5 mins,stirring it often.
    5.Garnish with chopped coriander leaves and ghee-roasted cashewnuts.This poha recipe is a tasty one.

Tips:
You can do this poha with plain milk or  yoghurt with selective Vegs. or fruits of ur choice.
